1 lb lean ground beef
1/2 cup chopped onion
1 package (1 oz, taco seasoning)
1 teaspoon oregano
1 can (15 oz, black beans, drained and rinsed)
1 can (15 oz, tomatoes with chilies (Rotel))
1 can (15 oz, corn, drained)
1 can (15 oz, tomato sauce (or 2 small, 8 oz cans))
6, 8 " flour tortillas
2 cups shredded cheddar cheese
OPTIONAL chopped fresh cilantro

Steps:

  • Preheat oven to 350 and grease a 9x13 baking pan with nonstick cooking spray. Set aside.
  • In a large skillet, heat beef and onion until no longer pink. Add taco seasoning and oregano and mix well.
  • Stir in beans, corn, tomatoes and tomato sauce. Mix well and heat for 5 minutes on medium high or until bubbly. Remove from heat.
  • Spoon about 1 cup of beef and beans mixture into the bottom of the prepared pan. Add 2 tortillas on top, overlapping to fit into the pan.
  • Add 1/3 of the ground beef mixture and top with 1/3 of the shredded cheese.
  • Repeat this twice, ending with cheese on top.
  • Bake for 15 minutes or until cheese is melted.
  • Serve topped with fresh cilantro or chopped green onions.
  • Add sour cream, hot sauce, olives, guacamole or salsa on the side.
  • Serves 8-10

1 bottle (8 ounces) taco sauce
6 corn tortillas (6 inches), halved and cut into 1-inch strips
2 cups sour cream

Steps:

  • Crumble beef into a large microwave-safe dish. Stir in onion. Microwave, uncovered, on high for 6-7 minutes or until meat is no longer pink, stirring and draining every 2 minutes. Stir in taco sauce and tortillas. , In a greased 2-1/2-qt. microwave-safe dish, layer half of the beef mixture, sour cream and cheeses. Repeat layers. 1 package (1 oz) Old El Paso™ 25% less sodium taco seasoning mix
2/3 cup water
1 red bell pepper, cut into 1-inch strips
2 3/4 cups Old El Paso™ Thick 'n Chunky salsa
1 package (12 oz) frozen whole kernel sweet corn
6 Old El Paso™ flour tortillas for soft tacos & fajitas (6 inch)
2 cups shredded Colby-Monterey Jack cheese blend (8 oz)

Steps:

  • Heat oven to 350°F. In 12-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain. Stir in taco seasoning mix, water and bell pepper strips. Simmer 3 to 4 minutes, stirring frequently, until thickened. Stir in salsa and corn.
  • Spray 13x9-inch (3-quart) baking dish with cooking spray. Cut tortillas in half; place 6 tortilla halves in bottom of baking dish.
  • Top with half of beef mixture (about 3 1/2 cups). Sprinkle with 3/4 cup of the cheese and remaining tortilla halves. Top with remaining beef mixture and cheese.

  • To Make Ahead:Wrap foil-covered casserole in double layer of plastic wrap; label and freeze up to 3 months. To thaw and bake:Thaw overnight or until completely thawed in refrigerator. 1 1/2 lbs ground beef
1 onion, chopped
1 green bell pepper, seeded and diced
1 -2 tablespoon fresh minced garlic
1 large jalapeno pepper, seeded and finely chopped (optional)
2 -4 teaspoons cumin (or to taste)
salt and black pepper
2 (10 ounce) cans red enchilada sauce
1 (15 ounce) can black beans (rinsed and well drained)
2 cups frozen corn
9 corn tortillas
2 cups shredded Mexican blend cheese, divided (can use more or less)
2 plum tomatoes, finely chopped
sour cream
green onion
coarsley crushed tortilla chips

Steps:

  • Set oven to 350 degrees.
  • Grease an 11 x 7-inch baking dish.
  • In a large skillet brown the ground beef with onion, garlic, green bell pepper and jalapeno (if using) until the beef is no longer pink; drain any fat then return to skillet and add in one can of enchilada sauce, black beans, corn and cumin.
  • Bring the ground beef mixture to a boil; reduce heat to medium-low and simmer for 20-25 minutes stirring occasionally, then season with salt and lots of black pepper.
  • Arrange 3 corn tortillas in the bottom of the baking dish, cutting as needed to cover bottom of the dish.
  • Spread 1/4 cup canned enchilada sauce over the tortillas in the baking dish.
  • Cover the sauce with 1/3 of the cooked ground beef mixture, then about 1/3 of the shredded cheese.
  • Repeat the layers twice but omitting the final cheese layer on top.
  • Drizzle any remaining canned enchilada sauce (from the second can) on top.
  • Cover with foil and bake in a 350 degree F oven for 25 minutes.
  • Remove foil and sprinkle with more cheese (any amount desired) then return to oven and bake for another 5 minutes or until the cheese has melted.
  • Let stand 10-15 minutes before slicing.
  • Top with sour cream and/or tomatoes, green onions and crushed tortilla chips if desired.
  • Delicious!

