CALABACITAS (MEXICAN STYLE ZUCCHINI)

Calabacitas is a delicious and healthy side dish recipe, perfect for any meal! It just might be the Best Healthy Calabacitas Recipe I've ever had. This side dish is good enough to eat on its own, but it pairs well with other Mexican recipes.

2 medium zucchinis (sliced)
1/2 large roma tomato (chopped)
1/4 medium onion (chopped)
1/4 cup corn kernels (frozen or canned)
1/2 Tbsp light butter
1/2 Tbsp extra virgin olive oil
1/4 tsp kosher salt
1/8 tsp pepper (or to taste)
1/2 cup shredded Chihuahua or light mozzarella cheese (or any other melting cheese)
1/2 cup queso fresco (crumbled (Mexican fresh cheese) (Optional))

Steps:

  • In a large skillet, heat the oil and butter over medium heat.
  • Add the onion and cook about two minutes.
  • Add the zucchini, tomato, corn salt & pepper. Mix all ingredients well.
  • Cover, reduce heat to low, and simmer for 8 minutes. Remove from heat and sprinkle the shredded cheese.
  • Replace the cover on the skillet and allow to sit until the cheese melts, 2 to 3 minutes.
  • Serve warm and sprinkle with some of queso fresco

This calabacitas recipe is a side dish with big flavor, made with sauteed zucchini and squash with roasted peppers, onions, lots of seasonings and cheese.

Number Of Ingredients 17

2 poblano peppers (you can also use Anaheim peppers, any New Mexican varieties, even bell peppers work for super mild, or others)
1 jalapeno pepper (optional, for a spicier version)
1 tablespoon olive oil
1 medium onion (diced)
3 cloves garlic (diced)
2 small zucchinis (cubed)
2 small summer squash (cubed)
1 cup fresh corn kernels (canned or frozen are fine to use)
1 teaspoon Mexican oregano
1 teaspoon ancho powder (or use your favorite chili powder blend)
1 teaspoon red pepper flakes (optional, for a spicier version)
½ teaspoon cumin
Salt to taste
1/4 cup Chopped cilantro
Extra chopped cilantro, crumbly white cheese and red pepper flakes for garnish
1/4 cup Mexican crema or sour cream (or use milk)
½ cup cotija cheese (grated (use 1 cup for cheesier - you can sub in other melty cheeses, like Monterrey jack))

Steps:

  • ROAST THE PEPPERS. Slice the poblano peppers in half lengthwise and scoop out the insides. Remove the stems. Set them onto a baking sheet and bake them at 350 degrees 20-30 minutes, or until the skins char and bubble. You can also broil them about 12-15 minutes to the same effect.
  • Remove from heat and place them into a paper bag or baggie for a few minutes. The heat will steam them and loosen the skins.
  • Peel away the skins and roughly chop the peppers. Set them aside for now.
  • Cook the Onion, Jalapeno and Garlic. Heat the olive oil in a large pan or skillet and add the onions and jalapeno pepper. Cook for 5 minutes to soften.
  • Add the garlic and cook for 1 minute, until the garlic becomes fragrant.
  • Cook the Zucchini and Squash. Add the zucchini, squash, corn, Mexican oregano, ancho powder, chili flakes, cumin and salt to taste. Sauté until just tender, 3-4 minutes, to your preference.
  • Stir. Stir in the chopped peppers and chopped cilantro. Heat through.
  • Garnish. Garnish with fresh cilantro, crumbly white cheese and red pepper flakes
  • FOR CREAMY-CHEESY VERSION
  • Stir in the Mexican crema and cotija cheese until it melts through along with the chopped peppers and cilantro over low heat.

1/4 lb butter
3 medium zucchini, diced medium
3 medium squash, diced medium
3 ears fresh corn, kernels only
1/2 lb green chili, roasted, peeled, seeded and diced medium
1/3 cup monterey jack cheese, grated
1/3 cup cheddar cheese, grated

Steps:

  • Preheat oven to 350 degrees.
  • In large saute pan place butter and heat to medium high until melted and hot. Add zucchini, squash, and corn and saute for two minutes until just warmed.
  • Add green chiles and stir well. Cook for five minutes.
  • Place mixture in baking dish. Sprinkle with jack cheese and cheddar.
  • Bake for 10-15 minutes until cheese is melted.

2 Zucchini
2 Yellow Squash
1 Red Onion
2 clove Garlic
1 tablespoon Coconut Oil
1 can Whole Kernel Corn
1 can Mild Diced Green Chiles
1 teaspoon Salt
3/4 teaspoon Ground Black Pepper
1 cup Shredded Mild Cheddar Cheese

Steps:

  • Heat large lidded skillet over medium-low heat, then add Coconut Oil (1 tablespoon), Red Onion (1), and Garlic (2 clove) and cook 3-5 minutes or until garlic is golden brown and onions are translucent, stirring frequently.
  • Add Zucchini (2) and Yellow Squash (2) and stir to combine. Cover with lid and cook for another 5-10 minutes, stirring occasionally.
  • Once the zucchini and squash are cooked, stir in Whole Kernel Corn (1 can), Mild Diced Green Chiles (1 can), Salt (1 teaspoon) and Ground Black Pepper (3/4 teaspoon) and cook 2-3 minutes or until corn is heated through.
  • Finally top with Shredded Mild Cheddar Cheese (1 cup) and cover with lid just until cheese melts. Serve warm. Enjoy!

