This incredibly moist vintage Date Nut Cake recipe is just like grandma used to make, made with unbleached flour, butter, spices, dates and nuts.

1 lb dates ( chopped fine and pits removed)
2 tbsp baking soda
2 cups boiling water
1/2 cup unsalted butter (1 stick, softened)
1 cup brown sugar
1/2 cup white sugar
2 eggs (well-beaten )
1 1/2 cups spelt flour
1 1/2 cups unbleached bread flour (King Arthur's brand)
1 tsp cinnamon
2 tsp vanilla extract
1 cup pecans (chopped (walnuts would be great too))

Steps:

  • Place chopped dates in a large bowl and sprinkle with baking soda.
  • Pour boiling water over the dates and let sit until cool.
  • In the bowl of an electric mixer, cream butter and both sugars and then add the beaten eggs.
  • Mix until creamy.
  • Sift the flours with the teaspoon of cinnamon and then slowly add to the butter mixture until all is incorporated.
  • Add vanilla, dates (with water) and chopped nuts and stir until blended.
  • Pour into two 9 inch greased and floured cake pans and bake at 350 degrees for 35-45 minutes or until a toothpick inserted into the center comes out clean.
  • Cool on wire racks.
  • Sprinkle with powdered sugar before serving.
  • This can also be served topped with fresh whipped cream.

1 cup vegetable oil, plus extra for the pan
3 3/4 cups all-purpose flour, plus extra for the pan
1 1/2 cups granulated sugar
1 cup honey
1/2 cup light brown sugar, lightly packed
3 extra-large eggs, at room temperature
2 teaspoons grated orange zest (2 oranges)
1 teaspoon pure vanilla extract
1 tablespoon baking powder
1 teaspoon baking soda
4 teaspoons ground cinnamon
1 teaspoon kosher salt
1/2 teaspoon ground cloves
1/2 teaspoon ground allspice
1/2 teaspoon ground ginger
1 cup hot coffee
1/2 cup freshly squeezed orange juice (2 oranges)
1/4 cup good bourbon, such as Maker's Mark
1/2 cup blanched sliced almonds

Steps:

  • Preheat the oven to 350˚ F. Brush a 9-inch angel food cake pan with a nonremovable bottom with oil, line the bottom with parchment paper, then oil and flour the pan.
  • In the bowl of an electric mixer fitted with the paddle attachment, mix the oil, granulated sugar, honey, brown sugar, eggs, orange zest and vanilla on medium speed for 1 minute. In another bowl, sift together the flour, baking powder, baking soda, cinnamon, salt, cloves, allspice and ginger and blend. Combine the coffee, orange juice and bourbon in a 2-cup glass measuring cup. With the mixer on low, alternately add the flour and liquid mixtures to the oil-sugar mixture in thirds, beginning and ending with flour, until combined. Scrape down the bowl with a rubber spatula. Don't worry; the batter will be very liquid!
  • Pour the batter into the prepared pan. Rap the pan 5 times on the counter to get rid of any bubbles in the batter. Sprinkle the top with the almonds. Bake in the center of the oven for 45 minutes to 1 hour, until a toothpick inserted into the center comes out clean. Cool completely, then remove from the pan and place almond-side up on a flat serving plate. Serve at room temperature.

1 pound toasted walnuts, broken in large pieces
1 pound toasted pecans, broken in large pieces
3-1/2 cups sifted all-purpose flour
2 teaspoons double acting baking powder
1/2 teaspoon mace
1/4 teaspoon salt
3/4 cup milk
1/2 cup brandy or bourbon, divided use
1 cup butter, room temperature
2 cups granulated sugar
6 large eggs

Steps:

  • 1) Move an oven rack to lower third of oven. Preheat oven to 325 degrees F. Butter a 10 x 4-inch tube pan. Line bottom with parchment paper. Butter paper and dust pan with fine dried bread crumbs. Set aside. 2) Place walnuts and pecans into a very large mixing bowl or roasting pan. 3) Combine flour, baking powder, mace and salt in another bowl. Whisk to combine. 4) Combine milk and 1/4 cup brandy or bourbon in another bowl. Set aside. 5) Cream butter in large bowl of an electric mixer. Add sugar and beat at moderate speed for two or three minutes. Add eggs, one at a time, beating each until incorporated. Increase speed and beat until light and fluffy. 6) On low speed alternately add flour mixture in three additions and milk mixture in two, beating only until smooth after each addition. Pour batter over nuts and mix with your hands or a wooden spoon until nuts are coated with batter. Turn batter into prepared pan, smoothing top to even. 7) Bake for 1-3/4 hours or until cake tester inserted in center of cake comes out clean. Transfer cake to a cooling rack. While cake is still hot brush top with reserved 1/4 cup brandy or bourbon. Let cake cool in pan for 20 minutes. Cover cake with a cooling rack and invert to remove paper. Invert again and cool in upright position. Let cake age for 24 hours before serving. Yield: 16 servings.

