These low carb oven baked chicken thighs are the best family-meal idea you will find! Serve them with some veggies and cauliflower rice.

3 pounds Chicken Thighs
2 tbsp Olive Oil
1 tsp Paprika
1 tsp Garlic Powder
1 tsp Onion Powder
1 tsp Salt
1/2 tsp Black Pepper

Steps:

  • Preheat the oven to 400 degrees. Prepare a baking sheet with aluminum foil for easier clean up.
  • Mix the seasonings together.
  • Rub the chicken thighs in olive oil and then rub the seasoning blend into the chicken.
  • Place the chicken thighs on the baking sheet and sprinkle with any remaining seasoning.
  • Bake in the oven for 45 minutes or until the chicken reaches an internal temperature of 165 degrees without the thermometer touching the bone.

This easy Keto Garlic Butter Chicken is a delicious midweek dinner! It's juicy, tender and super garlicky, perfect with a serving of Cauliflower Mash.

6 Chicken Thighs (bone in skin on)
½ teaspoon Salt
¼ teaspoon White Pepper (ground)
4 ounces Salted Butter
6 cloves Garlic (crushed)
1 tablespoon Rosemary (chopped)

Steps:

  • Preheat the oven to 190C/375F.
  • Season the chicken thighs with salt and pepper.
  • Place a large nonstick frying pan over high heat. Add 2 teaspoons of butter to the pan and brown the chicken thighs. Place the chicken into a casserole dish and set aside.
  • Reduce the heat to low and add the remaining butter, garlic and rosemary. Cook for 3-5 minutes, until fragrant.
  • Pour the butter over the chicken.
  • Bake for 30-40 minutes, until the chicken is cooked through.
  • Serve the chicken drizzled with a little of the butter and with a side of Cauliflower Mash.

1/2 cup butter
3 tablespoons minced garlic
3 tablespoons low sodium soy sauce
1/4 teaspoon black pepper
1 tablespoon dried rosemary
10 chicken thighs

Steps:

  • Preheat the oven to 425 degrees. Lightly grease a baking pan.
  • In a microwave safe bowl, mix the butter, garlic, soy sauce, pepper, and rosemary. Cook 2 minutes on High in the microwave, or until butter is melted.
  • Arrange chicken on the baking pan, and coat with the butter mixture, reserving some of the mixture for basting.
  • Bake chicken 25 minutes then remove from oven and turn chicken over.
  • Baste with remaining butter mixture. Return to oven and bake for an additional 20 minutes or until juices run clear.