1 cup Old El Paso™ Thick 'n Chunky medium salsa
1/2 cup milk
1 package Hamburger Helper™ cheeseburger macaroni
6 Old El Paso™ flour tortillas, 6 inch
1 1/2 cups shredded Cheddar cheese (6 oz)

Steps:

  • Heat oven to 350°F. Cook beef and onion in 10-inch skillet over medium-high heat, stirring occasionally, until brown; drain. Stir in hot water, salsa, milk, uncooked Pasta and Sauce Mix. Heat to boiling, stirring occasionally. Reduce heat; cover and simmer about 7 minutes, stirring occasionally, until pasta is tender.
  • Cut tortillas in half. Spread 2 cups beef mixture in ungreased rectangular baking dish, 11x7x1 1/2 inches, or shallow 2-quart casserole; top with 6 tortilla halves and 3/4 cup cheese. Spread with 2 cups beef mixture; top with remaining tortilla halves. Top with remaining beef mixture and cheese.
  • Bake uncovered 15 to 20 minutes or until hot and cheese is melted.

2 red bell peppers, chopped medium
1 onion, minced
3 garlic cloves, minced
2 teaspoons chili powder

2 lbs ground beef (90% lean)
2 cups low sodium chicken broth
2 chipotle chiles in adobo, minced
2 (15 1/2 ounce) cans pinto beans, rinsed
1 (14 1/2 ounce) can diced tomatoes, drained
6 tablespoons chopped fresh cilantro
2 tablespoons fresh lime juice

18 (6 inch) corn tortillas
8 ounces cheddar cheese, shredded (2 cups)
8 ounces monterey jack cheese, shredded (2 cups)

Steps:

  • Adjust an oven rack to the middle position and preheat oven to 300° (not a typo).
  • Heat the oil in a large Dutch oven over medium heat until shimmering.
  • ADd the bell peppers and onion and cook until softened, about 5 minutes.
  • Stir in the garlic, chili powder, and 1 teaspoon salt and cook until fragrant, about 30 seconds.
  • Add the ground beef and cook, breaking it up with a wooden spoon, until no longer pink, about 5 minutes.
  • Stir in the broth, chipotles, beans, and tomatoes and simmer until slightly thickened, about 10 minutes.
  • Stir in 1/4 cup of the cilantro and the lime juice.

1 cup olive, chopped
1 large onion, chopped
2 large tomatoes, chopped
4 garlic cloves, minced
1/2 bell pepper, chopped
1 (28 ounce) can enchilada sauce
1 lb cheddar cheese, grated
1 tablespoon chili powder
1 teaspoon cumin
16 small corn tortillas (or so)

Steps:

  • Brown beef and drain fat.
  • Add onion, garlic and bell pepper and cook until soft.
  • Add chopped tomatoes, enchilada sauce, chili powder and cumin.
  • Bring to a boil.
  • Reduce heat and simmer uncovered for 20 minutes.
  • Grease a 9 x 13 pan or 3 quart casserole.
  • Fry tortillas.
  • Put 1/3 of the meat mixture into a 9x13 casserole dish followed by a layer of tortillas, cheese and olives.
  • (note: I cut some of the tortillas in half to make them fit better in the pan) Repeat layer and then end with sauce.

1 can (26 ounces) condensed chicken with rice soup, undiluted
1 jar (16 ounces) picante sauce
6 flour tortillas (8 inches)

Sour cream, tomatoes, chopped lettuce, ripe olives, onions and/or additional picante sauce, optional

  • In a Dutch oven, cook the beef over medium heat until no longer pink; drain. Drain broth from soup, reserving rice mixture (discard broth or refrigerate for another use). 1 cup frozen whole kernel corn, thawed
