- Preheat oven to 400°F. Line a baking sheet with parchment paper; set aside.
- With a hand mixer, beat together cream cheese, cheddar, garlic powder, kosher salt, and Worcestershire sauce. Fill each of the hollowed jalapeño halves with 1 tablespoon of the cheese mixture.
- Cut each slice of bacon in half so there are 16 shorter pieces of bacon. Wrap each jalapeño in a piece of bacon and insert a toothpick to hold the bacon in place; transfer to prepared baking sheet. Repeat with remaining stuffed jalapeños.
- Bake until bacon is cooked through and the cheese begins to brown in spots, about 25 minutes. Remove from oven and allow to cool slightly before removing toothpicks. Transfer to a serving platter and garnish with fresh dill if desired.

- Preheat the oven to 275 degrees F. Set a wire rack over a baking sheet.
- If you have them, slip on some latex gloves for the pepper prep. Cut the jalapenos in half lengthwise. With a spoon, remove the seeds and white membranes (the source of the heat; leave a little if you like things HOT). Smear cream cheese into each jalapeno half and then wrap with a bacon piece (1/2 slice). Secure by sticking a toothpick through the middle. Place on the rack in the baking sheet.
- Bake for 40 to 45 minutes. (You don't want the bacon pieces to shrink so much they start to squeeze the jalapenos.) If after 45 minutes the bacon doesn't look brown enough, just keep cooking until the bacon is sizzling.
- Serve immediately, or they're also great at room temperature.

- Heat oven to 375°F. Soak toothpicks in small bowl of warm water to prevent burning. Line large rimmed cookie sheet with foil; spray with cooking spray. Place bacon on foil; bake about 12 minutes or until soft and pliable. Transfer to paper-towel lined plate. Discard foil and bacon drippings, or reserve for another use. Spray cookie sheet with cooking spray.
- In small bowl, mix cream cheese and chives. Spoon or pipe mixture evenly into chile halves.
- Wrap 1 piece of bacon over top and sides of each stuffed chile half; secure with soaked toothpick. Place on cookie sheet.

- Heat oven to 180C/160C fan/gas 4. Cut a slit in each chilli from top to bottom and scoop out the seeds and white pith with a teaspoon. Mash the cheeses together with some seasoning and stuff the mixture into the chillis.
