- Preheat the oven to 350*F.
- Put the butter into a 4-quart pot and place over medium heat. When butter has melted, add onion, garlic and thyme sprigs. Saute until translucent, about 10 minutes. Add the mushrooms to the pot, stir, and raise the heat a little. Cook the mixture until the liquid has cooked off, about 15 to 20 minutes. Remove from the heat and set aside.
- Meanwhile, crack the eggs into a large bowl and whisk well. Add the cream, parsley and Cajun seasoning and whisk to combine. Add the mushroom mixture one serving spoonful at a time to temper the egg mixture, stirring well after each addition. Add the breadcrumbs and stir well.
- Spray the loaf pan with cooking spray, line with wax(or parchment) paper, and pour the mixture into the pan. Set in a large roasting pan and fill the pan with water halfway up the loaf pan. Place into the top half of the oven and bake until the center is set, about 60-70 minutes. Remove from the oven and let cool 15 minutes before turning out onto a plate to slice.

MUSHROOM CAJUN CHICKEN

- Rinse chicken breasts and pat them dry with paper toweling. Rub with Cajun spice and set aside.
- Preheat oven to 350 degrees F.
- Melt butter over medium-high heat in a large skillet or saute pan with an oven safe handle, and saute scallions and mushrooms until they are tender and the mushrooms begin to give up their juices. With a slotted spoon remove mushrooms and scallions to a utility platter and keep covered (with aluminum foil or a lid) in a warm place. (Leave room on the platter for the chicken.) Add seasoned chicken to the skillet, searing all sides. Deglaze the pan with white wine, let sizzle for a few minutes and spoon the wine and juices over the chicken to coat, and then cover pan and transfer to oven. Bake until fork tender, about 25 minutes.
- While the chicken is in the oven, heat the mushroom soup in a small saucepan and whisk in demi-glace to give it additional flavor. Cover and let simmer over low heat.
- Remove chicken from oven (be sure to use an oven mitt - the handle on that pan will be hot!) and use tongs to transfer the chicken to the utility platter (alongside the mushroom mixture). Cover and keep warm.
- Add about 1/2 cup water to the pan in which the chicken was baking and stir to loosen the browned bits of flavor on the bottom. Place a strainer over the pot of mushroom soup and demi-glace and (still using an oven mitt for that hot handle) pour the juice from the chicken pan through the strainer into the sauce. Whisk together the sauce and pan juices and let cook for a few more minutes to integrate flavors.
- Place chicken on serving dish. Spoon sauce over. Top with sauteed mushrooms/onions and garnish with chopped parsley.

Steps:
- Combine first 7 ingredients in a bowl& set aside.
- Cook mushrooms in butter in a skillet for about 5 minutes.
- Spoon half the chicken mixture into an 8 X 4 inch loaf pan& smooth the surface.
- Spread the mushrooms over the chicken mixture evenly.
- Add the rest of the chicken mixture& smooth the surface.
- Bake in preheated 350F oven for about 1 1/4 hours, or until a meat thermometer reaches 185F.
- Spread the sauce over the top after baking for an hour.
- Let stand for 10 minutes before slicing.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a large mixing bowl, combine ground meat, minced mushrooms, bread crumbs, onion, ketchup, eggs, and salt and pepper. Mix well. Spread 1/2 of the mixture into the bottom of a loaf pan. Arrange 6 whole mushrooms stem down into meat. Top with rest of meat, patting to combine both halves.
- Bake for 1 hour and 45 minutes, or until done. Internal temperature should measure 160 degrees F (70 degrees C) when done.

- Preheat oven to 350 degrees.
- Using a serrated knife, cut bread diagonally into 1-inch thick slices to within 1 inch of the bottom of the loaf. Repeat in the opposite direction.
- Cut the Swiss cheese into 1/2 inch cubes. Stuff cheese cubes and mushroom slices into the slits in the bread.
- Combine the butter, poppy seeds, minced garlic, seasoned salt, ground mustard, and lemon juice in a microwavable dish. Cover and microwave on high for about 2 minutes, until butter is melted. Stir to combine well.
- Spoon butter mixture over bread.
- Wrap bread in foil and bake at 350 degrees for about 40 minutes.

- Preheat oven Gas mark 4/180 degrees centigrade/ 350 degrees farenheit.
- Chop mushrooms roughly.
- Peel and chop onion. Fry onion in the sunflower oil in a large saucepan for 7 minutes, until soft.
- Add mushrooms and fry for a further 3 minutes. Add marmite/yeast extract to pan and allow to melt slightly.
- Add all remaining ingredients, stir well, and season to taste.
- Grease a 1 pound loaf tin generously. Spoon in mix. Press down well. Bake for one hour.
- Serve in slices, with vegetarian gravy.

- Combine the seasonings; set aside. In Dutch ovens, saute onions, green peppers and garlic in butter until tender. Add Worcestershire sauce, hot pepper sauce and reserved seasonings. Cook and stir for 8-10 minutes. Discard bay leaves. Remove from the heat; stir in milk and ketchup. Cool. , Add bread crumbs and eggs; mix well. - Mix onion, mushroom, milk, bread crumbs, eggs, and salt together in a large bowl. Break ground beef into small pieces and add to onion mixture; stir. Shape the beef mixture into a round loaf and place into a 5-quart slow cooker.
- Cook on Low until no longer pink in the center, 5 to 6 hours. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
- Whisk ketchup, brown sugar, mustard, and Worcestershire sauce together in a small bowl; spoon over the meatloaf.
- Continue cooking glazed meatloaf until the glaze is warmed, about 15 minutes.
- Remove meatloaf to a cutting board and let rest 10 minutes before slicing.

- Toast in an extra-large skillet on the stove, over medium-low heat until golden a fragrant, set aside. ( You can also toast on a sheet pan in a 350F oven for 15-16 mins.)
- In an extra-large skillet heat oil over medium heat. Saute the onion 2-3 minutes, add celery and carrots, and saute 5-6 more minutes until they begin to soften. Add mushrooms, garlic, salt, pepper, and sage. Saute until mushrooms release all their liquid, 10-15 minutes, covering with a lid for a few minutes to get this going. Remove lid, continue cooking off all the liquid. Feel free to deglaze with a splash of wine (or skip it) cooking it all off. Cook until the mushrooms are no longer liquidy– make a well in the middle and add the miso paste, stirring it in. You’ll know you are close when they begin sticking to the pan. You really want these dry as possible. Turn off the heat.

- Turn your oven to 220C (425F). Line a large 900g (2lb) loaf pan approx 29cm x 17cm x 7.5cm (11in x 6,5in x 3in) with baking paper (parchment).
- Slice each mushroom into 3-4 slices (the thinner they are the quicker they'll cook). Heat a large saucepan on a high heat. Add a little oil then add the mushrooms and cook, stirring often on a high heat for 7-8 minutes or until they are browned and most of the liquid that comes out of them as they cook has evaporated.
- Remove pot from the heat. Add seeds / almond meal and 1 teaspoon salt. Using a stick blender, stab and puree until most of the seeds and mushrooms are no longer individually visible.
- Add the eggs and stir to combine. Spoon the mixture into your prepared tin and smooth the top.
