1 cup chopped pecans
1 (8 ounce) can crushed pineapple, well drained
1 (9 inch) prepared graham cracker crust

Steps:

  • Mix cream cheese and sugar in a bowl until well combined; fold in whipped topping, pecans, and pineapple.
  • Smooth pineapple mixture into pie crust; chill until mixture has solidified, at least 2 hours.

1 (14 ounce) can Eagle Brand Condensed Milk
1/3 cup lemon juice
1 (8 ounce) carton Cool Whip
1 (15 ounce) can crushed pineapple, drained
1/2 cup pecans, chopped
2 graham cracker pie crusts

Steps:

  • Combine cream cheese, Eagle Brand milk, and lemon juice and beat until smooth.
  • Stir in pineapple and pecans and fold in cool whip.
  • Divide mixture evenly between both pie crusts.
  • Chill in refrigerator for 4 hours before serving.

1 can (8 ounces) crushed pineapple, undrained
1/4 cup lemon juice
1 carton (8 ounces) frozen whipped topping, thawed
1 graham cracker crust (9 inches)
Optional: Chopped toasted macadamia nuts and additional crushed pineapple

Steps:

  • Combine milk, pineapple and lemon juice; fold in whipped topping. Pour into prepared crust. Refrigerate until serving. If desired, serve with toasted macadamia nuts and additional crushed pineapple.

2 cups cold fat-free milk
1 package (1 ounce) sugar-free instant vanilla pudding mix
1 cup reduced-fat whipped topping
1 can (20 ounces) pineapple tidbits
2 packages (3 ounces each) ladyfingers

Steps:

  • In a large bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set. Fold in whipped topping: set aside. , Drain pineapple, reserving 1/4 cup juice. Arrange half of the ladyfingers in an ungreased 11x7-in. dish., Brush with 2 tablespoons reserved pineapple juice. Top with half of the pudding mixture and half of the pineapple. Repeat layers. Cover and refrigerate overnight. Cut into squares.

1/2 cup butter, melted
1 package (1 ounce) sugar-free instant vanilla pudding mix
1 cup fat-free sour cream
1 can (20 ounces) unsweetened crushed pineapple, drained
Sugar substitute equivalent to 2 teaspoons sugar

Steps:

  • Combine crumbs and butter; press into bottom and up the sides of a 9-in. pie plate. Bake at 350° for 8-10 minutes; cool. In a bowl, combine pudding mix and sour cream; mix well. Stir in pineapple and sweetener. Spread into crust. Chill at least 3 hours.

1/4 cup sugar
1/3 cup butter, melted
Filling:
1 package (8 ounce) Philadelphia Cream Cheese, softened
1 can (14 ounce) sweetened condensed milk
1/3 cup unsweetened pineapple juice
1/2 teaspoon almond extract
Toppings:
1 jar (12 ounce) pineapple ice cream topping
Cool Whip

Steps:

  • 1. Preheat oven to 350 degrees F. Combine vanilla wafer crumbs, sugar, and butter. Press mixture firmly into bottom and up side to rim of 9" pie pan. Bake 10-12 minutes. Cool completely.
  • 2. Beat cream cheese until fluffy. Gradually, beat in sweetened condensed milk. Stir in pineapple juice, and almond extract. Pour filling into crust; chill 4 hours or until set.
  • 3. Just before serving, drizzle pie slices with pineapple topping. Top with a dollop of Cool Whip.