1 cup salted butter or 1 cup unsalted butter
2 cups granulated sugar
6 medium eggs
4 cups sifted all-purpose flour
1 cup Bourbon
1 teaspoon baking powder
1 teaspoon ground nutmeg
1/4 teaspoon almond extract
1 teaspoon vanilla extract
1 lb finely chopped pecans
7 1/4 ounces pitted dates, chopped
3 tablespoons coconut

Steps:

  • Preheat oven to 250 degrees.
  • Butter and flour an angel food pan or bundt pan.
  • Cream butter and sugar.
  • Drop in eggs, one at a time, and stir after each addition.
  • Sift flour, baking powder and nutmeg together, reserving 1/4 cup flour to dredge the nuts.
  • Add the flour mixture, bourbon, almond and vanilla alternately.
  • Flour the nuts, dates and coconut; fold into cake batter.
  • Pour this mixture into the cake pan.
  • Cover the cake with foil for the first few hours of the baking period, removing the foil at your discretion depending on how brown you want it to become.
  • Place a pan of water in the oven to prevent cracking.
  • Bake the cake for six hours-- Yes! That really is 250 degrees for 6 hours!
  • Note: You might want to add more bourbon if 1 cup is not enough as some people really like it soaked.

This was my favorite birthday cake growing up as a young boy. Everytime my Grandma Laura would come to visit us in Taos, NM, she'd pick one up from Dory's Bakery and bring it over. I was able to get ahold of Dory long after she'd sold the place and surprisingly she still remembered me and my mother, Joan, who was her friend. She gladly gave me the recipe although the measurements were obviously for multiple cakes, I quartered it and came up with the right increments for just one really large one or a couple regular ones. This cake doesn't include frosting but was sprinkled with powdered sugar and served. Believe me when I tell you the frosting is not missed! This coming from a former little boy with a hell of a sweet tooth!

  • Add water and dates.
  • Combine walnuts and chocolate chips and reserve 1/2 for cake topping.
  • Add the other half to the batter and mix inches.
  • Spread batter into pans and add the reserved nuts and chocolate chips as a topping for the cakes.
  • Bake for 40 minutes.
  • Sprinkle with powdered sugar after cakes are cool and before serving.

GRANDMA'S HICKORY NUT CAKE

This recipe's more than a recipe to us-it's a family tradition, three generations old. The frosting's a must-otherwise it's not the "true" cake! We have a timber stand with hickory trees on our farm, so getting enough nuts is easy. The problem is finding someone to crack and pick them and the "someone" usually ends up to me! I bake a lot of pies, cakes, rolls and bread. Three of our four children are now married, but with eight grandchildren, I still have plenty of takers for treats.

2 cups sugar
2/3 cup butter
3 large eggs
1/8 teaspoon salt
2 teaspoons baking powder
2-1/2 cups all-purpose flour
1 cup whole milk

1 cup hickory nuts, chopped (reserve a few halves for garnish)
PENUCHE FROSTING:
1/2 cup butter
1 cup packed brown sugar
1/4 cup milk or half-and-half cream

1 teaspoon vanilla extract

Steps:

  • Cream together sugar and butter for cake. Add eggs; beat on medium speed of mixer for 2 minutes. Mix dry ingredients together lightly with fork. Add dry ingredients alternately with milk. Mix well. Stir in vanilla and nuts. Pour into greased 13x9-in. baking pan. , Bake at 325° for 45-50 minutes. (Cake may be baked in 8-in. layer pans.) Cool. Make frosting by melting butter in a medium saucepan. Add brown sugar; boil 2 minutes. Add milk; bring to boil. Remove from heat; cool to lukewarm. Beat in sugar and vanilla. (May add chopped hickory nuts, 1/2 cup if desired.) Frost cake.

cooking spray
1 (32 ounce) package mixed candied fruit
8 ounces candied cherries
