I'm in love with this raw vegan banana pudding, actually, it's one of my favorite desserts, especially if I add lots of fresh raspberries on top.

Steps:
- You can soak the cashews overnight (I didn't), but it's totally up to you. If your food processor or blender is not very powerful, I recommend you to soak them.
- Place all the ingredients in a food processor (or a blender) and blend until smooth. Chill for at least 2 hours.
- Before serving, top with your favorite toppings (I added fresh raspberries and chopped cashews).

INSTANT BANANA DATE DESSERT (VEGAN & GOOD FOR YOU TOO!)
This is so yummy & sweet & a potassium & fiber powerhouse too. I came up with it lastnight & only wish I had some vegan whipped cream to go ontop. Of course whipped cream would be a great addition! Feel free to add some if you wish. It'd work as a great diet food too, if you follow my recipe exactly it has 250 calories (dunno if Zaar will recognise vegan creamer lol so I added it up myself)

- Slice the dates in half & remove the pits then chop into large pieces. Cut the bananas into 1/2 inch thick rounds then cut the rounds in half.
- Whip the cream & sugar together with an electric mixer until stiff peaks are formed.
- Gently fold in the bananas and the dates. Separate into individual serving dishes and sprinkle with cinnamon. Chill for 30 minutes before serving.

RAW FOOD: LEMON PUDDING (BANANA BASE)
Delicious pudding in minutes, with all natural ingredients! I just started looking into the Raw Food Movement, but I've been trying to avoid highly processed foods for a while now. Standard pudding is on of the worst offenders, where processed foods are concerned. Raw Foodists make pudding using bananas or avocados for base. I've tried both, but I prefer the banana "puddings."

- Mash the banana with a fork.
- Mix in the rest of the ingredients with a spoon.
- Alternatively, process all ingredients in a food processor until mixed.
- Note: Some people use pitted mejool dates instead of honey or another sweetener. I prefer a liquid sweetener, since the dates don't give a very smooth texture in the final product. If you want to use dates, one should be enough in this recipe.

RAW VEGAN BANANA PUDDING
I had been wanting to make a raw treat for my sister, so we decided to make banana pudding yesterday. - Preheat oven to 180°C Spread the hazelnuts over an oven tray. Roast in preheated oven for 10 minutes or until lightly toasted. Place hazelnuts in a clean tea towel and rub to remove the skins. Coarsely chop.
- Line the base of a 20cm round (base measurement) springform pan with baking paper. Rub the butter over the base and side of the pan. Sprinkle with the chopped hazelnuts.
- Place dates and bicarbonate of soda in a heatproof bowl. Pour over the boiling water and set aside for 5 minutes to soak. Transfer to the bowl of a food processor. Add the banana, sugar, extra butter and flour and process until almost smooth. Pour into the prepared pan.
- Bake in preheated oven for 1 hour or until a skewer inserted in the centre comes out clean. Remove from oven and set aside for 10 minutes to cool slightly.
- Meanwhile, to make the butterscotch sauce, combine the sugar, cream and butter in a medium saucepan over medium heat. Cook, stirring, for 5 minutes or until butter melts and mixture is well combined and heated through.
- Pour half the sauce over the pudding. Cut into wedges, drizzle with remaining sauce. Serve immediately with cream or ice-cream, if desired.

- 1. Preheat oven to 350 degrees F. - prep (4) ramekins with butter flavored cooking spray.
- 2. In large bowl, combine eggs, agave, half & half, heavy cream and 2 ounces of soften cream cheese. blend well, add 1/2 cup of rum. Then add cube bread and let stand for about 20 minutes or until the bread is totally soak.
- 3. Then fold in chopped bananas and peaches into mixture and blend well. Pour mixture into each ramekins and place on a lined baking sheet. Bake for about 45 - 50 minutes or until golden brown and set.
- 4. In a sauce pan over medium heat, combine butter, balance of cream cheese and agave nectar, let come to a boil. Then remove from heat add balance of rum blend well and return to heat to form a thick glaze like sauce. Then remove Bread Pudding from oven and pour the hot rum sauce over bread pudding and serve.
