Categories     main-dish

Time 30m

Yield 4 servings

Number Of Ingredients 11

3 tablespoons vegetable oil
3 tablespoons Jamaican curry powder, plus more if needed
1 small yellow onion, small diced
5 cloves garlic, peeled and smashed
4 lobster tails, split lengthwise and then crosswise
1 small red bell pepper, diced
2 scallions, roughly chopped into 1-inch pieces
3 sprigs thyme
1/2 Scotch bonnet chile, seeded and julienned
Kosher salt and freshly ground black pepper
1 tablespoon unsalted butter

Steps:

  • Add the oil to a large skillet over medium-high heat. Stir in the curry powder with a wooden spoon until toasted and fragrant, 3 to 5 minutes.
  • While stirring, gradually add the onions. Cook for about 2 minutes, and then add the garlic. Cook until translucent, 4 to 5 minutes. Add the lobster and 2 cups water. Stir to combine the ingredients, then cover the pan and cook for 2 minutes. Remove the lid and add a pinch more curry powder if needed to deepen the color.
  • Remove the cover and add the bell peppers, scallions and thyme. Stir to incorporate all the ingredients and let cook at a low simmer, uncovered, for 3 to 4 minutes. Add the Scotch bonnet, 2 pinches of salt and 1 pinch of black pepper. Add the butter and stir to melt, then remove from the heat and serve.

Categories     main-dish

Time 1h5m

Yield 4 servings

Number Of Ingredients 5

1 pound unsalted butter
1/2 cup basil chiffonade
Salt and freshly ground pepper to taste
4 (2 1/2 pound) whole lobsters
2 tablespoons olive oil

Steps:

  • Combine the butter, basil, and salt and pepper to taste in a food processor and blend until smooth. Pack the mixture into a medium ramekin, cover with plastic wrap and refrigerate for at least 30 minutes. Split the lobsters in half lengthwise. Bring the knife down through the tail, making sure to cut just through the meat and to leave the shell connected. Lay the lobster open, leaving the two halves slightly attached. Pull off claws and legs from the lobsters and crack them slightly with the knife handle. Place the claws and legs on the grill over medium-low heat and cover with a pie pan. Cook them for 5 to 7 minutes per side. Brush the lobster bodies with the oil and season with salt and pepper to taste. Place them fleshside down on the grill over medium heat. Grill 8 to 10 minutes
  • Remove the lobsters and slather with the basil butter.

CORAL BUTTER FOR STEAMED LOBSTER

Coral Butter for Steamed Lobster image

Provided by Food Network Kitchen

Categories     main-dish

Time 10m

Yield 4 to 6 servings (about 1 cup)

Number Of Ingredients 2

1/2 pound unsalted butter
1 to 4 tablespoons lobster roe (eggs), also called coral, preferably uncooked

Steps:

  • Place the butter in a small saucepan and bring to a boil over medium-high heat. Boil for 1 minute.
  • Set the saucepan aside and let the butter settle, undisturbed. The milk solids will come to the top of the butter and the watery whey will collect on the bottom. Skim off the milk solids with a spoon and pour the drawn butter into a small bowl. Wipe out the saucepan and return the drawn butter to it.
  • Place the roe in a medium bowl and whisk lightly to break it up. Heat the butter over medium heat until just hot. Gradually pour the warmed butter over the roe, while whisking, until the eggs turn bright red. Serve with lobster or other shellfish.

4 tablespoons (1/2 stick) butter
1 cup chopped onion
1 1/2 tablespoons curry powder
1 tablespoon chopped garlic
1 tablespoon tomato paste
1/4 cup Calvados or other apple brandy
1 cup dry white wine
3 fresh thyme sprigs or 1 teaspoon dried
3 fresh parsley sprigs

BUTTERFLIED LOBSTER TAILS

Butterflied Lobster Tails image

Butterflying lobster tails is a presentation common in restaurants. It is a little more complex method of cooking a lobster tail but it is well worth the effort for this spectacular presentation.

Provided by Renee Redman

Categories     Lobster

Time 40m

Yield 4 serving(s)

Number Of Ingredients 7

32 ounces lobster tails
1/2 cup butter
1/2 teaspoon paprika
1 teaspoon garlic powder
2 teaspoons lemon juice
1 teaspoon salt
1 teaspoon white pepper

Steps:

  • Defrost the lobster tails.
  • Preheat the oven to 450 degrees.
  • Using kitchen shears cut down the center of top of each tail down to the base. Next grab each side of the shell and gently pry the shell away from the meat- leaving the meat at the base of the tail attached. Squeeze the shell together to close the gap and lay the meat on top of the shell. Gently slice the meat 3 times down the top- enough to be able to lay the meat over the sides of the shell. Repeat for the remaining tails.
  • Place the tails in an oven safe pan and brush the top of each tail with the marinade. You will want to baste the tails again 2 or 3 times during the cooking process.
  • Bake the tails for about 25 minutes. Cooking times may vary so make sure you keep an eye on the tails!
