This easy beef skillet has bruschetta-style ingredients and is ready in just 30 minutes. Oh, and it's better for you too. Win, win, win.

Yield Makes 4 servings, 1-1/2 cups each.

Number Of Ingredients 8

1 lb. beef sirloin steak, cut into thin strips
2 tsp. oil
2 large tomatoes, chopped
1 can (14 oz.) beef broth
4 cloves garlic, minced
1 tsp. dried basil leaves
1-1/2 cups instant white rice, uncooked
1/2 cup KRAFT Shredded Mozzarella Cheese

Steps:

  • Cook meat in hot oil in large nonstick skillet on medium-high heat 2 min. or until evenly browned, stirring frequently. Remove meat from skillet; set aside.
  • Add next 4 ingredients to skillet. Bring to boil. Stir in rice; return to boil.
  • Stir in meat; top with cheese. Cover. Simmer on medium-low heat 8 to 10 min. or until heated through.

1 loaf (1 lb) baguette French bread, cut into 30 (1/4-inch) slices
2 tablespoons olive or vegetable oil
1/2 cup chives-and-onion cream cheese spread
1/2 lb thinly sliced cooked roast beef
1/4 teaspoon coarsely ground pepper
4 plum (Roma) tomatoes, thinly sliced
8 medium green onions, sliced (1/2 cup)

Steps:

  • Heat oven to 375°F. Brush both sides of bread slices with oil; place on ungreased cookie sheet.
  • Bake about 5 minutes or until crisp. Cool 5 minutes.
  • Spread cream cheese over each slice. Top with beef; sprinkle with pepper. Top each with tomato slice and onions.

Number Of Ingredients 14

2 tablespoons salted butter
1 yellow onion, diced
3 cloves garlic, minced
1 pound ground chuck
Kosher salt and freshly ground black pepper
1 tablespoon tomato paste
12 ounces egg noodles
2 1/2 cups beef broth
1 tablespoon grainy mustard
1 teaspoon smoked paprika
A few dashes Worcestershire sauce
1/3 cup sour cream
2 tablespoons heavy cream
2 tablespoons chopped fresh chives

Steps:

  • Heat the butter in a large skillet over medium heat. Add the onion and garlic and cook for 1 minute. Add the ground chuck and sprinkle with salt and pepper. Cook the meat, crumbling as you go, until cooked through, about 5 minutes. Add the tomato paste and cook for about 30 seconds.
  • Add the noodles, broth, 1 cup hot water, the mustard, paprika and Worcestershire sauce. Give a big stir and bring to a simmer. Cover and allow everything to simmer, stirring occasionally and adding up to 1/2 cup more water if necessary, until the pasta is al dente and the sauce has thickened, about 12 minutes. Stir in the sour cream and heavy cream and cook for 1 additional minute or until the pasta is tender.
  • Remove from the heat. Sprinkle over the chives and serve directly from the pan.

1 (10 ounce) can beef broth
1 teaspoon dried basil leaves
1 1/2 cups MINUTE White Rice, uncooked
2 ounces cubed velveeta processed cheese (1/2 cup)

Steps:

  • BROWN meat in oil in nonstick skillet on medium-high heat. Remove from skillet; set aside.
  • ADD garlic, tomatoes, broth and basil to skillet; bring to boil. Stir in rice; return to boil.
  • REDUCE heat to medium-low. Stir in meat and Velveeta; cover. Simmer 8 to 10 minute or until heated through. Stir until Velveeta is completely melted and mixture is well blended.

  • Brown meat, remove from skillet, set aside.

  • Stir in Minute Rice, return to boil.
  • Reduce heart to medium-low; stir in meat.
  • Top with cheese.
  • Cover. Simmer 5 to 10 minutes or until heated through.
