COWBOY BREAKFAST
I had my first taste of this while working as a volunteer at a local state park during a pioneer reenactment day. A gentleman was cooking it and handing out small samples. It was so good, I had to ask for the recipe. He told me - sausage, frozen hash browns, eggs and cheese, all cooked in one pot. I couldn't have asked for a simpler, more filling and delicious meal. I've wanted to post it for a while, but I wanted to make it for someone special first. It's also a good campfire recipe. Leftovers reheat well. I usually make this for my son and I, but I have made it for 6. We used 9 eggs and could easily have used the 11 available. All amounts are variable according to personal preferance.

Steps:
- Brown meat in large pot over medium heat.
- Add frozen hash browns and stir occasionally, until potatoes are cooked (they will not turn brown).
- Break eggs into bowl and stir with fork to mix well.
- Add eggs to meat and hash brown mixture and stir until eggs are done. (Continuous stirring will also help keep everything from sticking to the bottom of the pot).
- Sprinkle shredded cheese over the mixture if desired and stir in until it melts.
- Serve hot.

- Cook bacon over medium-low heat until crispy. Drain on clean paper towels. Crumble cooked bacon.
- Bring beer to a boil in an 8- to 10-inch skillet (large enough to hold hot dogs in a single layer). Add hot dogs to boiling beer. Immediately reduce heat and simmer hot dogs for about 4 to 5 minutes or until an internal temperature of 160 degrees F is reached.
- Place hot dogs in buns and top with 1 tablespoon each of mustard, onions, peppers and bacon.

PORTSMOUTH OLD CITY JAIL HOT DOGS
I'm posting this primarily for historical reasons but I like a couple of these "plain dogs" now and then. Back when I was a young state park ranger (1973), I used to have to take an occasional arrestee from my park into town, to the Portsmouth, (Ohio), "Old City Jail". Nowadays, there is no such place as all prisoners go to the new County Jail. The Old City Jail was pretty dreadful, occupied mostly by "the regulars," winos and other derelicts. Anyway, if I took a prisoner in around lunch or supper time, I usually got drafted into helping old Sergeant Thompson feed the inmates. There wasn't a lot of staff (usually just him and me), and we'd fire up the old electric range to boil a huge pot of water. I'd holler in at the trustee for an inmate count and we'd double that number to know how many hot dogs we needed, usually about 60 or so. When the hot dogs were done, the men lined up inside the jail and, through a hole in the steel door, we'd hand each man two slices of bread with two hot dogs on top. That's what each man got for lunch and that's what they got for supper too -- 2 hot dogs and a pop can (with the top cut out) full of cold milk. There was no mustard nor were there any other condiments. Sergeant Thompson always said that if you gave them mustard, it was hard on their stomachs since most of these poor men lived exclusively on cheap wine when they were on the outside. Once in awhile I'd have a couple of these dogs along with the trustee and I must say that I enjoyed those little meals and the appurtenant conversation. Trustees know a lot of things. In any case, if you're in a mood to have something fast and simple, there are certainly worse things that you could eat! Oh yeah, breakfast? They got 2 day-old glazed donuts and a hot cup of boiled coffee -- no cream, no sugar. *.*

RANDY'S PRESURE COOKER " BALL PARK DOGS "
These are great hot dogs, they puff up to 3 times the original size at first, let them rest and they drop to double. They are never dried out and retain all the rich flavour of the hot dog, thanks to the pressure cooker. You have to try these, they will take you back to your first ball game hot dog. Put your favotite topping on them and you are set to go. The secret is the pressure cooker not allowing the natural flavor to leave or dry out... we love them.... Hope you enjoy.

