KHAO PHAT MU (THAI PORK FRIED RICE)

Khao Phat Mu (Thai Pork Fried Rice) image

This recipe is from Central Thailand (Bangkok area) and can be modified for other vegetables or proteins. I sometimes add Thai basil to this dish which makes it really yummy.

Time 45m

Yield 4 serving(s)

Number Of Ingredients 13

1 1/4 cups brown jasmine rice or 1 1/4 cups white jasmine rice
8 ounces boneless pork chops, trimmed
3 tablespoons peanut oil or 3 tablespoons canola oil, divided
1 egg
2 tablespoons garlic cloves, minced
2 cups mushrooms, chopped
1/2 jalapeno pepper, seeded sliced thinly (optional)
2 scallions, cut into 1/2 inch pieces
2 tablespoons Thai fish sauce
1/2 cup whole cilantro leaf (garnish)
1 lime, cut into wedges (garnish)
1 medium tomatoes, sliced thickly (garnish)
1/2 medium cucumber, sliced (garnish)

Steps:

  • Combine rice and water (2 1/2 cups for brown rice; 2 cups for white rice) in a medium saucepan with a tight-fitting lid; bring to a boil.
  • Cover, reduce heat to maintain a gentle simmer and cook until the rice is tender and the water is absorbed (40 to 45 minutes for brown rice; 20 minutes for white).
  • Remove from heat and let stand, covered, for 10 minutes. Fluff with a fork, spread the rice on a large baking sheet and let cool at least 15 minutes.
  • This can be done up to 2 days prior.
  • Thinly slice pork chop crosswise, then cut each slice into long, thin strips about the width of a matchstick. Place a large flat-bottom carbon-steel wok over high heat. Add 2 tablespoons oil and swirl to coat the pan.
  • Crack one egg into hot wok and cook until soft-cooked. Carefully remove to plate. You can also scramble the egg, if you wish.
  • Add garlic. Cook, stirring, until just starting to change color, about 20 seconds. Add the pork and cook, stirring, until it is no longer pink, about 2 minutes.
  • Remove the pork with a slotted spoon to a clean plate. Add the remaining 1 tablespoon oil to the wok. Add mushrooms and cook, stirring, until they soften, 2 to 3 minutes.
  • Sprinkle in the cooked rice and stir-fry, tossing and then pressing it against the hot wok, then tossing and pressing again, until all the rice has been exposed to the hot wok, about 1 minute.
  • Add scallions, fish sauce and the cooked pork and cook, stirring, for 30 seconds.
  • Transfer the fried rice to a platter. Top with soft cooked fried egg. If serving individually, top each serving with one fried egg soft cooked. Garnish with cilantro leaves, lime wedges, thick-cut tomato slices, and cucumber slices.

KAO PAD (THAI-STYLE FRIED RICE)

Kao Pad (Thai-Style Fried Rice) image

Make and share this Kao Pad (Thai-Style Fried Rice) recipe from Food.com.

Provided by MsBindy

Categories     Short Grain Rice

Time 45m

Yield 4-5 serving(s)

Number Of Ingredients 12

2 1/2 cups bell peppers, cut into short strips or 2 1/2 cups bean sprouts, blanched for 5 seconds, cooled and drained
1/4 cup vegetable oil
1/2 tablespoon fresh gingerroot, minced
2 tablespoons garlic cloves, minced
6 cups cooked rice (short grain)
2 eggs, lightly beaten
1 cup fresh tomato, chopped
2 tablespoons thai sriraja chili sauce (or other hot chili paste)
2 tablespoons light soy sauce
1/2 lime, juice of
1/2 lime, cut into thin wedges
scallion, cut on diagonal

Steps:

  • Choose and prepare vegetables. Select a combination with a variety of colors.
  • In a wok, heat the oil and stir fry the ginger and garlic until golden.
  • Remove them with a slotted spoon and save for later.
  • In the same oil, stir-fry the vegetables until just cooked. Add the harder ones (like carrots) first, and the tender ones (like sprouts) last.
  • Remove the vegetables from the wok and set aside.
  • Add the rice to the wok and heat thoroughly.
  • With your stirring spoon, make a hole in the center of the rice, down to the wok and put in the eggs.
  • Stir until they are pretty well set before you mix them into the rice. The more you cook the eggs before stirring them into the rice, the drier the dish will be.
  • Add the tomatoes, the reserved ginger and garlic and the stir-fried vegetables.
  • Finally, mix in the chili sauce, soy sauce and lime juice.
  • For serving, top each serving with thin slices of scallions. Put thin slices of lime on the side.

THAI FRIED RICE WITH PORK AND BASIL - AUTHENTIC THAI …

From thaicookbook.tv

Servings 2
Total Time 15 mins
  • This recipe can be made with either pork or chicken. You need to have 2 cups of cooked Thai Jasmine rice, or other long grain fragrant white rice.
  • I am using Thai hot chilies, which are quite spicy alone, but with this much rice and other ingredients the finished dish will be just a little bit spicy.
  • If you are lucky enough to be in Thailand you'll have no trouble finding Bai Krapow, our fragrant basil that is also used in making Krapow Moo, but if you can't get it just use any type of basil.
  • Using a mortar and pestle, grind the chilies and garlic together until they are well blended. If you don't have one, chop them or use a food processor.
  • Heat a wok or large frying pan over low - medium heat. You do not want the pan to be too hot at first, as the garlic will burn and mess up the flavor of your rice.
  • Keep stirring, letting the meat fry until it is nearly cooked all the way, but still a little pink in some places.
  • Add the oyster sauce, fish sauce, and sugar. Stir it into the meat and fry together until the sugar melts and the sauces form a nice thick and sticky gravy.
  • Turn the heat up under the pan as high as it will go. You want the pan to be as hot as possible. Then add the cold rice, and stir it into the sauce until all or most of the liquid is absorbed.
