12 medium peaches, peeled and sliced
1/3 cup all-purpose flour
1/4 cup honey
3 tablespoons lemon juice
1/4 teaspoon salt
3 cups fresh blackberries
TOPPING:
2 cups all-purpose flour
1/2 cup sugar
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1/3 cup cold butter, cubed
1-1/4 cups buttermilk
1 tablespoon coarse sugar

Steps:

  • In a large bowl, combine the peaches, flour, honey, lemon juice and salt; let stand for 15 minutes. Fold in blackberries. Transfer to a 13-in. x 9-in. baking dish coated with cooking spray., For topping, in a large bowl, combine the flour, sugar, baking powder, salt and baking soda. Cut in butter until crumbly. Make a well in the center; pour in buttermilk. Stir just until a soft dough forms. Drop by tablespoonfuls over fruit mixture; sprinkle with coarse sugar. , Bake at 400° for 40-45 minutes or until filling is bubbly and a toothpick inserted in topping comes out clean. Serve warm.,

4 cups pitted and sliced peaches about 2 pounds
2 cups blackberries
1/2 cup granulated sugar
2 tablespoons cornstarch
1 1/2 cups all-purpose flour
1/2 cup packed light brown sugar
2 teaspoons baking powder
1/2 teaspoon salt
6 tablespoons cold unsalted butter
3/4 cup heavy cream
Vanilla ice cream optional

Steps:

  • Preheat oven to 350°F. Grease a 9-inch square baking pan or casserole dish; set aside.
  • In a bowl, toss together the peaches, blackberries, granulated sugar, and cornstarch; set aside. In a second bowl, whisk together the flour, brown sugar, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the cream until just combined.
  • Spread the fruit mixture in the bottom of the prepared pan. Drop the biscuit batter by spoonfuls on top of the fruit. Bake for 45 to 55 minutes or until golden brown on top and bubbling. Let cool for 10 minutes before serving. If desired, serve with ice cream.

In this recipe, the tartness of blackberries (or raspberries) balances the sweetness of yellow peaches (or nectarines), and the filling only needs the tiniest amount of sugar to get the juices flowing. Topped with a thin layer of fluffy cornmeal batter, the berries boil up to form juicy pockets, and a finish of raw sugar adds a satisfying crack. Serve this cobbler warm, or enjoy it any time of day, even for breakfast.

3 pounds ripe yellow peaches (or nectarines), pitted and chopped into 1-inch chunks
1 pint/6 ounces blackberries (or raspberries)
1/4 cup/50 grams granulated sugar
1 tablespoon tapioca starch or cornstarch
1 lemon, halved, zest reserved for cobbler topping
1/2 cup/120 milliliters whole milk
1 large egg
3/4 cup/114 grams fine-grind cornmeal
3/4 cup/96 grams all-purpose flour
1/4 cup/50 grams granulated sugar
1 1/2 teaspoons baking powder
1/2 teaspoon fine sea salt
4 tablespoons/57 grams cold unsalted butter (1/2 stick), cut into 1/2-inch cubes
1 tablespoon turbinado, or any raw sugar, for topping

Steps:

  • Heat the oven to 425 degrees. Prepare the filling: In a large bowl, combine the peaches, blackberries, granulated sugar and starch. Squeeze the juice of 1/2 lemon on top and toss to combine. Scrape the mixture into a 10-inch cast-iron skillet.
  • Make the topping: In a small bowl, combine milk, egg and juice from the remaining 1/2 lemon; whisk to combine.
  • In a large bowl, combine cornmeal, flour, granulated sugar, baking powder, salt and reserved lemon zest; stir to combine. Add the cold butter. Using your fingertips, smear and rub the pieces into the cornmeal mixture until it looks like wet sand.
  • Make a well in the center of it and add the milk mixture. Using a spatula, stir until thoroughly combined, then spoon it over the top of your fruit. Level the topping to cover more of the fruit. Sprinkle the surface of the topping with the raw sugar.
  • Bake for 30 to 35 minutes until the fruit is bubbly and the topping is a deep golden brown. Let cool slightly, then serve warm.

2 lbs peaches, peeled, pitted, and sliced
1 (8 ounce) container blackberries (or blueberries or raspberries)
1/3 cup sugar
1/2 cup almond milk
1/4 cup vegetable oil
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
3/4 cup all-purpose flour
3/4 cup whole wheat flour
2/3 cup sugar
2 teaspoons baking powder
1/4 teaspoon cinnamon
1 pinch salt

Steps:

  • Preheat the oven to 400°F. In a glass baking dish, toss together the fruit and sugar. Cover with foil. Bake for 20 minutes.
  • While the peaches are baking, prepare the cobbler topping. In a small bowl, stir together the almond milk, oil, vanilla, and almond extract, and set aside.
  • In a large bowl, place both flours, sugar, baking powder, cinnamon, and salt, and stir well to combine.
  • Add the wet ingredients into the dry ingredients slowly, stirring to combine after each addition.
  • After the fruit has cooked, remove the piece of foil. Scatter spoonfuls of the dough on top of the fruit (smushing and flattening down the dollops a bit) and return the pan to the oven.
  • Bake another 15 minutes or until the topping is golden brown.
  • Allow to cool for 10 minutes before serving.