- Put Butter or oil in Pressure cooker on medium heat and brown onion.
- Take onion out and put into loosely wrapped tin foil bowl, at this time I like to sprinkle the onion with the garlic powder and seasoning salt and mix (just my preference, but adds flavor.).
- Add tibet and pan to pressure cooker with 1-12 cups of water and turn heat to high.
- With a sharp knife put 1/8" deep max. slices (length wise) in the hot dogs, around the hot dogs, about 1/4" apart on all the hot dogs.
- At this point you can prinkle what ever spices you prefer on the dog, ( I leave plain and rely on the onion and topping for spice).
- Place the hot dogs, and loosley open wrapped seasoned onions on the pan, close cooker and bring to 10lb. pressure. (if using 15 lb. reduce time to 6 minute aproximatly.).
- Cook between 6 to10 minute (depending on how many hot dogs and pressure setting.) This sounds like a long time, but they turn out great.
- Use the cold water cooling to reduce pressure.
- The hot dogs will be 2 to 3 times the original size, this is good.
- Remove hot dogs and onions from cooker, put dogs on a plate and cover with tin foil and allow to rest for 5 to 10 minute Close foil on onions to keep warm.
- Mean while brown or steam buns as you like, add onions from tin foil and what ever condiments you want -- mustard -- ketchup -- etc. to bun. (I microwave buns with 1/2 cheese slice on each side for 20 sec.) and add toppings and onion.
- Add hot dog and enjoy the ball game -- .

MACARONI, CHEESE AND HOT DOGS
I always loved it when my mom would make macaroni, cheese and hot dogs when I was young. As I grew up, I found that I liked it to be cheesier than she made it. I have been making this recipe for years and most everyone who has tried it really likes it. It is easy to make and my kids really enjoy having it for lunch.

Steps:
- Fill a medium sized pot with hot water about half way.
- Put the water on the stove at high heat.
- Add box of Kraft macaroni and cheese dinner.
- Cut up the hod dogs into 1/4 pieces and drop in the water.
- Bring everything to a boil.
- Once the water boils, reduce the heat and continue to cook until the macaroni is tender.
- Drain water.
- Place pot back on the stove on very low heat.
- Add margarine and milk.
- Add slices of cheese.
- Stir until cheese melts.
- After cheese melts, add cheese sauce packet that comes with the Kraft Macaroni and Cheese dinner.
- Stir until everything is well mixed.
- Serve and enjoy.
MOROCCAN FISH AND POTATOES
This recipe comes from a little old lady who lives in the old city name Irma Charles, fondly called Bubby Irma by the residents. She is a fantastic cook! I use flounder for this recipe (with a shorter cooking time), but it works with all fish.

- In a heavy skillet or dutch oven-type pot, layer the sliced potatoes and sprinkle with 1 T paprika and oil.
- Place sliced peppers on top, then slices of fish.
- Sprinkle salt on next, then 1 tsp paprika. Spread coriander over everything.

- In saucepan, bring 1 - 1 1/2 cups water to boil.
- Add noodles and contents of package.
- Boil 3-4 minutes.
- Meanwhile, add 4 inches of water to a learge saucepan, bring to boli.
- Cut each hotdog into 8 strips to within 2 inches of one end.
- Drop into boiling water.
- Cook till heated through.
- Add food coloring to noodless and drain if neccessary. Place noodles on serving plate.
- Top with hotdog, standing up.
- Add eyes and mouth with ketchup and mustard.
CHIHUAHUA DOGS
My mother made these for us when we were kids. I'm not sure where the name came from, unless it is from the Mexican state. Definitely not health food, but kids love it and it makes a quick, yummy lunch now and then. I always cut the tortilla trimmings into wedges, fry in the leftover hot oil, and sprinkle with cinnamon-sugar to make quick sopapillas for dessert. Prep time does not include separate time for heating oil, as I heat the oil while I prepare the dogs.

- Heat about 1 inch of oil in a skillet.
- Trim the tortillas to fit the hot dogs' length.
- Slit the hot dogs lengthwise, taking care not to cut clear through or to cut through the ends.
- Tuck strips of cheese into the slit along the length of the hot dog.
- Wrap stuffed hot dogs in tortillas and secure with toothpicks.
- Fry hot dogs in oil until browned on all sides, turning to brown evenly.
- Remove toothpicks before serving.
- These will be quite hot inside, so take care when eating!
