MAMMA'S MAC AND CHEESE



Mamma's Mac and Cheese image

Number Of Ingredients 6

1 pound elbow macaroni
2 tablespoons butter
2 tablespoons flour
2 cups milk
Salt and pepper, to taste
2 cups plus 1/2 cup shredded sharp Cheddar

Steps:

  • Cook the macaroni in boiling water for about 10 minutes until tender but still firm. Drain well and set aside.
  • In a deep skillet, melt the butter over medium heat. Add the flour to make a roux and cook, stirring, to remove any lumps. Pour in the milk and cook until the mixture is thick and smooth. Season with salt and pepper. Stir in 2 cups Cheddar and continue to cook until melted. Add the cooked macaroni and stir. Transfer the mixture to a 2-quart casserole dish. Bake in a preheated 350-degree F oven for 20 minutes. Remove the casserole from oven, top with remaining 1/2-cup cheese. Bake for an additional 5 minutes until hot and bubbly.

1 tablespoon garlic powder

6 slices American cheese (, chopped)
1 cup shredded cheddar cheese (, divided)
32 ounce frozen tater tots
1 cup iceberg lettuce (, shredded)
1/2 cup tomatoes (, diced)
2-3 slices American cheese (, diced into small pieces)

Steps:

  • Preheat oven to 350 degrees.
  • In a large skillet, cook beef and onion over medium heat until browned and onions are translucent.
  • Add the Big Mac Sauce, American cheese, 1/2 cup shredded cheese, garlic powder, salt, and black pepper to the skillet and mix well.
  • In a 9x13 pan layer the beef, then the remaining cheese and finally line up the tater tots before baking for 45 minutes uncovered.
  • Top with diced tomatoes, shredded lettuce, and American cheese to serve.

My momma makes the best (and easiest!) deep-dish macaroni and cheese. It's like a baked mac 'n' cheese pie with a combination of smoked Gouda, pepper Jack, mozzarella, cottage cheese, and more. It's one of our family's favorite dishes and a holiday must-have.

3 tablespoons unsalted butter, plus more for greasing
1 teaspoon kosher salt, plus more for boiling
16 oz large elbow macaroni
1 cup sour cream
1 cup cottage cheese
2 cups shredded sharp cheddar cheese, divided
1 cup shredded smoked gouda cheese, divided
1 cup shredded pepper jack cheese, divided
1 cup shredded whole-milk mozzarella cheese, divided
1 can cheese sauce, or cream of mushroom soup
½ cup evaporated milk
½ teaspoon black pepper
¼ teaspoon garlic powder
¼ teaspoon onion powder
¼ teaspoon cayenne
2 large eggs, beaten

Steps:

  • Preheat the oven to 325°F (160°C). Grease a 7 x 11-inch (17 x 27 cm) baking dish with butter.
  • Bring a large pot of salted water to a boil. Cook the macaroni according to the package instructions until al dente, then drain and return to the warm pot.
  • Add butter to the macaroni and stir until melted and the noodles are well coated.
  • In a large bowl, stir together the sour cream, cottage cheese, 1 cup cheddar, ½ cup Gouda, ½ cup pepper Jack, ½ cup mozzarella, the cheese sauce, evaporated milk, salt, black pepper, garlic powder, onion powder, and cayenne until well combined.
  • Add the sauce to the pot with noodles and mix until fully coated. Season with more salt and black pepper to taste. Stir the eggs until well incorporated.
  • Pour the macaroni into the prepared baking dish and smooth in an even layer.
  • In a medium bowl, toss together the remaining 1 cup cheddar, ½ cup Gouda, ½ cup pepper Jack, and ½ cup mozzarella cheese. Sprinkle the cheese mixture evenly over the noodles.
  • Cover the baking dish with foil. Bake for 30 minutes.
  • Increase the oven temperature to 425°F (220°C). Remove the foil and bake for another 10 minutes, until the cheese is golden brown. Let cool slightly before serving.