1 ½ teaspoons baking powder

1 cup fresh blueberries
1 tablespoon butter
1 tablespoon lemon juice
2 tablespoons coarse granulated sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, stir together flour, 1/2 cup white sugar, and baking powder. Mix in milk and 1/4 cup butter until smooth.
  • In a medium saucepan, stir together the brown sugar, cornstarch, and water. Mix in the peaches and blueberries. Cook and stir over medium heat until thick and bubbly. Mix in 1 tablespoon butter and lemon juice. Continue cooking until the butter melts. Pour into a 1 1/2 quart ungreased baking dish. Evenly spoon batter in mounds over the hot fruit. In a small bowl, mix the coarse sugar and nutmeg, and sprinkle over the batter.
  • Place the baking dish on a shallow baking pan in the preheated oven. Bake cobbler for about 35 minutes, or until bubbly and a toothpick inserted into the crust comes out clean.

1 cup fresh blackberries
1/4 cup arrowroot
1/2 cup agave nectar
1 1/2 teaspoons salt
1 cup whole spelt flour
1/3 cup rolled oats
3 tablespoons evaporated cane juice, plus more for sprinkling
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/4 cup coconut oil, plus more for brushing
1 teaspoon pure vanilla extract
1/4 cup hot water

Steps:

  • Preheat the oven to 325°F. Line the bottom of an 8 × 3-inch round cake pan with a circle of parchment paper and coat lightly with oil.
  • In a small bowl, combine the peaches, blackberries, arrowroot, 1/4 cup of the agave nectar, and 1/4 teaspoon of the salt with a rubber spatula; set aside. In a medium bowl, whisk together the flour, oats, 3 tablespoons evaporated cane juice, baking powder, cinnamon, and the remaining 1 1/4 teaspoons salt. Add the oil, the remaining 1/4 cup agave nectar, the vanilla, and the hot water to the dry ingredients. Stir until a moist dough is formed.
  • Using a rubber spatula, spread the peach and blackberry mix evenly in the prepared pan. Drop spoonfuls of the batter over the top of the fruit, but do not spread them. Sprinkle the top with evaporated cane juice.
  • Bake the cobbler on the center rack for 20 minutes. The finished cobbler will have a golden crust, and the juice from the fruit will bubble up through the gaps in the cobbler topping.
  • Let the cobbler stand for 15 minutes before serving it warm and directly from the pan. Store leftovers at room temperature, covered in plastic wrap, for up to 3 days.

Add buttermilk; stir just until moistened. Drop mixture by tablespoonfuls over peach mixture., Bake, uncovered, until topping is golden brown, 40-45 minutes. Serve warm. 8 cups fresh blackberries (filling)
8 cups peeled sliced peaches (filling)
3 cups sugar (filling)
3/4 cup all-purpose flour (filling)
1/2 teaspoon ground cinnamon (filling)
1 pinch salt (filling)
1 cup butter (at room temperature)
3/4 cup sugar
3/4 cup light brown sugar
1/2 cup crystallized ginger, chopped
1 cup toasted pecans, chopped
1 teaspoon baking powder
1/4 teaspoon salt
4 cups all-purpose flour

Steps:

  • Preheat oven to 350 degrees.
  • Place fruit in a large mixing bowl. In a separate bowl, combine next 4 ingredients (sugar, flour, cinnamon and salt.).
  • Sift dry ingredients over fruit and fold them in with a spatula. Then let the fruit mixture sit for 20 minutes.
  • For the crust, place butter, white and brown sugars in a large mixing bowl and cream with an electric mixer at medium high speed until fluffy.
  • Add ginger and pecans, stirring to combine.
  • In a separate bowl, combine baking powder, salt and flour. Add dry ingredients to butter-and-sugar mixture one cup at a time. The result should resemble cookie dough.
  • Pour fruit filling into a deep 4-quart baking dish, and then drop pieces of dough over the top to cover.
  • Place baking dish in a jelly roll pan--to catch any filling that may overflow--and bake for 1 hour. Check the cobbler periodically to make sure the crust doesn't become too brown before the filling is fully cooked. You may need to turn the oven temp down to 325 degrees. Filling should be bubbly around the edges.
  • Serve with fresh whipped cream, vanilla ice cream, or both.