1/4 medium onion, finely chopped
2 medium zucchini, chopped (not peeled)
2 garlic cloves, minced
1 (7 ounce) container frozen green chili peppers, BUENO Brand
3/4 cup frozen corn
1/8 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Heat oil over low heat in a non-stick skillet. Sauté onion in oil.
  • Add zucchini and cook over medium heat for 5 minutes, stirring occasionally.
  • Add garlic to green chile and add to zucchini mixture.
  • Cook for 3 minutes, stirring occasionally.
  • Add corn, salt and pepper.
  • Cover and cook over low heat for 8 minutes or until squash is tender.

I'm always challenged to come up with my family's favorite Mexican food. This is a tried and true recipe that is so easy to make that no one knows how simple but delicious Chile Verde can be. ***** Served with Recipe#282467 makes a complete meal ;)

3 lbs boneless pork shoulder, cut into chunks (carnitas meat)
2 teaspoons ground black pepper
2 teaspoons garlic powder
2 teaspoons onion powder
1/2 teaspoon onion salt
1/2 teaspoon garlic salt
1/2 teaspoon salt
1/2 teaspoon oregano (Mexican if you can find it)
1/2 teaspoon dried cilantro
1/2 teaspoon ground cumin
1/2 teaspoon ground red pepper
1/2 teaspoon minced onion flakes (or fresh onion)
1 teaspoon minced dried garlic
1 cup water
2 tablespoons beef bouillon
16 ounces salsa verde

Steps:

  • Mix all seasonings together in small bowl (except Salsa Verde).
  • Mix Beef Boulion with water and pour in crock pot first.
  • Rub meat with seasoning, place in crock pot, (for best results, I rub meat with seasoning the night before, let it sit in refrig to marinate).
  • Cover and set on 6-8 hours. (Usually cooked within 6 hours).
  • one hour before serving, drain pork drippings out leaving about 1/2 cup with meat. Pour Salsa Verde on top and stir to break up meat. Continue to cook. Just before serving I add a cornstarch slurry to thicken it up. (1 tblsp cornstarch, 1 tbls water).
  • Serve with Spanish rice (Recipe #282467)and beans and enjoy!

Yes, it cheats a bit by using sauce from a jar (hmmph, you might say!), but sometimes you can achieve really good results from shortcuts. :) This is the recipe I use most often for Chile Verde. Delicious, and folks ask for the recipe.

1 1/2 lbs pork, cubed
1 teaspoon salt
1/2 teaspoon pepper
3 tablespoons vegetable oil
1 tablespoon butter
1 large fresh onions, minced or diced or 1/2 cup dried onion flakes
4 cloves garlic, minced
1 (16 ounce) jar la victoria salsa verde
1/2 cup chicken broth (preferred) or 1/2 cup mexican beer (if you're feeling "beery" :))

Steps:

  • Cut pork into 1/2-inch cubes; season cubes with salt and pepper.
  • In a large, heavy pan with lid, brown the cubes well in oil and melted butter.
  • Add the onion and garlic and sauté for about 5 minutes, then drain the fat from the pan.
  • Add the remaining ingredients, cover, and simmer for at least 90 minutes, stirring frequently; add more water (or broth or beer) during cooking if necessary to achieve desired sauce texture.
  • Makes 4 to 6 servings.

This is a mostly vegetarian burrito that I came up with using mild green chiles. I love the textures and flavors and it's light with the filling's main ingredients being zucchini and black beans. It is easy to put together and you can make it totally vegetarian or even vegan by substituting the cheese for your favorite veggie cheese and using meatless green chile sauce. Hope you enjoy!!

2 tablespoons light olive oil
1 cup chopped white onion
2 garlic cloves, crushed and chopped

1 (15 ounce) can green chili sauce (I used Stokes Green Chile Sauce with Pork)
1 (4 ounce) can green chilies, drained (I used Ortega "hot" original fire roasted green chiles)

Steps:

  • Heat the oil on medium heat in a medium skillet and then add the garlic, onions, and zucchini. Stir well and saute for 10 minutes, stirring often, until vegetables are soft. Stir in the salt and pepper then remove zucchini to a bowl.
  • In the same skillet; pour in the green chile sauce, green chiles, and black beans. Stir well to blend then heat through (about 5-7 minutes) until it starts to bubble a little.
  • Remove from heat and serve in warmed flour tortillas with the zucchini then sprinkle with cheese and wrap up burrito-style.
  • Garnish with your favorite toppings like tomato, avocado, and cilantro.
