CINNAMON OATMEAL BREAKFAST PUDDING
This quick breakfast recipe adds protein and calcium to the traditional oatmeal dish. Enjoy topped with fresh fruit or dried cranberries.

Steps:
- Bring water and salt to boil in medium saucepan over high heat.
- Whisk eggs, ¼ cup (50 mL) milk, cinnamon and vanilla in medium bowl; stir into boiling water. Reduce heat to medium-low.
- Stir in oats. Simmer until desired consistency, about 5 to 6 minutes, stirring occasionally.
- Spoon into four bowls. Top each serving with ⅓ cup (75 mL) milk, 1 tbsp (15 mL) cranberries and 1 tsp (5 mL) sugar.

BREAKFAST OATMEAL PUDDING
This is a nice and easy way to serve oatmeal. It's very moist and tasty, even my children love to eat this one. Use other dried fruits for a different taste. This recipe comes from a local Toronto paper, yeeeeears ago.

Steps:
- Preheat oven to 350°F.
- In a large bowl, combine oats, brown sugar, raisins, cinnamon and salt, mix well.
- In another bowl, combine milk, egg substitute, oil and vanilla and mix well.
- Add the dry and wet ingredients together and mix well.
- Pour into an 8"x8" greased baking dish and bake for 55-60 minutes or until centre is set and firm to the touch.
- Remove from oven and cool slightly.
- Serve with milk or yogurt and fruit.
- Enjoy!

CHEATER'S OATMEAL PUDDING
This is sort of a mix between a rice pudding and oatmeal. I generally like just plain oatmeal, but this is what I eat when I want a real treat. I'd imagine it would be a good way to get kids to eat oatmeal, if they don't mind the texture of it. Also, I make it with many different combinations of pudding/extract. Vanilla and almond are my personal favorite, but it's also good with chocolate or caramel pudding and other extracts. Play around with it!

Steps:
- Combine oats and water in a deep microwaveable bowl (very deep to prevent spilling over).
- Microwave on high for 5 minutes, or less if your microwave is strong. Let sit in microwave for about 2-3 minutes after it's done to let it thicken up (this is important).
- Remove oats from microwave. Stir in pudding, extract, and sweetener.
- Microwave for about 30 more seconds to re-warm.
- Sprinkle with almonds if desired.
- NOTE - I have NOT tried this using quick-cooking oats, I'm not sure how that would taste. Also, you can really cook the oats however you want, just make sure that they are thick before you add the pudding. I have a slow microwave, so 5 minutes is how long mine takes.
CHIA SEED OATMEAL

- Combine the oatmeal and 1 cup water. Microwave on full power for 2 minutes or until the oats are cooked. Add the chia seeds, ground flaxseeds, raisins, walnuts and agave nectar. Let sit 3 to 4 minutes. Stir in the milk.

- Adjust the oven rack to the lower third position and preheat the oven to 350°F (177°C). Spray a 9×9 inch or 11×7 inch baking pan with nonstick spray. Any similar size or shape pan works, though 8×8 inch would be too small. See recipe note for 9×13 inch pan.
- Whisk all of the ingredients together in 1 large bowl. Pour into prepared baking pan. Top with nuts, if desired. (Or stir into the oatmeal.) Bake for 35 minutes or until the center appears *almost* set, which gives us a soft oatmeal as pictured above. For drier and more solid baked oatmeal, bake until center has set.
- Cool for 5 minutes before serving. Spoon or slice and serve with yogurt, if desired. Cover leftovers tightly and refrigerate for up to 1 week.
