FRUIT AGAR AGAR

Steps:

• Prepare the coconut agar-agar. In a small pot, boil coconut milk, 5 g agar-agar powder, 1 tbsp sugar, and 100 ml water together. Stir constantly. Remove from heat when mixture boils and immediately pour into 4-inch molds. Lightly tap molds on a hard surface to remove bubbles and leave to chill in refrigerator for 30 minutes to an hour until set. | Not just to be eaten on its own, agar-agar can also be used to make an interesting jelly-like layer on cakes and other desserts
• Add fruit into the mold. Spoon fruit into molds.
• Prepare the plain agar-agar. In a small pot, boil 10 g agar-agar powder, the rest of the sugar and water together. Stir constantly. When mixture boils, remove from heat. | For more colorful desserts, add a few drops of food coloring with the water and mix well. Pour agar-agar mixture into molds. Lightly tap molds on a hard surface to remove bubbles and leave to chill in refrigerator for 30 minutes to an hour until set. | Agar-agar comes in a few forms. 1 tsp powdered agar = 1 tbsp agar flakes = 1 cup agar strands (cut into 1 inch pieces) will set 350ml 1 cup liquid [water, juice etc]) into a firm jelly.

FRUIT AGAR-AGAR

Steps:

• Boil agar powder, sugar and water together, stirring constantly.
• When mixture boils, remove from the fire.
• Spoon fruit into moulds.
• Add food colouring if desired.
• Pour agar into the moulds and leave it to set.
• Chill.
