EXOTIC YA' MAKE A JAMAICA JERK SHRIMP WITH MANGO PAPAYA SALSA
A simple and delicious jerk recipe created by the Exotic Epicureans for a ZWT3 challenge. This easy, versatile dish can also be made with pork or chicken. And it makes a wonderful vegetarian version. The spicy jerk seasoning is complimented by the sweetness of the mango papaya salsa. Times indicated are for shrimp, allow more time if using chicken or pork.

Steps:
- Combine marinade ingredients and mix well.
- Place shrimp (Or other choice of meat or veggies & fruit) in non-metal container.
- (I used a gallon size zip-loc bag.).
- Add marinade; coat evenly and refrigerate.
- Let marinade for several hours or overnight. Turning occasionally to keep marinade evenly distributed.
- Oil and pre-heat grill to medium low heat.
- FOR SHRIMP AND/OR VEGGIES: (See below for other options).
- Remove from marinade and thread onto bamboo skewers that have been soaked in water for 20 minutes.
- Place on grill and cook over medium low heat until pink and cooked through, about 8-10 minutes, turning once or twice for even cooking. Cooking times may vary depending on your grill.
- Veggies may take a bit longer depending upon the varieties you use.
- SERVING SUGGESTIONS:.
- Serve with mango-papaya salsa. (See instructions below).
- Garnish with fresh lime and thyme if desired.
- Goes nicely served on a bed of rice.
- SALSA DIRECTIONS:.
- Pinch the leaves off the cilantro stems.
- Place in a small non-metal bowl with the remaining salsa ingredients.
- Mix thoroughly with a spoon.
- COOKING DIRECTIONS IF USING CHICKEN OR PORK:.
- If using chicken:.
- Remove from marinade and place on grill over medium low heat.
- Grill chicken 8 minutes on each side, or until juices run clear.
- If using pork:.
- Remove from marinade and place on grill over indirect heat.
- Cover and cook for 1 hour, turning occasionally.
- Increase heat to medium high and continue cooking, turning as needed to prevent burning, until internal temperature reaches 150 degrees for medium well doneness.
- Let meat rest 20-30 minutes before carving to allow juices to redistribute.
- SERVE WITH SALSA AS INDICATED ABOVE FOR SHRIMP.

JAMAICAN JERK TURKEY BURGERS WITH TROPICAL FRUIT SALSA
This is a Weight Watchers recipe. Its a delicous alternative to hamburgers. The salsa adds a slightly sweet touch to tame the heat of the jerk seasoning. The salsa can be prepared up to one day in advance and refrigerated until ready to use.

- To prepare salsa, in a medium bowl, combine papaya, mango, 1/4 cup of red onion and 14/ cup green pepper, cilantro and lime juice. Set aside.
- To prepare burgers, in a large bowl, combine remaining 1/2 cup red onion, remaining 1/4 cup of green pepper, oats, ketchup, jerk seasoning and egg and mix well. Add turkey; mix thouroughly. Shape turkey into four 1 inch thich patties; cover and refrigerate for a minimum of 20 minutes.
- Preheat broiler. Broil burgers until cooked through, flipping once, about 20-25 minutes total. Serve each bruger topped with about a heaping 1/3 cup of salsa.

- For the salsa:.
- Combine papaya, mango, red pepper, red onion, cilantro, lime rind and juice.
- Let stand at room temperature at least 30 minutes before serving.
- Prepare grill to medium heat.
- For the burgers:.
- Combine 1 cup onion , breadcrumbs, sweet and sour sauce, red pepper,jerk seasoning,and egg white. Stir well.
- Add turkey; mix well to combine.
- Divide turkey mixture into 4 equal portions, shaping each into a 1-inch-thick patty. Cover and refrigerate 20 minutes.
- Lightly coat patties with cooking spray; place on a grill rack coated with cooking spray. Grill 7 minutes on each side or until done.
- Cut rolls in half horizontally.
- Place rolls, cut sides down, on grill rack; grill 1 minute or until lightly toasted.
- Place 1 patty on bottom half of each roll; top with 1/2 cup salsa and top half of roll.
JERKY TURKEY BURGERS WITH PAPAYA SALSA

- Preheat a large nonstick skillet, indoor grill pan or tabletop grill to medium high heat. Combine the turkey, garlic, scallions, ginger, thyme, allspice, nutmeg, salt and pepper in a medium bowl. Form mixture into 4 large patties no more than 1-inch thick. Drizzle the patties with a touch of oil. Place patties in a hot pan or on a hot grill and cook 6 minutes on each side. Squeeze the juice of 1 ripe lime over the patties before removing them from the heat. Place the cooked patties on bun bottoms and top with lettuce leaves.
- Combine the papaya, red bell pepper, red onion, serrano or jalapeno, cilantro and orange juice in a bowl. Season salsa with salt, to your taste. Pile salsa on top of the lettuce resting on cooked patties and add bun tops to the burgers. Serve with Chili Lime Avocados and pineapple wedges.

I got this recipe from an old friend who didn't eat beef. I love these. A nice change of pace from standard burgers.

- In a small bowl, combine the couscous with 1/2 c.
- water; let stand 20 minutes or until the water is completely absorbed.
- Meanwhile, in a nonstick skillet, heat the oil over low heat.
- Add the bell pepper, garlic and spices.
- Saute until the red pepper is slightly softened, about 1-2 minutes.
- Let cool completely.
- Prepare the grill.
- In a medium sized bowl, combine the couscous, the spice/bellpepper mixture and the turkey and mix thoroughly, but lightly- use just enough mixing to combine everything.
- Shape the mixture into 4 patties.
- Grill or broil on a lightly oiled rack until brown and no longer pink inside, about 5 minutes per side for 3/4" thick burgers.
- Place on buns, serve with lettuce and tomatoes.
