3 lbs beef stew meat, trimmed of fat, cut into 1 1/2-inch chunks, and blotted dry
2 tablespoons all-purpose flour
salt
fresh ground black pepper
3 tablespoons olive oil
2 medium onions, chopped
3 carrots, cut diagonally into 2-inch chunks
4 new potatoes, diced
6 small turnips, peeled and quartered
1 cup strong coffee
1/2 teaspoon dried thyme
1/2 cup dry red wine

Steps:

  • In a zip-lock plastic bag, toss the beef with the flour, salt, and pepper; shake off excess flour.
  • In a big skillet over med-high heat, warm 1 ½ tablespoons oil until very hot.
  • Add half the beef; brown on all sides, about 5 minutes; transfer to a slow cooker.
  • Repeat with the remaining oil and beef.
  • Add the onions to the skillet; cook/stir 5minutes, until softened.
  • Transfer to the cooker and add the carrots, potatoes, and turnips.
  • Add the coffee and thyme to the cooker.
  • Pour the wine into the skillet; bring to a boil over medium heat, stirring constantly and scraping up any browned bits stuck to the pan.
  • Pour into the cooker and stir.
  • Cover and cook on LOW for 7-8 hours, until the meat is tender.
  • Taste for salt/pepper, add to if needed; serve.

4 pounds bone-in beef short ribs
1-1/2 teaspoons salt, divided
1 teaspoon ground coriander
1/2 teaspoon pepper
2 tablespoons olive oil
1-1/2 pounds small red potatoes, cut in half
1 medium onion, chopped
1 cup reduced-sodium beef broth
1 whole garlic bulb, cloves separated, peeled and slightly crushed
4 cups strong brewed coffee
2 teaspoons red wine vinegar
3 tablespoons butter

Steps:

  • Sprinkle ribs with 1 teaspoon salt, coriander and pepper. In a large skillet, brown ribs in oil in batches. Using tongs, transfer ribs to a 6-qt. slow cooker. Add potatoes and onion., Add broth to the skillet, stirring to loosen browned bits. Bring to a boil; cook until liquid is reduced by half. Stir in garlic and remaining salt; add to slow cooker. Pour coffee over top. Cover and cook on low for 6-8 hours or until meat is tender., Remove ribs and potatoes to a serving platter; keep warm. Strain cooking juices into a small saucepan; skim fat. Bring to a boil; cook until liquid is reduced by half. Stir in vinegar. Remove from the heat; whisk in butter. Serve with ribs and potatoes.

  • Preheat oven to 325°F. Trim fat from meat. Rub meat with salt and black pepper. In a 6-quart Dutch oven brown roast on all sides in hot oil over medium-high heat. Transfer to a plate.
  • Add onion, sweet pepper, and garlic to Dutch oven. Cook and stir for 4 to 5 minutes or until onion and garlic are tender and starting to brown. Return roast to Dutch oven. Add broth, pineapple, espresso powder, the 1/4 teaspoon crushed red pepper, and allspice. Bring to boiling.
  • Bake, covered, for 1 3/4 hours. Add potatoes. Bake, covered, for 45 minutes to 1 hour more or until meat and vegetables are tender.
  • Transfer meat and vegetables to a platter; cover to keep warm. Bring liquid in Dutch oven to boiling. Reduce heat. Simmer, uncovered, for 10 to 15 minutes or until slightly thickened. Serve sauce with meat and potatoes. If desired, sprinkle with additional crushed red pepper.
