BREAD MACHINE CAJUN BREAD



Bread Machine Cajun Bread image

A Cajun-style bread recipe, with Cajun seasoning and chopped bell pepper and onion.

Number Of Ingredients 10

2 cups bread flour
1/2 cup water
1/4 cup chopped onion
1/4 cup chopped green bell pepper
1 tablespoon granulated sugar
2 teaspoons finely chopped garlic
2 teaspoons unsalted butter, soft and cut into small pieces
1 teaspoon active dry yeast
1 teaspoon Cajun (or Creole) seasoning
Scant 1/2 teaspoon salt (use about 3/4 teaspoon if your Cajun seasoning is salt-free)

Steps:

  • Gather the ingredients.
  • Measure all ingredients into the machine according to the manufacturer's directions for adding ingredients.
  • Select basic/white bread cycle. Use medium or dark crust color. (Do not use delay cycles.)
  • Remove from pan and cool on wire rack, about 30 minutes.
  • Put the ingredients in the bread machine and choose the dough setting.
  • Remove the dough from the machine, divide it into about 10 to 12 portions, and shape into rolls.
  • Place them on a large lightly greased or parchment paper-lined baking sheet.
  • Cover with a damp kitchen towel and let the rolls rise for about 35 to 45 minutes, or until doubled.
  • Just before baking, whisk an egg white with 1 tablespoon of water and brush over each roll.
  • Sprinkle with sesame seeds, if desired.
  • Bake in a preheated 350 F oven for about 15 minutes, or until golden brown.

Number Of Ingredients 6

1 package (1/4 ounce) active dry yeast
3 tablespoons sugar plus 1/2 teaspoon sugar
2-1/4 cups warm water (110° to 115°)
1 tablespoon salt
6-1/4 to 6-3/4 cups bread flour
2 tablespoons canola oil

Steps:

  • In a large bowl, dissolve yeast and 1/2 teaspoon sugar in warm water; let stand until bubbles form on surface. Whisk together remaining 3 tablespoons sugar, salt and 3 cups flour. Stir oil into yeast mixture; pour into flour mixture and beat until smooth. Stir in enough remaining flour, 1/2 cup at a time, to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, 8-10 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, 1-1/2 to 2 hours., Punch dough down. Turn onto a lightly floured surface; divide dough in half. Shape each into a loaf. Place in 2 greased 9x5-in. loaf pans. Cover and let rise until doubled, 1 to 1-1/2 hours., Bake at 375° until golden brown and bread sounds hollow when tapped or has reached an internal temperature of 200°, 30-35 minutes. Remove from pans to wire racks to cool.

3 cloves garlic
2 teaspoons paprika
1 teaspoon dried thyme
1 teaspoon oregano
1 teaspoon celery seed
1 1/2 tablespoons hot sauce (Tabasco or peri-peri will do)
1 tablespoon cider vinegar
1 loaf French bread or 1 loaf sourdough bread

Steps:

  • Combine all the ingredients.
  • Slash the bread almost to the bottom in 1" slices.
  • Butter between slices.
  • Wrap the loaf in double foil.
  • BBQ 6" from heat for 25 minutes turning often, serve hot.

2 bay leaves
1 teaspoon salt
1 teaspoon ground cayenne pepper
1 teaspoon ground black pepper
½ teaspoon ground white pepper
½ teaspoon ground cumin
½ teaspoon ground nutmeg
4 tablespoons butter
¾ cup chopped onion
½ cup chopped green bell pepper
¼ cup chopped green onions
4 cloves garlic, minced
1 tablespoon hot pepper sauce
1 tablespoon Worcestershire sauce
½ cup evaporated milk
½ cup ketchup
1 ½ pounds ground beef
½ pound andouille sausage, casings removed
2 eggs, beaten
1 cup dried bread crumbs

Steps:

  • In a small bowl, combine the bay leaves, salt, cayenne pepper, ground black pepper, ground white pepper, cumin, and nutmeg; set aside.
  • Melt the butter or margarine in a saucepan over medium heat. Add the onion, bell pepper, green onions, garlic, hot pepper sauce, Worcestershire sauce, and reserved seasoning mix. Saute until mixture starts sticking to the bottom of the pan, about 6 minutes. Stir in the milk and ketchup; continue cooking for 2 more minutes, stirring occasionally.
  • Remove vegetable mixture from heat, and allow to cool to room temperature. Place the beef and sausage in an ungreased 9x13 inch baking dish. Add the eggs, the vegetable mixture, and the bread crumbs. Remove the bay leaves. Mix well by hand, and form into a loaf about 1 1/2 inches high.
  • Bake uncovered at 350 degrees F (175 degrees C) for 25 minutes. Then raise heat to 400 degrees F (200 degrees C) and bake for another 35 minutes. Let stand for 5 minutes before serving.

40 bay leaves
1/2 cup salt
1/4 cup each pepper, white pepper, cayenne pepper, ground cumin and nutmeg
40 green onions, thinly sliced
15 medium onions, chopped
10 medium green peppers, chopped
40 garlic cloves, minced
4 cups butter
1 cup Worcestershire sauce
2/3 cup hot pepper sauce
6 cans (12 ounces each) evaporated milk
1 bottle (64 ounces) ketchup
8 packages (8 ounces each) dry bread crumbs (20 cups)
36 eggs, beaten
30 pounds lean ground beef (90% lean)
10 pounds ground pork

Steps:

  • Combine the seasonings; set aside. In Dutch ovens, saute onions, green peppers and garlic in butter until tender. Add Worcestershire sauce, hot pepper sauce and reserved seasonings. Cook and stir for 8-10 minutes. Discard bay leaves. Remove from the heat; stir in milk and ketchup. Cool. , Add bread crumbs and eggs; mix well. In several large bowls, combine beef, pork and vegetable mixture; mix well. Pat into 11 greased 13-in. x 9-in. baking pans. , Bake at 350° for 65-75 minutes or until no pink remains and a thermometer reads 160°; drain.

1 small jalapeno pepper, seeded and finely minced

1/2 cup shredded parmesan cheese
1 tablespoon lemon juice
1/2 teaspoon Worcestershire sauce
1 1/2 teaspoons creole seasoning

Steps:

  • 1. Cut bread loaf in half lengthwise. Brush melted butter evenly onto cut sides of bread halves.
  • 2. Stir together onion, jalapeño pepper, and next 5 ingredients, and spread mixture evenly over buttered sides of bread halves. Place bread halves, buttered sides up, on a baking sheet, and sprinkle evenly with 1 1/2 teaspoons Creole seasoning.
  • 3. Bake at 350° for 18 to 20 minutes or until brown and bubbly. Let stand 5 minutes; cut crosswise into 1-inch-thick slices, and serve immediately.
  • Note: To make ahead, wrap prepared unbaked bread halves in aluminum foil, place in a large zip-top plastic freezer bag, and freeze up to 1 month. To bake frozen, remove bread halves from freezer bag, and place foil-wrapped bread on a baking sheet. Bake at 350° for 10 minutes or until thawed. Remove foil, return to baking sheet, buttered sides up, and bake 8 to 10 minutes or until brown and bubbly. Let stand 5 minutes, and cut bread halves as directed.
