Check out this outstanding double California burger, topped off with fresh lettuce and tomato slices. Perfect for grilling!

Number Of Ingredients 8

2 Lbs Ground Chuck Beef (80% lean / 20% fat - (2x for doubles))
4 Tsp Salt
1 Tsp Pepper
1 Tomato
Lettuce
Mayo
Ketchup
4 Hamburger Buns

Steps:

  • Cut up the tomato and get the lettuce all set to go.
  • Get your grill/pan/etc hot.
  • Salt & pepper the ground beef and then divide into 8oz (1/2 lb) portions for singles or you can use smaller 6oz portions for a double burger. Flatten into patties that are about 1/2 inch larger than the buns.
  • Put a thumbprint in the middle of the patty so it doesn't puff up when cooking.
  • Grill your burgers about 4min on the first side.
  • Cook until you reach the correct temp (140F for medium), usually about 2 to 4 minutes.
  • Add cheese about a minute before you pull the burgers off the grill.
  • Optional: Add ketchup & mayo (about 50/50) to the bottom of the bun.
  • Stack up the ingredients (if you keep a lettuce leaf on top it keeps that bun from getting too soggy from the tomato) and enjoy!

1 small head cabbage, shredded
1 small white onion, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
1 small carrot, shredded
½ cup cider vinegar
3 tablespoons white sugar
½ teaspoon salt
¼ teaspoon freshly ground black pepper
½ cup vegetable oil

Steps:

  • In a large salad bowl, place the cabbage, onion, green bell pepper, red bell pepper and carrot. Combine the vinegar, sugar, salt, pepper and vegetable oil in the bowl with the vegetables. Toss the mixture until the vegetables are fully coated with the marinade.

Honey Garlic Chile Burgers with Mango Slaw image

My local butcher in Southampton, New York makes a garlic chile chicken sausage with traditional Thai ingredients that I love. So, I wanted to make my own version of that, but in burger form! I love the fresh flavor of this burger. The cool, crisp cabbage and sweetness of the mango in the slaw pair perfectly with spicy chile garlic paste and the salty umami flavor of the fish sauce in the patty. Every bite is better than the last!

1 pound ground chicken
2 tablespoons fish sauce
1 tablespoon low-sodium soy sauce
1 teaspoon chile-garlic paste, such as sambal
1 teaspoon freshly grated garlic
1 teaspoon grated fresh ginger
1 teaspoon sesame oil
1 tablespoon chopped fresh cilantro
1 tablespoon chopped fresh mint
1 tablespoon avocado oil
2 tablespoons lime juice
2 tablespoons avocado oil or vegetable oil
2 tablespoons rice vinegar
1 tablespoon honey
Kosher salt and freshly ground black pepper
1 small head napa cabbage, very thinly shredded
1/4 cup very thinly sliced red bell pepper
1/4 cup very thinly sliced mango
1 tablespoon chopped cilantro leaves
1 tablespoon chopped mint leaves
1 tablespoon thinly sliced scallions, white parts only
2 tablespoons mayonnaise
1 tablespoon chile garlic paste, such as sambal
1/2 teaspoon honey
4 potato rolls, for serving

Steps:

  • For the patties: In a medium bowl, combine the ground chicken, fish sauce, soy sauce, chile-garlic paste, garlic, ginger, sesame oil, cilantro and mint. Gently but thoroughly combine with your hands and form into 4 equal patties.
  • Preheat the avocado oil in a large skillet over medium-high heat. Cook the patties until golden brown and the internal temperature reaches 165 degrees F, about 5 minutes per side.
  • For the slaw: Meanwhile, in a large bowl, whisk together the lime juice, avocado oil, rice vinegar, honey and salt and pepper to taste. Add the cabbage, bell pepper, mango, cilantro, mint and scallions and toss to coat well. Season with salt if necessary. Set aside.
  • For the mayo: In a small bowl, whisk together the mayonnaise, chile garlic paste and honey. Set aside in the refrigerator until ready to use.
  • Spread the mayo on the rolls. Transfer the patties to the rolls and top with the slaw. Serve.

Steps:

  • Mix cabbage, carrot, pineapple, mayo, vinegar, sugar, salt and pepper and chill.
  • Mix ground chuck, garlic and onion mix, salt, pepper, egg and catsup and form into 4 burgers and chill.
  • In a large skillet over a medium heat brush the buns with butter and lightly toasted the buns and set aside until needed.
  • Place the skillet over a medium hot heat and pan fry the burger patty and place on top of the bottom toasted bun and top with cook burger, swiss cheese and top with slaw mixture and top off with the top half of the bun and serve.
