MOM'S MACARONI AND CHEESE
Tender pasta is smothered in a creamy, cheesy sauce for a down-home casserole that always satisfies.

Steps:
- Heat oven to 375°F. Cook and drain macaroni as directed on package using minimum cook time.
- Meanwhile, in 2-quart saucepan, melt butter over medium heat. Cook onion, salt and pepper in butter, stirring occasionally, until onion is crisp-tender.
- In small bowl, mix flour and milk until smooth; stir into onion mixture. Heat to boiling, stirring constantly. Boil and stir 1 minute; remove from heat. Stir in cheese until melted. Stir in macaroni. Into ungreased 1 1/2-quart casserole, spoon macaroni mixture.
- Bake about 30 minutes or until bubbly and light brown.

- Cook macaroni according to package directions. Meanwhile, in a saucepan, melt 4 tablespoons butter over medium heat. Stir in flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat. Add the cheeses, stirring until cheese is melted. Drain macaroni., Transfer macaroni to a greased 1-1/2-qt. baking dish. Pour cheese sauce over macaroni; mix well. Melt the remaining butter; add the bread crumbs. Sprinkle over top. Bake, uncovered, at 375° for 30 minutes or until heated through and topping is golden brown.

Season with salt and pepper. Gently mix everything together, leaving some chunks of cheese visible. Pour the mixture into 9 by 11-inch baking pan. Top with the remaining 8 ounces of gouda. Bake until beautifully golden, 30 to 40 minutes. Serve hot or room temperature.

Try it, it will become your FAVORITE too!!! Please Note: The Louisiana and Crystal hot sauce just adds flavor, and is not hot in flavor like Tabasco. - Spray 9x13" pan with pam cooking spray.

- Preheat oven to 400 degrees F.
- In a small saucepan over medium heat, melt butter and then stir in flour; cook for 1 minute or until lightly golden. Slowly add the milk to the flour mixture, stirring until thickened, and then stir in the 3 cheeses until fully melted. Season with salt and pepper, to taste. Add cooked macaroni and stir to coat evenly. Transfer to a shallow baking dish. Bake for about 45 minutes, until brown and crisp on top.
- Remove from oven and preheat the broiler. Sprinkle Parmesan and bread crumbs over top. Return to the oven and broil until cheese is bubbly.

This is a macaroni and cheese I first made 3 years ago when I was in California. When I got back to Texas I made it for my mom. This is now her favorite baked macaroni and cheese. She begs me to make it when I come to visit.

- Preheat oven to 350 degrees F (175 degrees C).
- Melt butter in a medium saucepan over medium heat. Saute onion for 2 minutes. Stir in flour and cook 1 minute, stirring constantly. Stir in milk, salt, mustard and pepper; cook, stirring frequently, until mixture boils and thickens.
- Meanwhile, bring a pot of lightly salted water to a boil. Add macaroni and cook for 8 to 10 minutes or until al dente; drain.
- To the milk mixture add the Cheddar and American cheeses; stir until cheese melts. Combine macaroni and cheese sauce in a 2 quart baking dish; mix well.

JACKIE'S MOM'S MACARONI & CHEESE
Jackie is my daughter. She requests this frequently, I can never make just a single recipe, it's always at least doubled. The base of this recipe is from an old Betty Crocker cookbook, but I've made it mine. This is absolutely one of our favorite comfort foods! ENJOY!!!

- 1. Cook macaroni as directed on package. Do not overcook. If it says to cook 7-9 minutes, cook NO longer than 8.
- 2. Melt butter over low heat. Measure onion powder & pepper into 1/2 cup measure. Fill remainder of cup with flour. Add flour mixture to butter in pan and mix thoroughly with a wisk. Cook over low heat stirring constantly till mixture is smooth and bubbly.
- 3. Remove from heat and stir in milk with wisk. Heat to boiling over medium heat, stirring constantly. Boil and stir for one minute.
- 4. Remove from heat and stir in cheeses till melted. Pour sauce over cooked macaroni & stir well. If desired, pour some or all of the mac n cheese into a buttered casserole, top with bread crumbs or ritz crumb in a little melted butter and bake for about 30 minutes at 375º. ENJOY!!
- 5. NOTES: Rarely do I get to bake the mac n cheese. My kids don't usually give me the chance. They dig in as soon as the mac is mixed into the cheese. The original recipe called for chopped onion and salt. My kids don't like the chunks and I figured with all that cheese additional salt is not necessary. Also tastes great with add ins such as tuna or chicken.

