This recipe is deceptively delicious! The first time I saw it I thought this was far too healthy to taste good! Boy was I wrong! This is a very filling alternative to pasta or potato salads. The wheat berries can be hard to find. I have to go to a small health food store to find them. Cooking time is primarily the time it takes to cook the wheat berries, also walnut oil is VERY expensive, I just use olive oil

Number Of Ingredients 11

3 cups wheat berries, hard winter
2 cups frozen lima beans
1/4 cup walnut oil
3/4 cup canola oil
1/8-1/4 cup sherry vinegar
1 cup dried cranberries (or currants)
1 cup walnuts, chopped
2 cups celery, diced
1 cup scallion, chopped
salt, to taste
pepper, to taste

Steps:

  • In a large saucepan cover berries with water. Cook al dente. Drain.
  • Cook limas al dente. Drain.
  • Combine walnut oil, canola oil and vinegar. Add to warm berries and limas. Toss.
  • Soften dried fruit by soaking in water, if needed. When bean mixture has cooled, add dried fruit, walnuts, celery and scallions. Toss. Season to taste with salt and pepper.

Number Of Ingredients 9

1 1/2 cups hard wheat berries
3/4 cup chopped walnuts
2 stalks celery, finely chopped
1/2 cup tart dried cherries, chopped
1 scallion, white and green parts, chopped
1/2 cup finely chopped parsley leaves
3 tablespoons olive oil
2 tablespoons lemon juice
Salt and freshly ground black pepper

Steps:

  • In a large pot combine the wheat berries and enough water to come 2 inches over the wheat berries. Bring to a boil and cook uncovered for 1 hour, or until tender. Drain and let cool. Toast the walnuts in a medium dry skillet over medium-high heat until fragrant, 2 to 3 minutes.
  • In a large bowl, combine the wheat berries, walnuts, celery, dried cherries, scallions, parsley, olive oil and lemon juice. Season, to taste, with salt and pepper.

1 cup hard winter wheatberries
Kosher salt
1 cup finely diced red onion (1 onion)
6 tablespoons good olive oil, divided
2 tablespoons balsamic vinegar
3 scallions, minced, white and green parts
1/2 red bell pepper, small diced
1 carrot, small diced
1/2 teaspoon freshly ground black pepper

Steps:

  • Place the wheatberries and 3 cups of boiling salted water in a saucepan and cook, uncovered, over low heat for approximately 45 minutes, or until they are soft. Drain.
  • Saute the red onion in 2 tablespoons of olive oil over medium-low heat until translucent, approximately 5 minutes. Turn off the heat and add the remaining 4 tablespoons (1/4 cup) of olive oil and the balsamic vinegar.
  • In a large bowl, combine the warm wheatberries, sauteed onions, scallions, red bell pepper, carrot, 1/2 teaspoon salt, and the pepper. Allow the salad to sit for at least 30 minutes for the wheatberries to absorb the sauce. Season, to taste, and serve at room temperature.

DREAM BERRY SALAD

I had a salad similar to this at a recent potluck. I asked what was in it and got a couple of ingredients, but no specific amounts. So I quickly started trying to duplicate it. Well, just between you and me, I think mine turned out better!!! You can use the sugar-free/fat-free stuff or use regular. You probably will not be able to tell the difference.

2 (1 ounce) packages fat free sugar-free instant cheesecake pudding mix
1 (32 ounce) container plain yogurt
1 (8 ounce) container Cool Whip
1 (16 ounce) bag frozen mixed berries

Steps:

  • Combine all ingredients except berries and mix until mostly smooth. It might be a little gritty but will become super smooth after sitting in fridge.
  • Fold in Berries. (do not thaw berries)
  • Refrigerate for at least 1 hour.
  • *****You can use whatever flavor or pudding you want. I just really like the Cheesecake. I used non-fat yogurt and lite cool whip and it was AWESOME!*****.
