QUICK AND YUMMY BLENDER PANCAKES



Quick and Yummy Blender Pancakes image

This recipe is fast using the blender to mix ingredients. Pancakes come out fluffy and flavorful. Serve with warm syrup and butter. They are also excellent with warmed blueberries on top.

2 cups milk
2 eggs
1 cup all-purpose flour
1 cup whole wheat flour
3 tablespoons baking powder
2 tablespoons vegetable oil
2 tablespoons white sugar
1 tablespoon honey
1 teaspoon vanilla extract
½ teaspoon salt
cooking spray

Steps:

  • Combine milk, eggs, all-purpose flour, whole wheat flour, baking powder, vegetable oil, sugar, honey, vanilla extract, and salt in an electric blender; blend until smooth.
  • Place a skillet or griddle over medium heat until hot, 2 to 3 minutes. Spray with nonstick cooking spray.
  • Heat a lightly oiled griddle over medium-high heat. Drop batter by large spoonfuls onto the griddle and cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining batter.

This is a recipe you can make from your pantry or food storage. These have the advantage over wheat pancakes in that the grains don't need to be soaked overnight.

1/4 cup whole oats
1/4 cup whole barley
1/4 cup cornmeal
1 cup water
1 1/2 teaspoons oil
1 teaspoon baking powder
1/4 teaspoon salt
1 tablespoon powdered milk
1/2 teaspoon baking soda
1/8 cup water
1 tablespoon vinegar

Steps:

  • Blend grains and first portion of water until smooth. Add oil, baking powder, salt, and powdered milk and blend. Gently mix in baking soda, remaining water, and vinegar. Pour portions onto hot griddle and cook until browned on each side.

This is a recipe from my Bosch cookbook: Healthy Recipes from the Heart of Our Homes by Phyllis Stanley. You could use straight milk (or buttermilk) instead of water and powdered milk. These turn out really fluffy. I love the way it foams up in the blender!

1 1/2 cups water
1 cup wheat berries (wheat, spelt, kamut)
1/2 cup dried non-fat powdered milk
1 egg
2 tablespoons oil
1 tablespoon honey
1/4 teaspoon salt
1 tablespoon fresh baking powder

Steps:

  • Put the water, whole grain wheat berries and milk powder in the blender and blend on high 3 minutes.
  • Add egg, oil, honey and salt and blend on high for another minute.
  • Add the baking powder and pulse 3 times, just enough to mix. Mixture should foam up and get very light.
  • Cook immediately on a hot skillet.
  • Serve with maple syrup, cinnamon sugar, powdered sugar, or whatever you desire!

This is a terrific way to use your food storage! It's easy, healthy, and delicious. It's also a good recipe to use for getting your family used to whole grains so they won't get sick if you ever have to use your food storage for a long length of time!

1 cup milk
1 cup wheat
2 eggs
1/2 cup milk
1/2 cup oil
1/2 teaspoon salt
4 teaspoons baking powder

Steps:

  • Put the 1 cup milk and 1 cup wheat kernels (yes, uncooked and unsoaked whole wheat kernels) in the blender and mix on high speed for 4 minutes.
  • Add the remaining ingredients and mix on medium speed until well incorporated.
  • Pour 1/4 cup batter onto heated griddle for each pancake, turn when bubbles cover top of pancake, cook to desired doneness.
  • Top with butter and syrup, fruit and cream, or peanut butter and jelly.
  • You may use reconstituted powdered milk and powdered egg from your food storage in place of the milk and eggs.

1 cup milk
1 cup wheat berries, whole & uncooked
2 eggs
2 teaspoons rumford baking powder
1 teaspoon salt
2 tablespoons oil
2 tablespoons honey
1 teaspoon cinnamon

Steps:

  • Put milk and wheat kernels in blender.
  • Blend on highest speed for 4 or 5 minutes or until batter is smooth.
  • Add eggs, oil, baking powder, salt and honey or sugar to above batter.
  • Blend on low.
  • Pour out batter into pancakes from the actual blender jar (only one thing to wash!) onto a hot greased or Pam prepared griddle or large frying pan.
  • Cook -- flipping pancakes when bubbles pop and create holes.
  • Serve with homemade jam or Honey Syrup.
  • FOOD STORAGE SUBSTITUTIONS - choose one or more of these to try.
  • 1 cup Milk = 3 T. powdered milk and 1°C Water.
  • 2 eggs = 2 T. powdered eggs 1/4°C Water.
