EASY SPICE CAKE WITH WARM BROWN SUGAR SAUCE
The base cake can, of course, be made with a scratch recipe for spice cake. The sauce is the highlight of this cake, so either boxed mix or scratch spice cake are equally delicious. You can also substitute a Gingerbread or an Applesauce spice cake for the general Spice Cake mix. My mother first served this to our family in the...

Steps:
- 1. Preheat oven to 350-degrees. Coat a 9x13 inch baking pan with butter flavored oil spray.
- 2. Add cake mix, eggs, oil and water together in a bowl and mix for about 2-minutes. Pour into greased baking pan. Bake according to package directions (approximately 25-minutes baking time). Remove from oven when baking is complete and allow to cool.
- 3. FOR WARM BROWN SUGAR SAUCE: Melt butter in sauce pan over medium heat. Add the brown sugar, cinnamon and allspice. Stir until butter melts and ingredients are mixed. Add milk and stir with a whisk until smooth. Allow to reach a low boil. Turn heat to low. Stir for one-minute. Remove from heat and allow to sit for one or two minutes. Add the vanilla before serving and stir again. (Store leftover sauce in refrigerator. It will set hard and need to be microwave heated to pour over leftover cake or ice cream)
- 4. Slice cake and place on serving dishes. (I use a low-rimmed bowl but a soup cup or a plate are equally fine). POUR the warm sauce over the cake and serve, preferably with a spoon so you don't miss even a drop of the deliciousness!

APPLE SPICE CAKE / BROWN SUGAR FROSTING - SO EASY
Susan Prescott gave me this wonderful idea from my Chocolate Fudge Cherry Cake comments. It smelled just wonderful baking and is so easy to make. Three ingredients is all you need. I had a spice cake mix, a can of apple pie filling, and eggs. That is it. I then made a simple brown sugar frosting... Hope you try it... Thank you...

Steps:
- 1. Preheat oven to 350 degree F. Spray 9 x 13 baking dish with nonstick cooking spray.
- 2. I chopped the apples into about 1 inch chunks. In a medium bowl, add cake mix, three eggs, and the apples with thickening.
- 3. Using a spatula, mix well. Make sure all is incorporated well, batter will be thick.
- 4. Spread into cake pan evenly.
- 5. Bake for 30 minutes. When cake only has 5 minutes left; start the frosting if using.
- 6. Frosting: In a small pan over medium heat, melt the butter. Stir in brown sugar and salt. Cook, stirring, until the sugar melts. Add the milk, bring to a boil, and pour into a mixing bowl. Cool for 10 minutes.
- 7. Stir in confectioners' sugar and vanilla. Beat well; if the mixture seems too thin, add more confectioners' sugar. Use the frosting while it is still warm or it will firm up while it cools and you won't be able to spread it. I spread the frosting on the warm cake.
- 8. You could also add nuts to the cake or frosting! Enjoy!!!!

Steps:
- Put oven rack in middle position and preheat oven to 350°F. Lightly butter and flour cake pan, knocking out excess flour.
- Make caramelized apples:
- Peel and core apples, then cut into 1/2-inch-thick wedges.
- Spread softened butter in an even layer over bottom of a 12-inch heavy skillet and sprinkle with brown sugar. Add apple wedges and cook over moderate heat, without stirring, until sugar is melted and apples start to give off liquid, about 10 minutes. Cook, stirring occasionally, until apples are just tender and juices become syrupy, about 30 minutes more.
- Pour syrup from skillet into a small heatproof bowl, then sauté apples, stirring occasionally, until caramelized and very tender, about 30 minutes more. Return syrup to apples and cook until heated through, about 2 minutes.
- Make cake while apples cook:
- Whisk together flour, baking powder, baking soda, salt, and spices in a bowl.
- Beat together butter and brown sugar in a large bowl with an electric mixer at medium speed until pale and fluffy. Beat in egg until combined. Add maple syrup, sour cream, and vanilla and beat until combined well. Reduce speed to low and add flour mixture, then mix until just incorporated.
- Spread batter in cake pan and bake until cake is golden brown and a wooden pick or skewer inserted in center comes out clean, 35 to 40 minutes. Cool in pan on a rack 10 minutes.
- Make cream just before serving:
- Beat cream with sour cream and sugar using cleaned beaters at high speed until it just holds soft peaks.
- To serve:
- Run a thin knife around edge of pan, then invert cake onto a plate and cut into squares. Serve warm or at room temperature, topped with warm apple mixture and cream.
