1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
½ teaspoon salt
½ teaspoon ground nutmeg
½ cup shortening
¾ cup white sugar
2 eggs
1 cup rolled oats
1 cup diced apple without peel
1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, cream together the shortening and sugar. Beat in the eggs until well blended. Combine the flour, baking powder, cinnamon, nutmeg, and salt; stir into the sugar mixture until well blended. Fold in the walnuts, oats and apples. Drop dough by spoonfuls about 2 inches onto ungreased cookie sheets.
  • Bake for 12 to 15 minutes in the preheated oven. Let cool on wire racks.

1 cup butter, softened
1 cup packed brown sugar
1/2 cup sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking soda
1/4 teaspoon salt
3 cups old-fashioned oats
1/2 cup chopped dried apples

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugars until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. Combine the flour, cinnamon, baking soda and salt; gradually add to creamed mixture and mix well. Stir in oats and apples. , Drop by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake until golden brown, 10-12 minutes. Let stand for 1 minute before removing to wire racks.

1 pound old-fashioned rolled oats (about 5 2/3 cups)
1 teaspoon baking powder
1 teaspoon ground cinnamon
Pinch kosher salt
10 ounces unsalted butter, at room temperature
6 ounces dark brown sugar, packed (about 3/4 cup)
3 1/2 ounces granulated sugar (about 1/2 cup)
1 teaspoon vanilla extract
1 large egg
4 ounces raisins, optional, soaked overnight in rum and drained, optional (about 2/3 cup)

Steps:

  • Preheat the oven to 375 degrees F. Spread the oats into a single layer on a baking sheet. Bake until lightly toasted, about 20 minutes. Cool the oats for 2 to 3 minutes on the sheet. Grind 8 ounces of the toasted oats in a food processor until they have the consistency of whole-wheat flour, about 3 minutes. Add the baking powder, cinnamon and salt to the food processor and pulse 2 to 3 times to combine. Set aside.
  • Line baking sheets with parchment paper. Combine the butter and sugars in the bowl of a stand mixer and mix on medium speed using the paddle attachment until light in color, about 3 minutes. Stop once to scrape down the sides of the bowl. Reduce the mixer speed to the lowest speed and add the vanilla extract and egg. Mix to combine. Slowly add the flour mixture until just combined. Stop once to scrape down the sides of the bowl. Add the remaining toasted oats and the raisins, if using, and mix to combine.
  • Scoop the dough with a 1 1/2-tablespoon disher onto the baking sheets, leaving 2 inches between each mound. Bake until the cookies begin to brown around the edges, 12 to 14 minutes, rotating the baking sheets halfway through. Cool on the sheets for 2 minutes, and then move to a cooling rack to cool completely.

1/2 c oat flour
1/2 c brown rice flour
2 Tbsp tapioca flour/starch
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/4 tsp nutmeg
1/4 tsp allspice
1 tsp cinnamon
1/4 c walnut oil
1/3 c granulated sugar
1 1 flax egg (1 tbsp flax meal + 3 tbsp water, mix and let sit about 5 min)
1 tsp vanilla
1 small/medium red apple, unpeeled - finely diced and tossed with a bit of cinnamon and sugar
3/4 c rolled oats (quick oats would work too)
1 c chopped walnuts

Steps:

  • 1. Preheat oven to 375-degrees
  • 2. In a mixing bowl combine: flours, starch, baking soda, baking powder, salt, nutmeg, allspice, cinnamon and set aside.
  • 3. In a second bowl combine oil, sugar, flax egg, and vanilla.
  • 4. Pour the liquid into the dry mix and mix together until well combined.
  • 5. Next, add in oats, apples and walnuts and fold together.
  • 6. On a nonstick cookie sheet, drop a heaping tablespoon of the mix. Really press the mix into your tablespoon so that it forms a nice compact ball.
  • 7. Bake for 10-12 minutes until slightly golden.
  • 8. NOTES For an extra crunchy top, I like to pop them under the broiler for a minute. Since there is fresh apple in these, by nature, the cookies will get softer each day they are stored. *If you're not gluten free or vegan, all-purpose flour and a regular egg can be used.

1 box pillsbury pie crusts (2 sheets per box)
1 can(s) apple pie filling
1 c caramel sauce
1 egg
2 Tbsp cinnamon/sugar
1 Tbsp nutmeg
flour for sprinkling
round cookie cutter..any size you like

Steps:

  • 1. Lay out a sheet of Pie crust, sprinkle it with some flour and slightly roll it out, just to increase its surface area.
  • 2. Pour some Caramel sauce (just enough to coat the crust) onto the crust and evenly spread it around, creating a thin layer of caramel...
  • 3. Coarsely chop the apple pie filling into small pieces..........
  • 4. Top the caramel layer with a layer of the chopped up Apple Pie Filling, making sure not to add too much pie filling.....
  • 5. Roll out the second sheet of Pie Crust the same size as the first sheet, and slice it into strips...
  • 6. Create a lattice crust (just like on a pie) for the top of the pie filling. Create the lattice right on top of the actual filling, as if it were a pie.
  • 7. Mix cinnamon, sugar and nutmeg together....
  • 8. Dip your cookie cutter into some egg wash and cut out your pie cookies........Brush the tops of them with some egg wash and sprinkle them with the Cinnamon Sugar and Nutmeg mixture....
  • 9. Place them on a baking sheet and bake them at 350 degrees for approx. 20-25 minutes until they are golden and firm.
  • 10. Let cool slightly and enjoy!

2 tablespoons milk

Steps:

  • Position racks in the upper and lower thirds of the oven; preheat to 350 degrees F. Line 2 baking sheets with parchment paper. Whisk the flour, oats, cinnamon, baking powder, baking soda, salt and allspice in a medium bowl. Combine the butter, brown sugar, granulated sugar and eggs in a separate bowl; whisk until smooth. Stir in the grated apple and vanilla, then stir in the flour mixture until just combined.
  • Scoop heaping tablespoonfuls of the dough onto the prepared baking sheets, about 1 inch apart. Bake until just set around the edges, 10 to 12 minutes, switching the baking sheets halfway through. Let cool 5 minutes on the baking sheets, then transfer to a rack to cool completely.
  • Make the glaze: Whisk the confectioners' sugar and milk in a bowl; drizzle on the cookies.

1 cup sugar
1/2 cup shortening
1/2 teaspoon vanilla
1 large Red Delicious apple, peeled & grated
2 cups flour
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda

Steps:

  • Preheat oven to 350 degrees.
  • Cream together sugar, shortening & vanilla.
  • Add in grated apple.
  • Sift together dry ingredients.
  • Add gradually to creamed mixture, combining thoroughly.
  • *If dough appears slightly dry and doesn't come together, let it sit for a few minutes to allow the sugar to pull the juice from the apples.
  • Roll in walnut-sized balls and roll in mixture of 2 Tbsp sugar, 1/2 tsp nutmeg and 1/4 tsp cinnamon.
  • Bake 8-10 minutes on aluminum foil or parchment, until cookies are golden brown and appear crackled.
  • Let cool on cookie sheet 4-5 minutes before transferring to cooling rack.
