This is a very spicy, hot, Creole dish that I first had while staying with friends in "Naw'lins". The spiciness/heat can be adjusted to your tastes by using a milder sausage than suggested and cutting down on the amount of hot pepper sauce added. Its wonderful served over rice. This recipe doubles well for larger groups. (1 hr 15 minute cooking time includes browning the sausage and cooking the veggies.) Andouille, Creole Hot, Chaurice (New Orleans style Creole)or Italian Hot sausage work best in this recipe.

2 lbs pork sausage links, cut into thirds
1 cup water, divided
1 cup chopped onion
1/2 cup chopped green pepper
2 cloves garlic, minced
4 (1 lb) cans kidney beans, drained (8 cups)
2 (16 ounce) cans tomato sauce
2 teaspoons sugar
2 bay leaves, crumbled
1/8 teaspoon hot pepper sauce (or to taste)

Steps:

  • In a large skillet, add sausage and 1/2 cup water.
  • Cover and cook on low heat for 5 minutes.
  • Drain sausage.
  • Continue cooking sausage, uncovered, until browned.
  • Add onions, green peppers and garlic.
  • Cook until vegetables are tender but not brown.
  • Stir in beans, tomato sauce, 1/2 cup water, sugar, crumbled bay leaves and hot pepper sauce.
  • Bring sausage/bean mixture to a boil.
  • Pour sausage/bean mixture into a large ovenproof casserole dish.
  • Bake, uncovered, at 350°F for 45 minutes.
  • Can be served over rice.

1 tablespoon olive oil
1 cup chopped onion
1 cup diced celery
2 cloves garlic, minced
1 tablespoon dried oregano
1 tablespoon paprika
2 teaspoons onion powder
2 bay leaves
kosher salt
1 (15 1/2 ounce) can kidney beans, with liquid
1 lb andouille sausage, cut into 1/4 inch slices
1 cup cooked long grain white rice, warm
4 10-inch flour tortillas

Steps:

  • In a large nonstickskillet, add the olive oil and heat over medium heat.
  • Add in the onion, celery,garlic, oregano, paprika, onion powder, and bay leaves.
  • Saute and stir occasionally, for 5 minutes or until the onion is tender.
  • Season with kosher salt (about 1/2 teaspoon is what I use).
  • Tranfer mixture to a large saucepan; add beans with liquid.
  • Heat over medium heat.
  • Clean out skillet; return to the burner and heat over high heat.
  • Add the sausage and cook for 5 minutes, turning to brown all sides.
  • Using a slotted spoon, add the sausage to the bean mixture.
  • Add the rice; stir to mix; Take out the bay leaves.
  • Spoon filling onto tortillas; roll-up/wrap; serve warm.

4 (6 -8 inch) fat free tortillas
2 cups fresh mushrooms, sliced
1 medium onion, cut lengthwise in half, then cut crosswise into thin slices
1 (15 ounce) can black beans, rinsed and drained
4 cups fresh spinach leaves
1/2 cup reduced-fat cheddar cheese, shredded (2 ounces)

Steps:

  • Heat tortillas as directed on package. While tortillas are heating, spray 10-inch nonstick skillet with cooking spray and heat over medium heat.
  • Cook mushrooms and onion in skillet about 5 minutes, stirring frequently, until onion is crisp-tender. Stir in beans and heat through. Stir in spinach. The heat will wilt the spinach leaves. Remove from heat.
  • Divide bean mixture among tortillas. Sprinkle with cheese. Fold one end of each tortilla up about 1 inch over filling and fold right and left sides over folded end, overlapping. Fold remaining end down.
  • Enjoy.

1 pound reduced-fat fully cooked sausage, cut into 1-2-inch slices
1 large onion, chopped
1/2 cup chopped green pepper
1/2 cup chopped sweet red pepper
2 garlic cloves, minced
2 teaspoons canola oil
4 cups chopped fresh tomatoes
1 tablespoon Worcestershire sauce
1/2 teaspoon sugar
1/2 teaspoon lemon juice
1/4 teaspoon salt
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon pepper
1/4 teaspoon seafood seasoning
4 cups frozen cut okra
Hot cooked rice, optional

Steps:

  • In a large skillet, cook the sausage, onion, sweet peppers and garlic in oil over medium heat until vegetables are tender. Stir in the tomatoes, Worcestershire sauce, sugar, lemon juice and seasonings. Bring to boil. Reduce heat; simmer, uncovered, for 15 minutes., Add okra; return to a boil. 1/3 cup chunky salsa

"White beans mashed with ripe avocado and blended with sharp Cheddar and onion makes an incredibly rich, flavorful filling for this wrap. The tangy, spicy slaw adds crunch. Serve with tortilla chips, salsa and Tecate beer." This is a fast and easy vegetarian wrap, perfect for a lunch. Feel free to make it vegan - I think it is delish without the cheese! Recipe from Eating Well Magazine, July/Aug 2009. Sometimes I sub out some of the red cabbage for lettuce. I have also subbed white vinegar for the cider vinegar. Lastly, I have added tomatoes and then left the avocado cubed and the beans whole (not mashing them as per the original recipe).

2 tablespoons cider vinegar
1 tablespoon canola oil
2 teaspoons finely chopped canned chipotle chiles in adobo (see Note)
1/4 teaspoon salt
2 cups shredded red cabbage
1 medium carrot, shredded
1/4 cup chopped fresh cilantro
1 (15 ounce) can white beans, rinsed
1 ripe avocado
1/2 cup shredded sharp cheddar cheese (optional)
2 tablespoons minced red onions (may sub green onions)
4 whole wheat tortillas (8 or 10 inch will work)

Steps:

  • Whisk vinegar, oil, chipotle chile and salt in a medium bowl. Add cabbage, carrot and cilantro; toss to combine.
  • Mash beans and avocado in another medium bowl with a potato masher or fork. Stir in cheese and onion.
  • To assemble the wraps, spread about 1/2 cup of the bean-avocado mixture onto a wrap (or tortilla) and top with about 2/3 cup of the cabbage-carrot slaw. Roll up. Repeat with remaining ingredients. Cut the wraps in half to serve, if desired.
  • NOTE: Chipotle chiles in adobo sauce are smoked jalapeños packed in a flavorful sauce. Look for the small cans with the Mexican foods in large supermarkets. Once opened, they'll keep at least 2 weeks in the refrigerator or 6 months in the freezer. I have also used chipotle sauce with wonderful results.

Steps:

  • Mix well sausage, green pepper, onion, and egg.

  • Mix tomatoes, chili sauce and chili powder on med.

1 green bell pepper, seeded, chopped
1 onion, peeled, sliced
1 (15 ounce) can black beans, low sodium, drained, rinsed
2 mangoes, peeled, pitted, chopped
1 lime, juice of
1/2 cup fresh cilantro, chopped
1 avocado, peeled, pitted, diced (optional)
4 (10 inch) fat free tortillas

Steps:

  • In a nonstick pan over medium heat, saute bell peppers & onion for 5 minutes, then add beans & stir well.
  • Reduce heat to low & simmer about 5 minutes.
  • In a small bowl, combine mangoes, lime juice, cilantro (& avocado, if using), then divide the mixture & set aside half of it to use as a topping.
  • Fill tortillas with 1/4 of the bean mixture & 1/4 of the mango mixture, then fold ends of tortillas over & roll each of them up to make a wrap.
  • Put each warp on a serving plate & top with remaining mango mixture.
