BRAISED PORK BUTT WITH CABBAGE, SAUSAGE AND MUSTARD



Braised Pork Butt with Cabbage, Sausage and Mustard image

Number Of Ingredients 15

One 3- to 4-pound boneless pork shoulder
Kosher salt and freshly ground black pepper
4 links (about 12 ounces) sweet Italian sausage
2 to 3 sprigs fresh rosemary
1 head green cabbage, sliced
1 Spanish onion, sliced
2 cups marble potatoes
2 cups white wine
1/2 cup Dijon mustard
1 tablespoon caraway seeds
4 to 6 cups chicken stock
White wine vinegar, such as Chardonnay vinegar, for seasoning
1 cup sour cream
1/4 cup prepared horseradish, drained
1/2 cup chopped fresh parsley

Steps:

  • Fit a wire rack in a sheet tray. Liberally sprinkle the pork shoulder with salt and pepper, then place on the sheet tray and refrigerate, uncovered, 8 hours or up to overnight.
  • Heat a large Dutch oven over medium-high heat. Add the sausage to the pan and brown the links on both sides, about 5 minutes per side. Remove the sausage to a plate. Fry the sprigs of rosemary in the fat, flipping frequently, until fragrant, about 1 minute. Remove to the plate with the sausage.
  • If the pork shoulder is wet, dry thoroughly with paper towels. Add the pork to the Dutch oven and brown on all sides until deeply browned, about 5 minutes per side. Remove the pork to a large plate or baking dish.
  • Add the cabbage and onions to the Dutch oven and sprinkle with salt and pepper. Cook over medium heat until the vegetables have softened slightly, about 5 minutes. Add the potatoes, wine, mustard and caraway seeds and cook until the wine has almost evaporated, another 8 minutes. Return the pork, sausages and fried rosemary sprigs to the Dutch oven, then add the stock and bring to a simmer. Cover and reduce the heat to low. Let braise until the pork is very tender, about 3 hours.
  • For a thicker, richer sauce, strain the liquid from the Dutch oven and reduce over medium heat in a small saucepan until it reaches a thin gravy consistency, 7 to 10 minutes. Season the sauce to taste with white wine vinegar, salt and pepper.
  • To prepare the horseradish sauce, mix together the sour cream and prepared horseradish (add horseradish a tablespoon at a time to taste if you want a milder sauce). Season with salt and pepper.
  • Remove the pork and sausages to a large serving dish. Shred the pork using two forks. Pour the sauce over the top and garnish with fresh parsley. Serve with sour cream horseradish sauce alongside.

1/2 teaspoon steak seasoning
1/2 teaspoon dried rosemary, crushed
1/2 teaspoon dried thyme
1 pork tenderloin (3/4 pound)
2 garlic cloves, peeled and quartered
1 teaspoon balsamic vinegar
1 teaspoon olive oil
HORSERADISH SAUCE:
2 tablespoons fat-free mayonnaise
2 tablespoons reduced-fat sour cream
1 teaspoon prepared horseradish
1/8 teaspoon grated lemon zest
Dash salt and pepper

Steps:

  • Preheat oven to 350°. In a small bowl, combine the steak seasoning, rosemary and thyme; rub over meat. Using the point of a sharp knife, make eight slits in the tenderloin. Insert garlic into slits. Place meat on a rack in a foil-lined shallow roasting pan. Drizzle with vinegar and oil., Bake, uncovered, until a thermometer reads 145°, 30-40 minutes. Let stand for 10 minutes before slicing. Meanwhile, combine the sauce ingredients; chill until serving. Serve with pork.

4 8-ounce pork belly squares
5 clove garlic, minced
4 bay leaves
1/2 tsp fresh thyme leaves, plus more for garnish (optional)
salt and pepper
1 Tbsp canola oil
1 medium celery root, peeled and diced
3 carrots, peeled and diced
3 large white onions, trimmed and sliced
1/2 c brown sugar
3 c red wine
4 c veal stock
1 c sour cream
2 Tbsp horseradish
1/3 c cornstarch

Steps:

  • 1. Marinate pork in garlic, salt, pepper, bay leaves and thyme for 8 to 12 hours.
  • 2. When ready to cook, preheat oven to 300 degrees F.
  • 3. Heat oil and brown pork on high heat in a large pot or Dutch oven, working in batches if necessary to brown all pieces well on all sides. Reduce heat to medium; add celery root, carrots, onion and brown sugar, and sauté, letting vegetables and pork caramelize. Add red wine to pot and simmer until reduced by half. Add stock, and cover with foil.
  • 4. Transfer to oven and roast about 2 hours, until sauce is thickened and pork is fully cooked and able to shred easily. Meanwhile, stir together sour cream cream and horseradish.
  • 5. Strain liquid from pot into a saucepan. Add a touch of water to 1/3 cup cornstarch to make a slurry. Add half to slurry to liquid and bring to a boil, whisking. Add more slurry if necessary to thicken.
  • 6. To serve, place some vegetables on each plate, and top with a piece of pork. Top and surround with sauce, and add a spoonful of horseradish cream. Garnish with thyme if desired.

