SHREDDED GREEN CHILE BEEF
This Tex-Mex pulled beef roast is tender, slightly spicy, juicy, and so delicious served over mashed potatoes or rice. The beef also makes the best soft tacos you've ever had. Save any leftover pulled beef in the liquid to prevent it from drying out. -Colleen Delawder, Herndon, Virginia

- Cheesy Lasagna Soup. Serve up the classic dish in soup form for a winter-ready way to enjoy the flavors of lasagna. Top with a dollop of ricotta and shredded mozzarella to mimic the creamy, cheesy goodness we all love in a lasagna.
- Slow-Cooker French Onion Soup. Thanks to your slow cooker, homemade French onion soup can come together with just 15 minutes of hands-on time. The slow cooker caramelizes the sweet Vidalia onions for you, just add broth and zingy sherry vinegar near the end of cooking.
- Lemon Chicken Orzo Soup. This homemade chicken soup with lemon comes together quickly and easily thanks to rotisserie chicken. Vitamin-packed, cubed sweet potato adds vibrant color.
- Cheesy Potato Soup with Bacon. Ideal for cold winter days, this potato soup is set for all sorts of toppings. We can't get enough of it with cheddar cheese, crumbled bacon, sliced green onions, and a dollop of sour cream.
- Creamy Chicken and Rice Soup. This recipe is a winner for weeknight cooks who are short on time. It comes together from start to finish in just 35 minutes.
- Chicken Pot Pie Soup. Chicken pot pie is made even more comforting when served in soup form. Plus, without having to assemble a pot pie, this dish couldn't be easier.
- Slow-Cooker Winter Vegetable Soup with Bacon. Cooked slow on low, this warm veggie soup with bacon is worth the wait. One spoonful of this hearty greens- and beans-packed soup and you'll understand why.
- Capitol Hill Bean Soup. This hearty bean soup has been on the menu in the Senate's restaurant every day since at least 1903. Use the quick-soak method included for the navy beans if an overnight soak isn’t possible.
- Slow Cooker Lentil Soup. If you think plain-Jane lentil soup isn't for you, think again. This version gets plenty of flavor from herbs and spices. Simmer ingredients 6 to 7 hours, then blend 2 cups of the soup and return it to the slow cooker—this step thickens the soup without flour and loads it with even more flavor.
- Slow-Cooker Carne Guisada. Make sure not to discard the cilantro stems. You'll add them to the base of the stew for a punch of flavor. There is some prep work to do before everything goes into the slow-cooker—browning the beef adds flavor and renders the fat, then the vegetables and spices are sautéed to create the soup base—but the stew simmers for 6 hours to create tenderized beef and deep flavors.

- Smoky Chickpea, Red Lentil & Vegetable Soup. This vegetarian soup is made almost entirely from pantry staples. It is the perfect weeknight recipe: it takes just 30 minutes to make, yet tastes like you spent all day at the stove, and it’s super healthy, too.

- Thai-Inspired Chicken & Rice Noodle Soup. One of my most popular soup recipes, this fragrant, slurpy noodle soup tastes like sunshine on a dreary day.
- Pasta e Fagioli. Pasta e fagioli, literally “pasta and beans” in Italian, is a hearty and comforting soup, perfect for a cold night. The base of the soup is made with pancetta, vegetables and white wine, which give the soup wonderful flavor, and the broth is thickened with puréed beans.
- Carrot and Sweet Potato Soup. You’ve probably got most of the ingredients for this soup lingering in your veggie bin, so it’s easy to whip up on a cold day.
- French Lentil Soup. Whether you’re looking to eat better or chase the winter blues away, this French lentil soup is the ticket. Be sure to use French lentils, which hold their shape nicely when cooked and thicken the soup without turning it to mush.
- Italian Wedding Soup. The name of this soup derives from the Italian phrase minestra maritata – or “married soup”– which is a reference to the lovely way the flavors combine, like a happy marriage.
- Classic Beef Chili. This is my go-to beef chili recipe. It is thick, rich, melt-in-your-mouth tender, and delicious served over rice or scooped up with tortilla chips.
- Thai-Inspired Butternut Squash Soup with Coconut Milk. This Thai-inspired butternut squash soup is flavored with ginger, red curry paste, and coconut milk.
