EGYPTIAN STUFFED VEGETABLES (MASHI)



Egyptian Stuffed Vegetables (Mashi) image

You could use any veggies you like for this recipe. Instead of rice you can stuff it with cooked mince. Serve as a side dish. Prep and cooking time I am guessing. There would be some rice mixture left over, I normally add it in between the veggies and bake it.

1 kg zucchini (like zucchini, green peppers or capsicums, eggplant, potatoes and tomatoes) or 1 kg mixed vegetables (like zucchini, green peppers or capsicums, eggplant, potatoes and tomatoes)
1/2 cup coriander leaves (cilantro)
1/2 cup flat leaf parsley
2 medium onions
1 big hard tomatoes
2 tablespoons tomato paste
1 teaspoon cracked black pepper
1/4 teaspoon white pepper
salt
3/4 teaspoon cumin, crushed lightly
1/4 teaspoon coriander powder
3/4 teaspoon msg (optional)
1/2 cup oil
1 1/4 cups egyptian rice or 1 1/4 cups any short-grain rice
1 tablespoon ghee
8 pieces gum arabic (mastikah)
1 chicken bouillon cube, dissolved

Steps:

  • Top and core insides of veggies.
  • Wash rice and drain. Chop herbs very small; wash in a sieve and allow to drain.
  • Chop tomato.
  • Mix rice, herbs and tomato.
  • Add spices to rice mixture.
  • Fill veggies with the rice mixture 3/4 full (allow space for rice to expand).
  • Heat chicken broth cube, ghee and mastikah until mastikah melts.
  • Layer veggies in a flat pot or baking tin.
  • Add chicken broth mixture to veggies and allow to come to the boil on the stove top.
  • Bake covered at 180°C until veggies are tender. (we like our veggies very soft, I bake it for 1 hr 15 mins).

This is really nice Middle Eastern dish not from one particular country. It looks very nice presented. The taste develops more over time so make the dish up to a day in advance for best flavour. If you can not find a tool made especially for coring vegetables an apple corer will work just as well. I used a knife but just be careful the direction you cut if you do so. If there is leftover meat mixture you can use it to make Hashwa which is equally as good all on its own or just eat it up as I like to do! Modified from a recipe on http://www.yasalamcooking.com.

Number Of Ingredients 12

1 small onion, diced
1 1/2 tablespoons butter
1 lb ground lamb (I use lean ground beef adding olive oil if I feel more fat is needed)
1/2 tablespoon baharat, spice mix
1 tablespoon tomato paste
sea salt, to taste
fresh ground black pepper, to taste
1/4 cup pine nuts
10 medium yellow potatoes (for best flavour, you can use white)
1 (15 ounce) can tomato sauce (If you want more sauce add more but we like to serve it with Balkan thick yogurt)
1 cup chicken stock (I use my own homemade)
balkan yogurt, to serve

Steps:

  • In a pan over medium heat cook the onions in butter until almost soft and then add the ground lamb or beef. Cook until it is no longer pink, drain any remaining fat.
  • Add the the baharat, tomato paste, sea salt, freshly ground black pepper and pine nuts. Mix well and cook until the pine nuts turn golden.
  • Wash and peel the potatoes. Carefully core out the middle leaving a smaller whole at the top but taking out most of the middle so there is just enough potato to hold it all together. Set aside.
  • Carefully fill the potatoes with the meat mixture. Stuff until the top but not extremely tightly. In a pan on medium heat add the tomato sauce and chicken stock. Carefully place the potatoes into the pan and cover. Raise heat to come to a full boil and then reduce to medium-low. Cook for 1 hour or more until tender when pricked with a fork, carefully switching sides half way through.
  • You may serve this over white Basmati rice, with a fresh salad and Balkan (thick) yogurt on the side if you don't add extra sauce.
  • Enjoy!

IRAQI STUFFED ZUCCHINI (COUSA MASHI)

Tweaked Dh's families delicious recipe for our favorite stuffed vegetables with meat tomato sauce. Amounts are guesstimates since we only do to taste. This is not a gorgeous looking dish, but great comfort food. P.S. So far the picture posted is beautiful but much dryer than the way we like it.