BIG BROWN BRAISED SHORT RIBS WITH HORSERADISH

6 to 8 bone-in short ribs
Kosher salt
Extra virgin olive oil
2 onions, coarsely chopped
2 carrots, coarsely chopped
2 celery ribs, coarsely chopped
6 to 8 cremini mushrooms, trimmed, cleaned, and coarsely chopped
3 cloves garlic, smashed
1 1/2 cups tomato paste
1/4 cup prepared horseradish
2 cups dry red wine
4 bay leaves
1 thyme bundle, tied with butcher's twine
1 bunch of fresh chives, minced
2 tablespoons freshly grated horseradish

Steps:

  • Preheat the oven to 375°F.
  • Season the ribs generously with salt. Coat a large wide pan with olive oil and bring to high heat. Add the ribs to the pan and brown very well on all sides-this is an EXTREMELY important step in the development of big brown flavors. It may take up to 20 minutes-don't rush it!
  • While the ribs are browning, put the onions, carrots, celery, mushrooms, and garlic in a food processor and purée to a coarse paste; set aside.
  • When the ribs are very brown on all sides, remove them from the pan. Ditch the fat, add a bit of fresh olive oil, and add the puréed veggies to the pan. Season generously with salt and cook over medium-high heat until the veggies are very brown and a crud has formed on the bottom of the pan, 8 to 10 minutes. Scrape the crud and let it reform. Don't rush this step.
  • Add the tomato paste and prepared horseradish and cook, stirring frequently, until it starts to brown, 1 to 2 minutes.
  • Add the wine, bring it to a boil (BTB), and stir frequently to scrape the crud from the bottom of the pan (this is the big-money flavor). Continue cooking until reduced by half, 3 to 4 minutes.
  • Return the ribs to the pan and add enough water to barely cover the meat. Toss in the bay leaves and thyme bundle, cover the pan with aluminum foil, and cook in the oven for 2 1/2 hours. Check the ribs every 45 minutes to make sure they are still covered in liquid; if the liquid has reduced too much, add more water. Turn the ribs after about 1 hour and continue cooking.
  • Remove the foil during the last 20 minutes of cooking to let things get nice and brown and to let the sauce reduce. When the meat is done it should be very tender but not falling apart. To serve, remove the bay leaves and thyme bundle and spoon the sauce over the ribs and sprinkle with the chives and freshly grated horseradish for an extra kick.

a 1-pound piece boneless pork loin
1 1/2 tablespoons Dijon mustard
Accompaniment if desired:
balsamic-braised red cabbage and onions:
2 tablespoons vegetable oil
3/4 pound red cabbage, sliced thin (about 6 cups)
1 medium red onion, sliced thin
1/4 cup water
1/2 cup balsamic vinegar
1 tablespoon sugar

Steps:

  • To make the roast pork loin:
  • Preheat oven to 425°F.
  • In a heavy skillet cook bread crumbs in 1 tablespoon oil with salt and pepper to taste over moderate heat, stirring, until golden brown. Transfer bread crumbs to a bowl and toss well with horseradish.
  • Pat pork dry and season with salt and pepper. In skillet heat remaining tablespoon oil over moderately high heat until hot but not smoking and brown pork on all sides, about 5 minutes. Transfer pork to a shallow baking pan and coat top and sides evenly with mustard. Press bread crumb mixture evenly onto mustard and roast pork in middle of oven until a meat thermometer inserted in center registers 155°F. for slightly pink meat (if bread crumbs begin to get too browned arrange a sheet of foil loosely over pork), 25 to 30 minutes. Transfer pork to a cutting board and let stand 5 minutes.
  • Cut pork into 1/4-inch-thick slices and serve with cabbage and onions.
  • To make the cabbage and onions:
  • In a large heavy skillet heat oil over moderate heat until hot but not smoking and cook cabbage and onion, stirring, 10 minutes, or until just tender. Stir in water, vinegar, sugar, and salt and pepper to taste and simmer, stirring occasionally, until almost all liquid is evaporated and vegetables are tender, about 15 minutes. Serves 2.
