Brazilian Chicken Salad (Salpicao de Frango) image

This is a really easy chicken salad made with a cream and mustard dressing instead of mayo, which results in a lighter taste. Great for leftover chicken.

1 pound coarsely shredded cooked chicken
1 (8 ounce) can whole kernel corn, drained
1 cup pitted green olives, chopped
¾ cup golden raisins
2 carrots, grated
1 stalk celery, finely chopped
¼ green apple, finely chopped
4 tablespoons heavy cream
1 tablespoon Dijon mustard
1 pinch white sugar
salt and freshly ground black pepper to taste
2 tablespoons chopped fresh parsley, or to taste
2 large lettuce leaves
4 sprigs watercress
2 cups shoestring potato sticks

Steps:

  • Combine chicken, corn, olives, raisins, carrots, celery, and apple in a large bowl.
  • Stir together cream and mustard in a cup and season with sugar, salt, and pepper. Pour dressing over salad and mix to combine. Season with salt and pepper and sprinkle with parsley.
  • Arrange lettuce leaves and watercress on a platter and spoon salad in the middle. Sprinkle shoestring potato sticks on top and press into salad. Chill until serving.

You don't need salt to bring out the fantastic flavor of this zesty salad from our Test Kitchen. A dash of spices and minced cilantro add to its somewhat exotic appeal. TIP: To easily peel the oranges, cut off both ends and stand the orange upright on a cutting board. Cut downward in vertical strips following the curve of the orange to remove the peel.

1 tablespoon olive oil
2 teaspoons white wine vinegar
3/4 teaspoon sugar
1/8 to 1/4 teaspoon ground cumin
Dash each paprika, curry powder, ground cinnamon and pepper
2 small navel oranges, peeled and sliced
2 slices red onion, quartered
1 tablespoon minced fresh cilantro

Steps:

  • In a jar with a tight-fitting lid, combine the oil, vinegar, sugar, cumin, paprika, curry, cinnamon and pepper; shake well. Place oranges and onion in a shallow bowl. Drizzle with dressing; toss gently to coat. Sprinkle with cilantro. Serve with a slotted spoon.

This nostalgic orange salad is creamy, tangy, sweet and refreshing--the perfect, eye-catching complement to a big holiday feast.

Nonstick cooking spray
One 6-ounce packet orange gelatin
One 8-ounce can crushed pineapple in juice
One 11-ounce can mandarin oranges in light syrup
1 cup orange sherbet
1 cup sour cream

Steps:

  • Spray a 6-cup gelatin mold or bundt pan with nonstick cooking spray. Place the gelatin in a medium bowl.
  • Strain the pineapple and mandarin oranges, reserving the liquid in a large measuring cup. Set the fruit aside. Add enough water to the fruit juices to equal 2 cups. Transfer the juice mixture to a small saucepan and bring to a simmer over low heat. Pour the hot juice mixture over the gelatin and whisk to dissolve. Add the orange sherbet and stir until fully melted and combined.
  • Add the sour cream and beat with an electric mixture until smooth, 1 to 2 minutes. Pour the mixture into the mold and add the reserved mandarins and pineapples, making sure to distribute the fruit evenly throughout. Refrigerate until fully set, at least 3 hours up to overnight.
  • Carefully dip the mold in hot water for 15 to 30 seconds. Remove and place a platter over the top of the mold. Invert onto the platter and serve.

1 pound skinless boneless chicken thighs, cut into 1/2-inch-wide strips
1/4 cup olive oil
4 garlic cloves, finely chopped
1 teaspoon grated orange peel
1 cup water
1/2 cup orange juice
1 cup yellow rice mix with seasoning packet (from 8-ounce box)
1/2 cup (packed) pimiento-stuffed Spanish olives, halved
1 cup chopped fresh cilantro
Orange wedges

Steps:

  • Sprinkle chicken lightly with salt and generously with ground black pepper. Heat oil in heavy large skillet over medium-high heat. Add chicken, garlic, and peel; sauté until chicken is lightly browned, about 3 minutes. Add 1 cup water and orange juice and bring to boil. Mix in rice, seasoning packet, and olives. Return to boil. Reduce heat to medium-low; cover and cook until liquid is absorbed and rice is tender, about 20 minutes. Remove from heat; let stand covered 10 minutes.
  • Stir cilantro into rice mixture. Transfer to platter. Garnish with orange wedges.

This is a salad I grew up with. It is wonderful as a garnish for churrasco. If you think you can't possibly eat raw onions, the secret is to soak the sliced onions in ice water or sprinkle them with sugar and leave them in the refrigerator for a couple of hours. 2 large onions
2 tablespoons sugar
1 tablespoon red wine vinegar (to taste)
2 tablespoons olive oil (to taste)
salt (to taste)
pepper (to taste)

Steps:

  • Peel the onions and slice them into very thin slices.
  • Separate the slices into rings.
  • Place the onions in a bowl and cover them with ice cubes and water. Refrigerate for 2 hours. The alternative used by my friends in Bahia is to sprinkle the slices with sugar (2 Tbsp) and refrigerate for 2 hours. Both methods have worked for me.
  • When you are ready to serve them, drain the onion slices and rinse under cold water.
  • Serve them in a glass bowl, drizzled with extra-virgin olive oil and red wine vinegar, and sprinkled with salt and freshly ground pepper.

1 cup brown basmati rice
1/2 teaspoon salt
2 tablespoons olive oil
1 1/2 teaspoons chili powder
1/4 teaspoon garlic powder
1 teaspoon brown sugar
1 teaspoon orange zest (tangerine is good, also)
1/2 cup pine nuts (or chopped Brazil nuts if you like)
1/4 cup sliced black olives

Steps:

  • Combine water, basmati rice, salt, olive oil, chili powder, garlic powder, brown sugar and orange zest.
  • Bring to a boil, cover and simmer over low heat about 40 to 45 minutes, or until rice is tender and liquid is absorbed.
  • Stir in pine nuts and black olives and serve.
  • (It's nice to garnish with orange slices).
