A friend raved about Korean recipes for bulgogi-beef cooked in soy sauce and ginger-so I tried it. It's delicious! Dazzle the table with this tasty version of Korean beef and rice. -Betsy King, Duluth, Minnesota

1 pound lean ground beef (90% lean)
3 garlic cloves, minced
1/4 cup packed brown sugar
1/4 cup reduced-sodium soy sauce
2 teaspoons sesame oil
1/4 teaspoon ground ginger
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon pepper
2-2/3 cups hot cooked brown rice
3 green onions, thinly sliced

Steps:

  • In a large skillet, cook beef and garlic over medium heat 6-8 minutes or until beef is no longer pink, breaking up beef into crumbles. Meanwhile, in a small bowl, mix brown sugar, soy sauce, oil and seasonings., Stir sauce into beef; heat through. Serve with rice. Sprinkle with green onions. Freeze option: Freeze cooled meat mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally.

1 pound ground beef
1 (6.9 ounce) package chicken flavored rice mix (such as Rice A Roni®)
2 cups water

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
  • Stir rice portion of packaged rice mix into beef; cook and stir until rice is lightly browned, about 5 minutes. Pour water into beef and rice, stir seasoning packet from rice into mixture, and cover skillet. Bring to a boil, reduce heat to low, and simmer until the liquid has been almost completely absorbed, about 30 minutes.

Simple 4 ingredient meal that tastes great. Good for a busy night. My Mom used to make this all the time, it is one of my Dad's favorite meals. I put my rice in a rice cooker, so that's the amount of water I listed in the ingredients. It normally takes about 25 minutes to have it on the table, less if you use precooked beef.

1 1/2 lbs ground beef
1 onion
1 (1 1/4 ounce) package onion soup mix
2 cups water (for beef)
4 cups water (for rice)
2 cups rice

Steps:

  • Cook the rice as you would normally (I put it in a rice maker.).
  • Saute' onion, and cook ground beef over medium heat in a large skillet, (add the beef a few minutes after the onion.) Drain off the fat (I usually rinse it under warm water.).
  • Return to skillet. Add onion soup mix and water, bring to a boil and simmer until slightly thickened, about 5-10 minutes.
  • Serve warm over rice.
  • note: The soup mix thickens the water slightly, but it still will have a watery consistency. The extra liquid will soak into the rice and flavor it.

1 small onion, chopped
1 (4 ounce) can sliced mushrooms, drained or 4 ounces fresh mushrooms, sliced
1 (15 ounce) can beef broth
1 cup long grain rice

Steps:

  • Preheat oven to 350°F.
  • Saute onion and mushrooms in butter.
  • Add broth and cook for 5 minutes.
  • Put rice in a 1 1/2 quart casserole dish.
  • Pour broth mixture over rice.
  • Cover and bake 45-60 minutes.

This recipe produces tender beef tips and a delicious gravy. If you prefer, you can serve the beef tips over mashed potatoes instead of rice.

3 lbs sirloin tip steaks, cut into 1-inch cubes
1/3 cup all-purpose flour
5 tablespoons olive oil, divided
1 large yellow onion, chopped
1 green bell pepper, chopped
2 garlic cloves, minced
4 cups water
1/4 cup soy sauce
1/4 cup Worcestershire sauce
1 teaspoon seasoning salt
1/2 teaspoon black pepper
1/3 cup water
3 tablespoons all-purpose flour
hot cooked rice
1/2 tablespoon dried parsley, for garnish

Steps:

  • In a large Dutch oven, heat 2 tablespoons olive oil over medium heat.
  • Add onion, bell pepper and garlic.
  • Cook for about 5 minutes or until veggies are tender.
  • Remove veggies from pan and place on a dinner plate.
  • In a bowl, toss together beef tips and 1/3 cup flour.
  • Add remaining 3 tablespoons of oil to the Dutch oven.
  • Place beef tips in Dutch oven and brown on all sides and cook for about 10 minutes, stirring regularly.
  • Add veggies back to the Dutch oven.
  • Add 4 cups water, soy sauce, Worcestershire sauce, seasoned salt and pepper, stirring well.
  • Bring to a boil.
  • Reduce heat and cover partially.
  • Let simmer for 1 hour.
  • In a small bowl, combine 1/3 cup cold water and 3 tablespoons flour, mix well.
  • Add flour mixture to the beef tips, cooking for 2-3 minutes or until mixture thickens.
  • Serve over hot cooked rice.
  • Garnish with parsley.

1-1/2 pounds beef top sirloin steak, cut into thin strips
1 teaspoon salt
1/4 teaspoon pepper
2 teaspoons olive oil, divided
2 medium onions, thinly sliced
1 garlic clove, minced
1 can (14-1/2 ounces) diced tomatoes, undrained
1/2 cup reduced-sodium beef broth
1/3 cup dry red wine or additional reduced-sodium beef broth
1 bay leaf
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
3 cups hot cooked brown rice

Steps:

  • Sprinkle beef strips with salt and pepper. In a large nonstick skillet, brown beef in 1 teaspoon oil. Remove and keep warm. , In the same skillet, saute onions in remaining oil until tender. Add garlic; cook 1 minute longer. Stir in the tomatoes, broth, wine, bay leaf, basil and thyme. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. , Return beef to the pan; cook for 2-4 minutes or until tender. Discard bay leaf. Serve with rice.