- Add milk slowly, whisking to blend.

- Cook macaroni in boiling salted water until tender; drain.
- Mix cooked macaroni with butter, stirring well.
- While macaroni is cooking, cook ground beef, garlic and onion in a large skillet until beef is browned and cooked through.
- Drain any accumulated fat.
- Add chili powder, salt, pepper, tomato sauce, diced tomatoes (with their juice), mixing well.
- Bring meat mixture to a boil, then reduce heat, cover and simmer for 10-15 minutes or until macaroni is done.
- Mix meat mixture with cooked buttered macaroni (do NOT add any additional milk as package suggests).
- Sprinkle contents of cheese packets into pasta and stir until blended.
- Serve garnished with grated cheddar, if desired.
OLD SCHOOL MAC N' CHEESE
This is a completely unpretentious, down-home macaroni and cheese recipe just like my grandma and mom always made. A simple white sauce where you add cheese and a few other flavors with macaroni and a potato chip crust. This recipe makes a lot, I like to make two pans so I can take one to a pot luck and have the other one to keep in the fridge for later. It's an easy recipe to adjust down if you only want to make one pan. If you aren't cooking it right away, just keep the topping separate until you are ready to put it in the oven.

- Preheat oven to 375 degrees F (190 degrees C).
- Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes; drain.
- Melt butter in a large pot over medium-low heat. Slowly add flour to butter, whisking constantly; cook until brown and the mixture no longer smells of flour, about 5 minutes. Pour 1 cup milk into the flour mixture, whisking continually until fully incorporated, about 45 seconds; repeat twice. Add remaining 3 cups milk to the mixture, whisking to incorporate. Stir Worcestershire sauce, mustard powder, onion powder, and cayenne pepper into the mixture; season with salt and black pepper.
- Reduce heat to low. Cook sauce, whisking frequently, until it begins to thicken, about 10 minutes. Add about half the package of shredded Cheddar cheese; stir continually until the cheese melts completely. Repeat with remaining half package of Cheddar cheese and the American cheese, about 4 ounces at a time. Once cheese is entirely incorporated, remove sauce from heat.
- Stir drained macaroni into the cheese sauce to coat. Divide macaroni between two 9x13-inch baking dishes.
- Mix crushed potato chips, 1 cup shredded Cheddar cheese, and Parmesan cheese in a bowl. Top the macaroni with the potato chip mixture evenly. Spray the potato chip mixture with cooking spray.
- Bake in preheated oven until the crust is golden brown and the sauce is bubbling, 35 to 45 minutes.

MOM'S MACARONI & CHEESE
Mom made this when my second son was born and SHE was in the mood for "comfort food". Had to bug her for a year to get the recipe written down(she's a throw it all together and it tastes great every time cook!). Easy and simple to make. The whole family loves it, I take it to potlucks and always get raves. Sent it out on a recipe exchange a year ago and got a lot of compliments.

- Melt the Velveeta, grated cheddar cheese, milk, mustard and minced garlic until smooth and creamy. Stirring frequently.
- Sautee the ham, onion and celery. About 10 minutes
- Add the ham mixture to the cheese sauce. Mix with the cooked noodles. Spoon into a large rectangle baking dish.
- Brown the breadcrumbs with dash of onion and/or garlic powder in butter.
- Sprinkle over top of macaroni & cheese bake @ 350 degrees for 1/2 hour.
- This dish can feed up to 6 or more people at one meal. Makes great leftovers.