8 small baby zucchini (the light green ones)
1 -2 medium bell pepper
baharat spice mix, to taste (Dh's family uses curry powder)
1 lb ground beef
1 medium cooking onion, chopped (smaller pieces are better)
1 bunch flat leaf parsley, including stems, chopped
sea salt, to taste
white basmati rice, rinsed and soaked
1 (5 1/2 ounce) can tomato paste
water

Steps:

  • Wash and hollow out baby zucchini's cutting tops off where the stems grow. Put all together in a large pot. Discard innards.
  • Cut tops off bell peppers and remove seeds and membrane. Add to pot including tops. Discard innards.
  • Mix ground beef (CW rinses and drains), white Basmati rice, chopped onion, chopped flat leaf parsley, sea salt, to taste & baharat.
  • Stuff each vegetable until just about full pressing lightly to make sure there are no air pockets. If you press to hard the result will be too dry.
  • Cork each vegetable with stem end cutting to fit if too large. Return each.
  • vegetable to the pot in as even a layer as possible.
  • Keep remaining filling to side as it will be used in the sauce.
  • Add tomato paste to some water and mix (whisk works best) until no lumps remain. Add to pot along with more water until just over top of the vegetables, Add some extra bahrat spice mix to taste, sea salt, and bring to the boil.
  • Cover and cook until partially done adding remaining filling (it shouldn't be a lot) to the surrounding liquid so that once cooked it will form a sauce not a dry rice dish. So if needed add more water/sea salt. Boil/simmer until done.
  • Remove vegetables and arrange on a large platter, spoon sauce around.
  • Enjoy!

This is an old stand by for me, its quick and easy and can be served as a main dish or side dish. Its great with a nice middle eastern salad and a side of yoghurt and also goes well with baked lamb or roasts.This is a great potluck dish as well.Seasoning are approximate, you can adjust to suit your tastes.

5 cups cooked rice
1/2 lb ground lamb or 1/2 lb ground turkey
1/3 cup diced onion
3 garlic cloves
1 (15 ounce) can chickpeas
seasoning, are to taste
1/2-3/4 teaspoon allspice
1/3 teaspoon cinnamon
1 tablespoon seasoning salt (more if desired) or 1 tablespoon salt (more if desired)
1 teaspoon garlic powder
1/2 teaspoon black pepper
1/4 cup diced red pepper (for color) (optional)

Steps:

  • Set cooked rice aside.
  • In a pot combine onions,chopped garlic,seasonings and ground meat and brown, try to keep the meat from forming large clumps, you want it taco meat in consistency, so keep stirring often.
  • Once its almost brown add drained can of chick peas and let meat brown.
  • When meat is browned drain any remaining fat from pan and add rice and stir until well blended.
  • Enjoy-- (variation to it can be to substitute chick peas for mixed can of mixed veggies).

4 medium batatas (about 2 lb total), rinsed and dried
1 stick (1/2 cup) unsalted butter, softened
1 tablespoon fresh lime juice
1 tablespoon chopped fresh flat-leaf parsley
2 teaspoons cumin seeds, toasted and cooled
1/4 teaspoon salt
1/4 teaspoon black pepper
Special Equipment
12-inch-wide heavy-duty foil; a chimney starter and a charcoal grill (or see cooks' note, below); long metal tongs

Steps:

  • Tear off 4 (2-foot-long) sheets of heavy-duty foil and stack. Arrange batatas in 1 layer on top in center. Working with top sheet of foil, fold each side of foil over batatas to enclose, then turn package a quarter turn and fold over each side of second sheet of foil to enclose. Repeat folding with remaining 2 sheets of foil, turning package a quarter turn before each layer.
  • Open vents on bottom of grill and remove top grill rack, leaving bottom rack in place. Light charcoal in chimney starter, then pour out onto bottom rack, using tongs to clear a space in center of rack just large enough for foil package. Put package in cleared space and arrange lit coals around package. (Do not put coals underneath or on top of package.)
  • Roast batatas, turning package over every 10 minutes, checking and adding charcoal to keep a steady heat around package, until a sharp paring knife inserted halfway into a batata passes through easily but with slight resistance, 45 to 50 minutes.
  • While batatas are roasting, stir together butter, lime juice, parsley, cumin, salt, and pepper in a small bowl with a fork until combined well. 3Unwrap batatas carefully. When cool enough to handle, peel and cut crosswise into 1/2-inch-thick slices. Season batatas with salt and pepper and serve with lime-cumin butter.
  • Batatas can be roasted (instead of grilled), wrapped in 1 layer of foil, in middle of a preheated 400°F oven 1 1/4 to 1 1/2 hours.
