AIR FRYER CALZONES WITH TWO-INGREDIENT DOUGH



Air Fryer Calzones With Two-Ingredient Dough image

Calzones are delicious but can be time consuming! No more! This quick recipe comes together with a two-ingredient dough and then any pizza toppings you want, then cooks up super fast in the air fryer!

1 ½ cups all-purpose flour
1 cup whole-milk plain Greek yogurt
¼ cup pizza sauce, or as needed
1 cup shredded mozzarella cheese
16 slices pepperoni
1 tablespoon grated Parmesan cheese, or to taste
nonstick cooking spray

Steps:

  • Combine flour and yogurt together in a bowl to form a soft dough.
  • Transfer to a lightly floured work surface. Roll out into a large circle, about 1/4 to 1/8 inch thick. Use a cereal bowl (or any other smaller bowl), coat the rim with flour, and press down into the dough to cut out 4 circles.
  • Spread pizza sauce on the bottom half of each circle, leaving about 1/16th inch of rim space. Sprinkle sauce with mozzarella cheese, then top cheese with 4 slices of pepperoni.
  • Fold the top half of the circle over, forming a half circle. Press the edges together to seal. Using the tines of a fork, crimp all the way around the sealed edges of each half circle.
  • Spray each calzone with cooking spray and sprinkle Parmesan cheese on top.
  • Set an air fryer to 350 degrees F (175 degrees C). Spray air fryer basket with cooking spray. Set calzones into the air fryer basket.
  • Air-fry for 5 minutes, flip calzones, and cook until lightly browned, 4 to 5 minutes. Depending on the size of your air fryer you might need to work in batches.
  • Check calzones for color and air-fry them for few more minutes if necessary. Remove and allow to cool a few minutes before serving.

Homemade breadsticks without the hassle of a yeasted dough!

1 ¼ cups self-rising flour, or more as needed
1 cup plain whole-milk Greek yogurt
1 teaspoon everything bagel seasoning
1 large egg
1 teaspoon water
2 tablespoons everything bagel seasoning

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line two baking sheets with parchment paper.
  • Mix together flour, yogurt, and 1 teaspoon everything bagel seasoning until just combined. Pour dough out onto lightly floured surface and knead until smooth, about 5 minutes, adding more flour as needed to keep dough from sticking.
  • Roll dough out into a 9x11-inch rectangle. Cut dough in half horizontally, then cut dough into 1-inch wide strips. Place strips onto the prepared baking sheets about 1 inch apart.
  • Beat egg with water in a small bowl until combined. Lightly brush the tops of each breadstick with the egg wash. Sprinkle breadsticks with additional everything bagel seasoning.
  • Place baking sheets into the preheated oven and bake until breadsticks are puffed and lightly browned, 15 to 20 minutes.

A big hit at summer parties! I like to buy strawberries, raspberries, and blackberries when they go on sale and freeze them to put in this mixed berry cobbler, but it is also delicious with blueberries, cherries, or even rhubarb or peaches.

6 cups mixed frozen berries, thawed, divided
1 cup white sugar
2 tablespoons cornstarch
2 cups all-purpose flour
2 cups rolled oats
1 ½ cups packed brown sugar
1 teaspoon ground cinnamon
½ teaspoon salt
1 ½ cups unsalted butter, cut into small pieces
2 (8 ounce) packages cream cheese, softened
½ cup white sugar

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.
  • Prepare berry filling: Mix 3 cups berries, sugar, and cornstarch in a saucepan over medium-low heat, stirring frequently and crushing berries with the back of a spoon, until mixture is about half liquid, 5 to 7 minutes. Remove from the heat and set aside.
  • Prepare crust: Combine flour, oats, brown sugar, cinnamon, and salt in a bowl. Add butter and cut in with two knives or a pastry blender until mixture is crumbly. Pack 2/3 of the mixture into the bottom of the prepared pan. Set remaining crust mixture aside.
  • Prepare cream cheese filling: Blend cream cheese and sugar with an electric mixer until fluffy. Spread cream cheese mixture over the crust, then sprinkle remaining 3 cups uncooked berries over top. Top with the cooked berry-sugar mixture and crumble the remaining crust mixture over top.
  • Bake in the preheated oven until the top crust is lightly browned, about 45 minutes.

My mother used my aunt's favorite pie crust recipe for this family favorite! Top it off with a scoop of vanilla ice cream, whipped cream or just dump some heavy cream on top! MmmmmmmM!

8 cups blackberries
2 1/2 cups sugar (2 to 3 cups, depending upon berry sweetness)
1/2 cup all-purpose flour
3 cups flour
1 cup crisco vegetable shortening
1 teaspoon salt
1 tablespoon vinegar
1 egg
1/3 cup cold water

Steps:

  • Combine the 3 filling ingredients together and set aside.
  • For the pastry, cut the shortening into flour and salt mixture, until mealy; beat the egg and mix with the vinegar and water; add to the flour mixture and stir with fork.
  • Knead on a lightly floured board 3 or 4 times and roll out 2/3 of the dough into a rectangle to fit bottom and sides of a 7"x12” baking dish; ensure there are no leaks and seal tears with a little water if necessary.
  • Put the berry mixture into the pastry shell.
  • Roll out the rest of the dough to fit the top of the dish and cut vent holes or designs in the dough; place on the top and crimp the edges together.
  • Brush the top with milk and sprinkle with sugar.
  • Bake at 375°F for an hour or until center bubbles.
  • For juicier cobbler, add a 1/2 cup water before the top goes on.
