ROASTED BRUSSELS SPROUTS WITH PARMESAN & GARLIC
Brussels sprouts can very a lot in size so make sure to adjust your cooking times . Also, try to select all the same sizes for consistent cooking. In our kitchen we have two favorite cheese graters, depending on who's grating ;) . Some love this rotary grater the most, others love this Microplane grater.

Steps:
- Preheat oven to Bake or Roast at 400°F.
- Wash and rinse the Brussels sprouts. Peel the loose, outer leaves. Trim the end, then cut Brussels sprouts in half.
- In an oven-safe dish, cast iron pan, or sheet pan, toss together the Brussels sprouts, olive oil, garlic, and balsamic vinegar. Spread the Brussels sprouts into an even layer. Season with salt and pepper, to taste
- Bake for 20 minutes, then gently toss and mix the Brussels sprouts.Contine to bake Brussels sprouts for another 20 minutes, or until the Brussels sprouts are tender.
- Sprinkle parmesan cheese evenly over top of Brussels sprouts and bake for another 3 minutes or until cheese is melted.Serve warm.

- Preheat the oven to 400 degrees F (200 degrees C).
- Heat oil in a cast iron skillet until shimmering. Place Brussels sprouts carefully in the hot oil, cut-side down. Sprinkle in garlic, salt, and pepper. Cook until Brussels sprouts begin to brown, 3 to 5 minutes.
- Transfer skillet to the preheated oven and cook until Brussels sprouts are very browned and tender, 10 to 20 minutes. Shake skillet every 5 minutes to ensure even cooking.
- Season with salt and pepper, stir in balsamic vinegar, and serve immediately.

- Remove, and drain on paper.

- Preheat oven to 425°F (220°C). Lightly grease a baking sheet with nonstick cooking oil spray.
- Heat oil in pan over medium-high heat until hot. Add sprouts, season with salt and pepper. Once hot, add your brussels sprouts and shake pan so sprouts land cut side down in a single layer. Let them cook, undisturbed, until slightly charred and caramelized (about 6-8 minutes).
- Melt the butter in the pan. Stir the butter through the sprouts, then add the garlic and sauté until fragrant (about 30 seconds), stirring through the sprouts.

- Cook the brussels sprouts, uncovered, in water salted to taste until they are just tender, not soft. Drain, shock under cold water, drain again and set aside until needed.
- Melt the butter in a deep pot over low heat and saute the garlic briefly until soft but not browned. Stir in the lemon juice and set the mixture aside till needed.
- At the last minute, heat the butter-garlic-lemon mixture, add the brussels sprouts and toss gently until heated through. Add the grated cheese, toss lightly once again and serve

- Place bacon into a large cast iron skillet over medium heat and cook until fully browned, 7 to 10 minutes. Remove bacon to a paper towel-lined plate, but leave the bacon grease. Chop bacon when cool enough to handle.
- Add 1/4 cup butter and black garlic clove to the bacon grease. Mash the black garlic thoroughly, then cook and stir until fragrant, 1 to 2 minutes. - Melt butter and olive oil in a medium skillet (over medium-high heat) until butter is foamy.
- Reduce heat to medium, add smashed garlic and cook until lightly browned.
- Remove garlic and discard.
- Add sprouts cut side down, cover, and cook without stirring on medium-low heat 10-15 minutes or until tender when pierced with a knife.
- The cut side of the sprouts should get nice and browned, with a nutty, buttery flavor enhanced by garlic.
