CARAMELIZED ONION SAUCE

Yield about 2 cups

Number Of Ingredients 5

2 tablespoons olive oil
4 cups thinly sliced onions
Salt
Freshly ground black pepper
2 cups chicken stock

Steps:

  • In a saucepan, over medium heat, add the oil. When the oil is hot, add onions. Season with salt and pepper. Saute for about 10 to 12 minutes, or until caramelized. Add the stock and bring to a boil. Reduce the heat to medium low and simmer for 10 minutes. Remove from the heat and using a hand-held blender, puree until smooth. Strain through a sieve and cool completely. Taste, and reseason if necessary.

10 oz. extra wide egg noodle, cooked al dente in salt water and drained
4 # sweet onions
4 T. canola oil
12 eggs
1 c. butter
kosher salt and fresh ground pepper, to taste

Steps:

  • Preheat oven to 350. Spray a 9 X 13 baking dish with non stick spray and set aside. Chop up the onions. Heat up the canola oil in a large saute pan. Cook the onions in the saute pan, over medium heat, stirring occasionally, until onions are golden brown. This could take up to 40 minutes. In a large bowl combine all of the ingredients (the butter will melt easily if it is stirred into the noodles while they are still hot). Mix well. Pour into the prepared pan. Bake for 45 - 60 minutes, until the top is golden brown.

3 tablespoons olive oil
4 pounds (about 5 large) Spanish onions, peeled, quartered and thinly sliced
4 cloves garlic, peeled and finely chopped
1 cup white wine
1 1/2 teaspoons thyme leaves
1/3 cup toasted, chopped walnuts
Salt and freshly ground black pepper to taste

Steps:

  • Place a large heavy kettle over medium heat and heat the oil. Add the onions and garlic and cook, stirring frequently, until the onions are greatly reduced in volume and golden in color, about 50 minutes to 1 hour. (Lower the heat toward the end of cooking if the onions stick to the bottom of the pot.)
  • Add the wine, thyme and walnuts to the pan and continue to cook until all the liquid has evaporated. Season to taste with salt and pepper. Serve with grilled meat, fish or pasta.
