CHICKEN FRIED PORK STEAKS

Delicious chicken fried pork steaks with tenderized (cubed) pork

3-6 Cubed Pork Steaks
2 c Flour, all purpose
1 1/2 tsp Salt
1/2 tsp Black Pepper
1/2 tsp Onion Powder
1 1/2 tsp Paprika
1 Egg
1/4 c Buttermilk
2 tsp Water
Oil for frying

Steps:

  • Allow cubed pork to come to room temperature. In a bowl add flour and seasonings. Mix to combine. In a separate bowl, add egg and beat. Add buttermilk and water and whisk to combine. Add 1/4" vegetable oil to the bottom of a skillet and heat over medium heat. When the oil is heated and ready for frying, take each piece of cubed pork and dredge in flour mixture, then in wet mixture and again in flour mixture. Add to skillet. Fry on each side, about five minutes until browned and juices run clear. Remove chicken fired pork steaks from pan and place on a paper towel lined plate to drain excess oils. Allow to rest five minutes before serving.

My family loves these spicy, fried pork chops. Quick and easy to make! I've used bone-in pork steaks instead, and just increased cooking time per side a couple of minutes

¼ cup all-purpose flour
1 tablespoon paprika
1 teaspoon ground sage
1 teaspoon Creole seasoning
½ teaspoon cayenne pepper
½ teaspoon black pepper
½ teaspoon garlic powder
4 (1/2 inch thick) boneless pork chops
2 teaspoons olive oil

Steps:

  • Place flour, paprika, sage, Creole seasoning, cayenne pepper, black pepper, and garlic powder in a large, resealable plastic bag. Place pork chops in the bag, seal, and shake to coat chops.
  • In a large skillet, heat oil over high heat for about 1 minute. Arrange chops in pan, and reduce heat to medium. Cook until pork chops are dark brown, about 6 to 8 minutes per side.

I got tired of the "same ole' country fried steak, and was looking through a TOH "country cooking" and found one that was contributed by Toni Holcomb. I changed a few things and here are the results. Feel free to adjust the seasonings to your own tastes. I served this with mashed potatoes and green beans. The nutrition amounts include the total amounts of flour and milk mixture--you might not use all of the flour mixture to bread the meat and you might not use all the gravy. 1 1/4 cups self-rising flour, divided
1 1/2 teaspoons ground black pepper
1 teaspoon white pepper
1/2 tablespoon garlic powder
1 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon cumin
1/4 teaspoon cayenne pepper
4 (4 ounce) pork cube steaks
1 cup buttermilk
1 (12 ounce) can evaporated milk
oil (for frying)

Steps:

  • In a shallow bowl combine one cup flour and all seasonings.
  • In another bowl combine buttermilk and evaporated milk. Set aside 1 3/4 cups of milk mixture for gravy.
  • Dip meat into flour mixture, then in milk mixture, and then back into flour.
  • Repeat step 3 for the rest of meat.
  • Heat oil in skillet until hot but not smoking.
  • Cook meat until lightly browned on each side, about 5 to 7 minutes.
  • Remove steaks and keep warm.
  • Drain oil from pan, saving about 1/3. Stir in remaining flour until smooth. Cook over medium heat until golden brown. Whip in remaining buttermilk mixture.
  • Bring to a boil and cook for 2 minutes.
  • Serve over meat.

Also known as chicken fried steak. Not to be confused with chicken. When they do chicken this way it is chicken fried chicken.

Number Of Ingredients 10

1 1/2 lbs cube steaks
1 cup all-purpose flour, plus
3 tablespoons all-purpose flour, divided
1 1/2 teaspoons salt, divided
1 1/4 teaspoons pepper, divided
1 teaspoon paprika
2 1/2 cups milk, divided
3 eggs, beaten
4 tablespoons oil
butter

Steps:

  • Place 1 cup flour, 1/2 cup milk, and eggs in 3 separate shallow bowls in the working area.
  • Mix 1 tsp salt, 1 tsp pepper, and the paprika into the flour and mix well.
  • Season both sides of cube steaks with additional salt and pepper, if desired.
  • Dip cube steaks in milk, then dredge in seasoned flour.
  • Dip floured steaks in egg wash, then again in the seasoned flour.
  • Heat 2 tbsp oil in a large skillet on medium heat and do half the cube steaks at a time, or work with two skillets, if you desire.
  • Brown the cube steaks on each side, about 8-10 minutes total cooking time; remove from heat and set the steaks aside.
  • Drain all but 1 tbsp oil (if any- I don't usually have any, but the steaks are less greasy with less oil) from the pans.
  • Add enough butter to the pan to equal 3 tbsp along with the oil.
  • Melt the butter and add 3 tbsp flour and stir with a whisk to make a roux, deglazing the bottom of the pan, and cook for a few minutes on LOW heat; do not burn.
  • Slowly add the remaining 2 cups milk, and stir or whisk constantly until mixture comes to a boil and thickens; cook for another minute or so and remove from heat.
  • Serve Country Fried Steaks (Chicken Fried Steak, as we call it) with plenty of gravy on top, and mashed potatoes on the side (double gravy recipe if you use a LOT of gravy on your potatoes, etc).

4 (4 ounce) cube steaks
38 saltine crackers, crushed
1 1/4 cups all-purpose flour, divided
1/2 teaspoon baking powder
2 teaspoons salt, divided
1 1/2 teaspoons ground black pepper, divided
1/2 teaspoon ground red pepper
4 3/4 cups milk
2 eggs
3 1/2 cups peanut oil
chopped fresh parsley, to garnish

Steps:

  • sprinkle salt and pepper evenly over steaks.
  • Set aside.
  • combinecracker crumbs, 1 cup flour, baking powder, 1 teaspoon salt, 1/2 teaspoon black pepper, and red pepper.
  • whisk together 3/4 cup milk and eggs.
  • Dredge steaks in cracker crumb mixture; dip in milk mixture, and dredge in cracker mixture again.
  • POUR oil into a 12-inch skillet;heat to 360 degrees.
  • Do not use a nonstick skillet.
  • I like to use a cast iron skillet for this.
  • Fry steaks 10 minutes.
  • Turn and fry 4 to 5 more minutes or until golden brown.
  • Remove to a wire rack on a jellyroll pan.
  • Keep steaks warm in a 225 degree oven.
  • Carefully drain hot oil, reserving cooked bits and 1 tablespoon drippings in skillet.
  • whisk together remaining 1/4 cup flour, 1 teaspoon salt, 1 teaspoon black pepper, and 4 cups milk.
  • Pour mixture into reserved drippings in skillet; cook over medium-high heat, whisking constantly, 10 to 12 minutes, or until thickened.
  • Serve gravy with steaks and mashed potatoes.
  • Sprinkle with parsley, if desired.

4 pork shoulder steaks, about 1/2-inch thick
2 tablespoons oil
1 small onion, chopped
1 tablespoon flour
10 1/2 ounces cream of mushroom soup
10 ounces sliced mushrooms
8 small new potatoes, peeled (1 lb.)
4 medium carrots, thick sliced (2 cups)
1 teaspoon salt
1/2 teaspoon rosemary
1/4 teaspoon pepper

Steps:

  • Large skillet, medium heat.
  • Cook onion in the oil; push to one side.
  • Trim extra fat from steaks.
  • Coat with flour.
  • Brown well on both sides in skillet.
