BREAKFAST STRATA
My grandmother makes this every Christmas morning, and it's amazing. My husband hates eggs and he always has seconds, even my 1- and 2-year-old gobble this up. Perfect for breakfast, lunch, or dinner! Ingredients are forgiving; add your favorites or spice it up. Just make sure your veggies are not going to water it down.

EASY SAUSAGE STRATA
This strata is really easy to make. Put it together the day before, then just remove from the refrigerator and bake. Ham or bacon can be substituted for the sausage. Sometimes I add cooked chopped broccoli for a change of pace.

BREAKFAST STRATA WITH COUNTRY SAUSAGE
Steps:
- Brush a large gratin dish with some of the oil.
- To cook the sausage, in a large skillet, heat the remaining 1 tablespoon of oil over medium heat. Add the sausage and cook until it begins to brown, 3 to 5 minutes. Add the onion and red and yellow bell peppers and saute until the onion is golden, about 5 minutes. Add the garlic and cook until fragrant, 45 to 60 seconds.
- To assemble the strata, place half of the bread cubes in the prepared gratin dish and top with half of the sausage mixture. Sprinkle 1/4 cup of the grated cheese over the sausage mixture and top with the remaining bread cubes and sausage.
- Whisk together the eggs, milk, sage, and parsley in a medium bowl. Season with salt and pepper. Pour the custard over the strata. Cover with plastic wrap and refrigerate for at least 3 hours and up to 12 hours.
- Preheat the oven to 350°F. Let the chilled strata stand at room temperature for 20 minutes.
- Bake the strata for 30 minutes. Remove from the oven and sprinkle with the remaining 1/4 cup cheese; continue baking until the strata is puffed and golden brown, an additional 20 to 25 minutes. (If the top of the strata starts to get too brown, cover it with aluminum foil.) Remove to a rack to cool slightly. Serve hot or warm.
HOLIDAY BREAKFAST STRATA WITH SAUSAGE (OR NOT)
This easy overnight breakfast strata is perfect for holiday mornings. When time is tight and a special breakfast is in order, this fits the bill on both counts. Add sausage for the meat-eaters and for the vegetarians, you can leave it out or substitute veggie sausage. It's delicious either way.

BREAKFAST STRATA
This is the only breakfast casserole I make. It's worth the effort. You could probably throw some breakfast sausage in here instead of the ham and bacon. This one has to sit overnight in the refrigerator before baking in the morning.

OVERNIGHT SAUSAGE STRATA
This dish is convenient since you prepare it the night before baking. I always serve this when we have overnight guests because there's no morning prep time. I get to visit while it's in the oven.-Elizabeth Link, Charlotte, North Carolina

SAUSAGE AND CHEESE BREAKFAST STRATA
This has been our Christmas breakfast since I was a child. I look forward to it every year. You can really change it up and add any type of meat, cheese, or veggies you like. This can easily be a vegetation dish also. This dish is wonderful for lunch if you add chicken, asparagus and Swiss cheese. But, the breakfast strata brings back so many great memories, you just can't beat it!!

- Spray a 9 X 13 casserole dish with nonstick cooking spray. If you are baking this right away, preheat the oven to 350°F.
- In a medium to large skillet, cook and crumble the sausage. Once it's browned, move it to one side of the pan and add the onions and bell peppers. Reduce the heat to medium or medium low and cook for about 6 minutes, until they are soft. Mix the onions, peppers, and sausage together as they cook.
- Spread the sausage + onions and pepper mixture over the top of the bread. Cover with the shredded cheese. If you are making this casserole ahead, let the sausage mixture cool completely before adding the cheese. Then cover and refrigerate until you are ready to bake. Save Step 5 until just before baking.
