From my mother's collection of recipes. When I was little this was our favourite hot-weather food. I stil make it as a special treat.

Number Of Ingredients 12

1 (1/4 ounce) packet gelatin
1/4 cup hot water
1/2 cup boiling water
1 teaspoon salt
1/4 cup fresh lemon juice
2 (8 ounce) cans salmon (7 1/2 ounce size)
1 cup cottage cheese
1/2 cup green relish
1/2 cup mayonnaise
1 cup celery
1/4 cup fresh parsley
2 tablespoons chives

Steps:

  • Sprinkle gelatin on cold water and let soften 5 minutes.
  • Add boiling water, stir until dissolved.
  • Stir in salt, lemon juice and liquid from salmon. Cool.
  • Chop celery, parsley and chives nice and fine.
  • Remove skin and large bones from salmon, and break it up with a fork.
  • Combine cottage cheese with green relish, mayonnaise, celery, parsley and chives.
  • Stir in gelatin mixture.
  • Fold in salmon.
  • Pour into loaf pan, salad bowl, or ring mold. Chill until firm. (1½ to 2 hours).

A palate-pleasing, glistening aspic from the Western chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947. Cooking time is chilling time, which is approximate. For best result, I'd recommend making this the day before.

1 1/2 tablespoons gelatin
1/4 cup cold water
2 cups water, boiling
1/4 cup lemon juice (fresh is best)
1/4 teaspoon salt
1 tablespoon sugar
1 lb salmon, drained and boned
2 eggs, hard-cooked and peeled and cut into quarters
6 stuffed green olives, cut in halves
1/2 cup celery, diced
2 tablespoons green bell peppers, cut into fine shreds
cucumber, for garnish
radish (to garnish)
lemon (to garnish)

Steps:

  • Sprinkle gelatin on cold water and let stand for five minutes.
  • Add boiling water and stir until gelatin dissolves.
  • Add lemon juice, salt and sugar.
  • Rinse a round shallow pan or mold in cold water or spritz lightly with cooking spray.
  • Pour a portion of the gelatin in the bottom and set aside to congeal in the refrigerator.
  • When firm, place salmon in center of the pan; arrange hard-boiled eggs, olives, celery and green pepper artistically around the salmon.
  • Add remaining gelatin and chill until firm.
  • Unmold onto a large platter and garnish with thin slices of cucumber, lemon and radishes.

This recipe is the most delicious salmon recipe, easy to prepare and very refreshing. Everyone that ate this dish loved it. I made this recipe, and it is easily my favorite.

¼ teaspoon olive oil
1 clove garlic, minced
¼ cup soy sauce
½ lemon, juiced
1 teaspoon honey
½ teaspoon olive oil
⅓ teaspoon packed brown sugar
¼ teaspoon sea salt, plus more for garnish
¼ teaspoon ground black pepper, plus more for garnish
¼ teaspoon red pepper flakes
4 (6 ounce) fillets salmon
1 tablespoon olive oil

Steps:

  • Heat 1/4 teaspoon olive oil in a small skillet over medium-high heat. Saute garlic in hot oil until just beginning to brown.
  • Mix sauteed garlic, soy sauce, lemon juice, honey, 1/2 teaspoon olive oil, brown sugar, sea salt, black pepper, and red pepper flakes together in a bowl; pour into a large resealable plastic bag. Add salmon fillets, turning to coat with the marinade, squeeze bag to remove excess air, and seal the bag. Marinate in the refrigerator for 1 hour.
  • Remove salmon from the marinade and shake to remove excess liquid. Reserve 3 tablespoons marinade and discard remainder.
  • Heat 1 tablespoon olive oil in a large skillet over medium heat. Arrange salmon fillets in the hot skillet, pour reserved marinade over the salmon, and place a lid on the skillet; cook until salmon is browned on each side and flakes easily with a fork, occasionally spooning liquid from the pan over the fillets, 2 to 3 minutes per side. Garnish salmon with additional sea salt and black pepper.

1/4 cup seedless strawberry jam
2 tablespoons reduced-sodium soy sauce
1 garlic clove, minced
1/2 teaspoon ground ginger
4 salmon fillets (4 ounces each)
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat broiler. In a small saucepan, combine jam, soy sauce, garlic and ginger; cook and stir until mixture comes to a boil. Reduce heat; simmer, uncovered, 6-8 minutes or until mixture is reduced by half., Sprinkle salmon with salt and pepper. Place in an ungreased 15x10x1-in. baking pan. Broil 4-6 in. from heat 8-10 minutes or until fish just begins to flake easily with a fork, brushing with 2 tablespoons jam mixture during the last 2 minutes of cooking. Just before serving, brush with remaining jam mixture.
