I have shared this salad many times with the teachers at my school. They enjoy it so much that they ask me to bring it in. It's best to put the tomatoes on the salad just before serving so they won't wilt from the heat and moisture. - In a large saucepan, cook pasta according to package directions. , Meanwhile, in a Dutch oven over medium heat, cook the pine nuts, garlic, basil and pepper flakes in oil and butter just until nuts are lightly browned., Add the spinach, salt and pepper; cook and stir just until spinach is wilted, 4-5 minutes longer. Transfer to a large bowl., Drain pasta. Stir into spinach mixture. Drizzle with vinegar; sprinkle with cheese and tomato.

- Boil orzo pasta until al dente~7-8 minutes.
- Drain pasta; toss with 3 TB EVOO; spread on cookie sheet to cool.
- Mix red wine vinegar, lemon juice, honey, salt, pepper & EVOO until well blended.
- In bowl, put orzo, feta, basil, craisins & pine nuts.
- Add dressing, tossing well.
- Stir in or spoon over baby arugula.
- Keeps refrigerated for up to 4 days.

- While orzo cooks, lightly toast pine nuts in a dry small skillet over moderate heat, stirring, until pale golden, about 2 minutes. Remove from heat and cool 1 minute, then coarsely chop.
- Drain artichoke hearts in a large sieve and rinse well. Pull off leaves from bases of hearts and quarter bases. Rinse leaves and bases well, then drain thoroughly.

- Brown orzo in 3 tablespoons butter, stirring often until pasta is toasted and golden, about 5 minutes.
- Add chicken broth to orzo and cook until pasta is tender. You could drain pasta, but I like to cook it down a little more and leave it creamy.
- While pasta is cooking, saute onions and garlic cloves until onions are soft and translucent.
- Add onions and garlic, toasted pine nuts, and fresh parsley to orzo. Season with salt and pepper to taste.
- You could serve straight away, or you could leave it in a warm oven until the rest of your meal is ready!

- Cook orzo in plenty of boiling water with 1/2 tsp tumeric added for 8-10 minutes or al dente.
- Drain and set aside to cool.
- Preheat oven to 350F.
- Cut carrots in half lengthwise then slice on the diagonal into 1/2" thick pieces.
- Place in a roasting pan, drizzle with a little oil,sprinkle with spices and toss to coat evenly.
- Roast for 30 minutes, remove and allow to cool.
- Mix orzo,carrots,currants,pinenuts,c8i and vinegar together well.
- Season to taste with salt and pepper.
- Serve hot as an accompaniment or cold as a salad.

- Bring to rapid boil chicken Broth, add Orzo. Cook uncoveredstirring occaisionally for 10 min. or until desired tenderness. (Drain well when done). While boiling Orzo, toast Pine Nuts until golden. While doing the cooking above, cut Julian strips of Spinach, Basil, Red Onion, Red Bell Pepper & Sun Dried Tomatoes. Set aside. Mix together Olive Oil & Balsamic. Drain Orzo and let soak 10 min. in Balsamic & Olive Oil. Toss in Fresh Basil, Sun Dried Tomatoes, Spinach, Red Onion, Toasted Pine Nuts & Feta Cheese. Chill for 1 hour. You can omit Sun Dried Tomatoes with small red Pear Tomatoes if you prefer.
