MUSTARD-GLAZED MUSHROOM BURGER

Steps:
- Preheat the grill to medium-high heat.
- Form the beef into 6 burgers; sprinkle with salt and pepper. To make the glaze, mix together the mustard, soy sauce and sugar in a small bowl.
- Grill the burgers until desired doneness, 4 to 5 minutes per side for medium rare, brushing the burgers with the glaze about halfway through. A minute before removing the burgers from the grill, top with the cheese.
- Meanwhile, heat the oil in a large skillet over medium-high heat. Cook the mushrooms until beginning to soften, about 5 minutes. Add the thyme and garlic and cook until the mushrooms are soft, about 3 minutes more. Season with salt and pepper.
- Toast the buns and serve the burgers with the mushroom topping.
CHICKEN PARMESAN BURGERS
Steps:
- In a large skillet, heat 1 tablespoon oil over medium-high heat. Add onion; cook and stir until tender, about 3 minutes. Add garlic; cook 1 minute longer. Remove from heat; cool slightly., In a large bowl, combine 1/4 cup marinara sauce, chopped mozzarella cheese, bread crumbs, seasonings and onion mixture. Add chicken; mix lightly but thoroughly. With wet hands, shape into four 1/2-in.-thick patties., In the same skillet, heat remaining 2 tablespoons oil over medium heat. Cook burgers until a thermometer reads 165°, 4-5 minutes on each side. Top with sliced mozzarella cheese; cook, covered, until cheese is melted, 1-2 minutes., Serve in buns; top with remaining 1/2 cup marinara sauce, Parmesan cheese and, if desired, basil leaves.

- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Mix ground beef, red pepper, garlic, salt, and pepper in a large mixing bowl; divide and form into 16 patties. Place 1 ounce blue cheese in the center atop each of 8 of the patties. Top each cheese-topped patty with an unadorned patty, pressing the sides together so the cheese doesn't fall out.
- Cook on the preheated grill until the burgers are cooked to your desired degree of doneness, 7 to 10 minutes per side for well done. An instant-read thermometer inserted into the meat should read 160 degrees F (70 degrees C).
