Time 35m

Number Of Ingredients 12

1 onion (finely chopped)
250 g streaky bacon (finely chopped)
2 garlic cloves (crushed)
1 teaspoon smoked paprika
2 x 400g cans Cannelini beans (drained)
1 cup tomato passata/puree
1/2 cup tomato ketchup
3/4 cup beef stock
2 tablespoons Worcestershire sauce
2 tablespoons Balsamic vinegar
1/2 cup soft brown sugar
salt & pepper to taste

Steps:

  • In a large pan/skillet, fry the onion and bacon until golden brown and fragrant.
  • Add the garlic and smoked paprika and fry for another 30 seconds then add the drained beans.
  • Pour in the remaining ingredients.
  • Lower the heat and allow to simmer gently for 30 minutes, topping up with beef stock/water as needed to ensure the beans don't dry out and burn.
  • When the sauce is thick and deep red, season to taste then serve.

Time 1h45m

Yield 6 servings

Number Of Ingredients 8

1 1/4 cups pinto beans (about 1/2 pound)
9 cups water, approximately
Salt to taste if desired
1/2 cup finely chopped onion
1 tablespoon safflower, corn or peanut oil
2 teaspoons finely chopped, fresh jalapeno peppers, seeded
1/2 cup finely diced, cored, unpeeled tomatoes
6 tablespoons chopped fresh coriander

Steps:

  • Pick over the beans, and wash them well. Put them in a kettle, and add the water. Bring to a boil, partly cover and let simmer 1 hour.
  • Add salt and half the onion. Continue cooking, uncovered, about 30 minutes longer.
  • Heat the oil in a small skillet, and add the remaining onion and the jalapeno peppers. Cook briefly until the onion is wilted. Add the tomatoes and coriander, and cook, stirring, about 3 minutes. Scoop out a cup of the beans plus a little of their liquid, and add it to the container of a food processor or electric blender. Blend as finely and thoroughly as possible. Return this to the beans.
  • Add the tomato mixture to the beans and continue simmering about 5 minutes.

HOMESTEAD COWBOY BEANS

Homestead Cowboy Beans image

I have an enormous family and all of the men go trail riding several times a year and these beans are one of the things they look forward to. My aunts and I put together their favorite combination several years ago, and have it ready at their camp, and they are some happy cowboys! You can mix different beans to your liking (lima, kidney, etc.), but the boys in our family like this mixture the best.

Number Of Ingredients 9

1 pound bacon
2 pounds ground beef
1 large onion, chopped
1 cup ketchup
⅓ cup brown sugar

2 (15 ounce) cans Great Northern beans
1 (15 ounce) can pinto beans
1 (15 ounce) can pork and beans

  • Cook on Low, stirring often, about 4 hours.
