RAW VEGAN BANANA PUDDING

I'm in love with this raw vegan banana pudding, actually, it's one of my favorite desserts, especially if I add lots of fresh raspberries on top.

2 cups raw cashews
2 frozen bananas
2 regular bananas
8 Deglet Nour or 4 Medjool dates
¾ cup almond milk (185 ml)
Toppings: raspberries and chopped cashews (optional)

Steps:

  • You can soak the cashews overnight (I didn't), but it's totally up to you. If your food processor or blender is not very powerful, I recommend you to soak them.
  • Place all the ingredients in a food processor (or a blender) and blend until smooth. Chill for at least 2 hours.
  • Before serving, top with your favorite toppings (I added fresh raspberries and chopped cashews).

This is so yummy & sweet & a potassium & fiber powerhouse too. I came up with it lastnight & only wish I had some vegan whipped cream to go ontop. Of course whipped cream would be a great addition! Feel free to add some if you wish. It'd work as a great diet food too, if you follow my recipe exactly it has 250 calories (dunno if Zaar will recognise vegan creamer lol so I added it up myself)

1 medium ripe banana, sliced
1/4 cup whole pitted dates, quatered
1 tablespoon soy coffee creamer (I use Silk Original)
1 tablespoon chocolate syrup (I use Hershey's with 50% less sugar, carbs)

Steps:

  • Peel & chop the bananas & dates & mix them with the creamer in a bowl or a dessert dish.
  • Drizzle the chocolate syrup over the fruit & cream mixture & eat up!

1 cup dates
3 large bananas or 4 medium bananas
1 cup heavy whipping cream
1 1/2 tablespoons sugar
1 teaspoon cinnamon

Steps:

  • Slice the dates in half & remove the pits then chop into large pieces. Cut the bananas into 1/2 inch thick rounds then cut the rounds in half.
  • Whip the cream & sugar together with an electric mixer until stiff peaks are formed.
  • Gently fold in the bananas and the dates. Separate into individual serving dishes and sprinkle with cinnamon. Chill for 30 minutes before serving.

Delicious pudding in minutes, with all natural ingredients! I just started looking into the Raw Food Movement, but I've been trying to avoid highly processed foods for a while now. Standard pudding is on of the worst offenders, where processed foods are concerned. Raw Foodists make pudding using bananas or avocados for base. I've tried both, but I prefer the banana "puddings."

1 banana
1/2 tablespoon honey or 1/2 tablespoon agave nectar
1 -2 tablespoon unsweetened flaked coconut
2 tablespoons lemon juice (from about 1/2 of a small lemon)
1/2 tablespoon olive oil (optional) or 1/2 tablespoon coconut oil (optional)

Steps:

  • Mash the banana with a fork.
  • Mix in the rest of the ingredients with a spoon.
  • Alternatively, process all ingredients in a food processor until mixed.
  • Note: Some people use pitted mejool dates instead of honey or another sweetener. I prefer a liquid sweetener, since the dates don't give a very smooth texture in the final product. If you want to use dates, one should be enough in this recipe.

1 banana
1/4 cup Agave (can also use maple syrup (not raw)
1/2 teaspoon vanilla

100 g hazelnuts
20 g butter, softened
1 cup coarsely chopped dates
1 teaspoon bicarbonate of soda
1 1/4 cups boiling water
1 cup mashed banana
3/4 cup brown sugar
60 g butter, softened, extra
butter, for greasing
1 1/4 cups self-raising flour
double cream or ice cream, to serve
butterscotch sundae sauce
1 cup brown sugar
300 ml thickened cream
100 g butter, chopped

Steps:

  • Preheat oven to 180°C Spread the hazelnuts over an oven tray. Roast in preheated oven for 10 minutes or until lightly toasted. Place hazelnuts in a clean tea towel and rub to remove the skins. Coarsely chop.
  • Line the base of a 20cm round (base measurement) springform pan with baking paper. Rub the butter over the base and side of the pan. Sprinkle with the chopped hazelnuts.
  • Place dates and bicarbonate of soda in a heatproof bowl. Pour over the boiling water and set aside for 5 minutes to soak. Transfer to the bowl of a food processor. Add the banana, sugar, extra butter and flour and process until almost smooth. Pour into the prepared pan.
  • Bake in preheated oven for 1 hour or until a skewer inserted in the centre comes out clean. Remove from oven and set aside for 10 minutes to cool slightly.
  • Meanwhile, to make the butterscotch sauce, combine the sugar, cream and butter in a medium saucepan over medium heat. Cook, stirring, for 5 minutes or until butter melts and mixture is well combined and heated through.
  • Pour half the sauce over the pudding. Cut into wedges, drizzle with remaining sauce. Serve immediately with cream or ice-cream, if desired.

I love making Bread Pudding. Sweet or Savory. It is a great way to use up day old bread. Enjoy!

1 baguette or french bread loaf cubed (about 2 -3 cups)
4 eggs
1 1/4 c agave nectar (divided - cup for mixture 1/4 for sauce)
1 c half & half cream
1/2 c heavy cream
1 1/4 oz cream cheese (soften & divided)
2 bananas (chopped)
2 c dices peaches
1 c rum
3 Tbsp butter

Steps:

  • 1. Preheat oven to 350 degrees F. - prep (4) ramekins with butter flavored cooking spray.
  • 2. In large bowl, combine eggs, agave, half & half, heavy cream and 2 ounces of soften cream cheese. blend well, add 1/2 cup of rum. Then add cube bread and let stand for about 20 minutes or until the bread is totally soak.
  • 3. Then fold in chopped bananas and peaches into mixture and blend well. Pour mixture into each ramekins and place on a lined baking sheet. Bake for about 45 - 50 minutes or until golden brown and set.
  • 4. In a sauce pan over medium heat, combine butter, balance of cream cheese and agave nectar, let come to a boil. Then remove from heat add balance of rum blend well and return to heat to form a thick glaze like sauce. Then remove Bread Pudding from oven and pour the hot rum sauce over bread pudding and serve.
