"I created this when I was on a low carb diet," writes Kim Thomas of Monahans, Texas. "It tastes delicious and is perfect as a light dish." We think you'll agree! If you're sensitive to spicy foods, use a bit less jalapeno.

5 small fresh mushrooms, sliced
1 jalapeno pepper, seeded and finely chopped
2 tablespoons chopped onion
3 teaspoons butter, divided
2 cod fillets (4 ounces each)
1/2 teaspoon lemon-pepper seasoning
1/2 teaspoon steak seasoning
1 tablespoon dry bread crumbs
1/4 cup shredded reduced-fat cheddar cheese

Steps:

  • In a large skillet, saute the mushrooms, jalapeno and onion in 2 teaspoons butter until tender. Place fillets in an ungreased 8-in. square baking dish. Sprinkle with lemon-pepper, steak seasoning and bread crumbs. Top with mushroom mixture. Divide remaining butter and place on each fillet., Cover and bake at 400° for 10 minutes. Uncover; sprinkle with cheese. Bake 5-8 minutes longer or until fish flakes easily with a fork.

36 ounces sake
1 (7-ounce) black cod fillet
6 slices peeled ginger root, plus shredded ginger, for garnish
3 thick pieces burdock root
3 thick pieces Japanese mountain potato
3 ounces regular soy sauce
Pinch Japanese premium white sugar
1 ounce mirin
1 ounce tamari soy sauce
White scallion, for garnish
Kinome (available at Japanese markets), watercress or mint leaves could be substituted

Steps:

  • In a medium pot, bring sake to a boil and cook for 5 minutes.
  • Add black cod, ginger slices, burdock root and mountain potato. Then add regular soy and sugar and cook with a lid right over the fillet, not over the pot. This lid must be slightly smaller than the rim of the pot so that steam can evaporate through the gap.
  • When the vegetables and black cod are cooked through, remove them from the pot and boil the sauce until thickened slightly and reduced.
  • Add mirin for glazing. Then add tamari soy.
  • Place the fillet on a plate, garnish it with cooked vegetables. Pour the sauce over them.
  • Garnish with white scallion, shredded ginger and kinome on top.

In this recipe, tender, flaky cod is poached in a light, flavorful broth that optimizes bottled clam juice, a versatile yet underused ingredient. The juice is perfect for weeknight cooking, when shortcuts to big flavor are key, and it adds a subtle, briny backbone to any broth. This broth is also infused with rich shiitake mushrooms, aromatic garlic and a generous boost of bright ginger. Pearl couscous gets toasted before boiling, adding nutty notes to the soup. It also contributes delightful chewiness, but other small pastas like ditalini or orzo are also good substitutes, though cook time may need to be adjusted accordingly.

3 tablespoons extra-virgin olive oil
1/2 small yellow onion, thinly sliced (about 1/2 cup)
3 garlic cloves, thinly sliced
2 tablespoons minced fresh ginger
6 ounces fresh shiitake mushrooms, stemmed and sliced 1/4-inch thick (about 2 cups)
Kosher salt and black pepper
1 cup pearl couscous
1 (8-ounce) bottle clam juice
1 1/2 pounds skinless cod fillet, cut into 1 1/2-inch pieces
1 cup thawed frozen peas
1/4 cup chopped scallions

Steps:

  • In a large pot or Dutch oven, heat 2 tablespoons oil over medium. Add onion and cook, stirring occasionally, until softened, about 3 minutes. Add garlic and ginger, and cook, stirring, until fragrant, 1 minute.
  • Add mushrooms and the remaining 1 tablespoon oil, and season with salt and pepper. Cook, stirring occasionally, until lightly golden, about 3 minutes. Add couscous and stir until lightly toasted, about 2 minutes.
  • Add clam juice and 5 cups water, and bring to a boil over high heat. Reduce heat to medium and simmer until couscous is al dente, about 10 minutes.
  • Add cod and peas and bring back to a simmer. Cook, stirring occasionally, until fish is flaky and and cooked through and couscous is tender, about 5 minutes longer. Stir in scallions and season with salt and pepper.
  • Divide cod, vegetables and couscous across bowls, and top off with remaining broth. Serve warm.

3 tablespoons unsalted butter
4 tablespoons extra-virgin olive oil, divided
1 pound fresh chanterelles, cleaned, cut into 1/3-inch-thick slices
4 large garlic cloves, finely chopped
1/4 cup chopped fresh Italian parsley
1/3 cup dry white wine
1 teaspoon grated lemon peel
1 teaspoon fresh lemon juice
2 large black cod fillets with skin (about 2 pounds)
2 tablespoons dry unseasoned breadcrumbs
2 tablespoons freshly grated Parmesan cheese

Steps:

  • Preheat oven to 400°F. Melt butter with 2 tablespoons oil in large skillet over medium-high heat. Add mushrooms and sauté until beginning to color. Stir in garlic and parsley. Add wine; simmer until almost evaporated, scraping up browned bits in skillet, about 1 minute. Remove from heat. Stir in lemon peel and lemon juice. Season with salt and pepper.
  • Brush 13x9x2-inch glass baking dish with 1 tablespoon oil. Place cod, skin side down, in baking dish. Sprinkle with salt and pepper. Cover with mushroom mixture. Sprinkle with breadcrumbs and Parmesan; drizzle with remaining 1 tablespoon oil. Bake until fish is opaque in center, about 20 minutes.

  • Add 1 cup water, soy sauce, mirin, shallot, 1 clove of garlic (sliced), and sansho pepper to a small sauce pan. Bring broth to a boil then reduce heat to Med-Low, cover, and simmer for 5 mins. Turn off heat.
  • Heat a skillet on Med-High. When hot, add in sesame oil, 1 tbsp of olive oil, and 2 cloves of garlic. Fry garlic until golden (~2 mins). Stir in all mushrooms and cook for 3 mins.
  • Using a strainer, pour broth into the mushroom mixture in the skillet. Cover and reduce heat to Low.
  • Heat 1 tbsp of olive oil in a separate skillet or sauté pan on Med-High. Pat fish dry and season with salt and black pepper to taste (optional). When oil is hot, add fish skin-side down. Cook for ~5 mins until skin is crispy. Carefully flip the fish and cook for 5 more mins. Remove from heat and serve fish over mushroom broth in small bowls. Garnish with scallion, bonito, and a pinch or 2 of sansho pepper (optional - go lightly with sansho).