2 shallots, peeled
3 cloves garlic
1 teaspoon olive oil
3 pieces bacon, diced, cooked, reserving 1 tablespoon bacon fat
2 tablespoons flour
4 cups heavy cream
1 teaspoon chopped fresh thyme
1 cup shredded Pepper Jack cheese
2 cups shredded Cheddar cheese
Salt and freshly ground black pepper
1 pound penne pasta, cooked
1/2 cup Panko bread crumbs
2 tablespoons melted butter
2 tablespoons chopped fresh parsley

Steps:

  • Preheat oven to 350 degrees F. Place shallots and garlic in a small aluminum foil pouch and drizzle with olive oil. Roast 20 to 30 minutes or until tender. Remove from foil and chop. In a large saute pan, reheat reserved bacon fat over medium heat. Add roasted shallot and garlic and saute for 1 minute. Add flour and stir for 1 minute. Whisk in heavy cream and thyme. Reduce by a third. Stir in cheeses until melted, creamy and thickened. Season to taste with salt and pepper. Remove from heat and gently stir in pasta. Place in a 9X13 casserole dish. In a small bowl, mix together diced bacon, bread crumbs, butter and parsley. Top Mac n Cheese with Panko mixture and bake uncovered at same heat until bubbling and lightly browned on top, 20 to 25 minutes.

16 oz elbow macaroni (about 2 cups)
3 Tbsp butter or margarine
1 1/2 c milk, divided ( i used 2% )
2 large eggs, lightly beaten
1 lb velveeta cheese cubed (1/2 inch size)
8 oz shredded kraft mild cheddar cheese (about 2 cups), divided
8 oz shredded kraft monterrey jack cheese
1 tsp salt
1 tsp freshly ground black pepper

Steps:

  • 1. Heat oven to 375 degrees F. Cook macaroni in a large pot of salted boiling water until tender but not mushy,about 8-10 minutes. Drain well and pour into a large mixing bowl.
  • 2. Melt on low the Velvetta Cheese and ¾ cup milk until melted (stir often). Pour Melted Cheese Sauce over Pasta and Stir. Add in butter,¾ cups milk,eggs,1 cup shredded cheeses,salt and pepper.
  • 3. Mix well and transfer to a 2 quart baking dish. Pour the remaining cheese on top. Bake until top crust is golden brown and casserole is bubbling ( about 25 minutes ). Serve hot

½ cup panko bread crumbs

Steps:

  • Preheat oven to 350 degrees F.
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Drain.
  • Melt the butter in the bottom of an oven-proof fry pan. Add the flour and stir over heat until just beginning to brown - don't let it get too brown. Take it off the heat and stir in about 1 cup of milk until the butter and flour mixture is fully incorporated. Put it back on the heat and simmer until just beginning to thicken, about 5 minutes. Add the rest of the milk; stir to fully incorporate.
  • Add all of the cheeses and stir to melt. Once melted, add the cooked macaroni. Stir to mix.
  • Cover the top of the mac and cheese with panko crumbs and place the pan in the oven. Bake for about 20 minutes, or until it is bubbling and the bread crumbs are slightly browned.

1-1/2 cups uncooked elbow macaroni
5 tablespoons butter, divided

1-1/2 lbs of New York X-Sharp Cheddar Cheese (coursely grated)
5 cans of evaporated milk
1 cup of buttermilk
1 -1lb box of elbow (muellers preferred)
2tsp of paprika
1tsp of dry mustard
4- Tbs of white pepper
3-Tbs of black pepper
2 1/2 Tbs of salt.
1-stick of butter salted
2tbs of corn starch
2- tsp of sugar
1/4 cup Italian flavored bread crumbs.

Steps:

  • Mix all the dry ingredienets in medium sized bowl(except bread crumbs!!!) and set aside. In a 4 qt, pot- boil 2 quarts of water. When water comes to a boil, ad 1-tsp of salt and add the dry elbow macaroni. Stir and boil for 8 minutes. Then drain- FULLY. (preheat pot) *under medium heat* In the same pot add the milk, half stick of butter and the dry ingredients. Stir until mixture is well blended. Add half of the grated cheese, mix until you have a sauce, then add in the drained elbow macaroni. Let simmer for 10 minutes. Take off heat, let stand for 30 minutes. (preheat)In a large baking dish, the remainding butter. Let butter melt down, and coat the baking dish. Add the Mac/cheese mixture(at this time fold in the remaining cheddar cheese). Then sprinkle thinly the bread crumbs. AT the corners of the baking dish, take the excess butter with a spoon, and drizzle over the bread crumbs.Spinkle with paprika. Bake in 400 degree oven for 45 minutes Let stand for 30 minutes and serve.
