BACON SKEWERS WITH BROWN SUGAR GLAZE
Steps:
- Preheat oven to 400 degrees F.
- Line a lipped baking pan with foil (it's important that it is lipped) and put a metal rack on top if using one.
- n a small mixing bowl combine the brown sugar, apple juice and cinnamon. Set aside. The sugar will settle to become more liquid within a few minutes.
- Take the bacon from the package and thread the bacon onto the skewers. Set the bacon skewers evenly onto the foiled lined baking sheet. Take a spoon, fork or basting brush and spread a generous amount of the glaze on each side of the bacon skewers. Make sure to get each side so that the whole bacon skewer is covered.
- Place the baking sheet into the oven and cook for 20 minutes or until your bacon is cooked to your liking. 20 minutes should get them nice and crisped up.
- Take the bacon skewers out of the oven and let cool for a few minutes.
- Serve on a platter or my favorite... in a vase as a centerpiece. Enjoy!
BROWN SUGAR BACON
Steps:
- Preheat the oven to 400 degrees F. Position racks in the top and bottom of the oven. Line 2 rimmed baking sheets with foil and set cooling racks into the baking sheets.
- Using your fingers, crumble together the brown sugar, smoked paprika and several grinds of black pepper on a plate. Dredge the bacon on both sides in the brown sugar mixture, rubbing so the sugar adheres. Arrange the slices on the racks without touching.
- Bake until the bacon is crisp and caramelized, flipping the slices and rotating the baking sheets from top to bottom halfway through, about 20 minutes total. Let the slices cool on the racks, turning once or twice so they don't stick.
CURLY CANDIED BACON SKEWERS
Steps:
- Preheat your oven to 350 degrees F. Put a wire rack on a rimmed baking sheet.
- Cut the bacon slices in half. Fold each half of the bacon in an "S" pattern upon itself a few times and thread each one onto a wooden skewer.
- Place the bacon skewers on the prepared wire rack.
- Combine the granulated sugar, brown sugar and cayenne pepper in a small bowl. Sprinkle half of the sugar mixture on the bacon skewers.
- Bake for 20 minutes, then flip the skewers and sprinkle on some more of the sugar mixture. Cook for 20 minutes more.
- Remove the bacon skewers from the oven and flip them over. Taste one skewer. If desired, sprinkle a small amount of the remaining spice mixture on the bacon skewers.
- Serve the skewers just as they are or add on garnishes, such as olives and cherry tomatoes, before popping them in your cocktail!

Use a spoon, fork or basting brush to spread a generous amount of the glaze onto both sides of the bacon skewers. (Make sure to get each side so that the whole bacon skewer is evenly covered with glaze.) Place the baking sheet in the oven.
- Bake for 20 min. or until the bacon is cooked to your liking. (Note that 20 min. should get the bacon skewers nice and crisped up.)
- Take the bacon skewers out of the oven and let cool for a few minutes.
- Serve on a platter or my favorite - in a vase as a centerpiece. Enjoy!

- Preheat the oven to 375 degrees F.
- Combine the butter, brown sugar, salt, cayenne and bourbon in a small saucepan over medium heat. Whisking constantly, cook until the butter has melted and the mixture has formed a smooth sauce, about 8 minutes.
- Spread the bacon out on a small baking sheet and bake for 8 to 10 minutes, just to begin to render the fat. Set aside.
- Bring a large pot of salted water to a boil over high heat. Add the Brussels sprouts and simmer until just barely tender and still bright green, 5 minutes. Remove the Brussels sprouts to a baking sheet to cool slightly. Slice each Brussels sprout in half.
- Preheat a grill pan over medium heat, and spray with nonstick cooking spray.
- Assemble the skewers: Start by threading a Brussels sprout half onto a skewer, then add a piece of bacon, then another Brussels sprout, followed by another piece of bacon, and finishing with a Brussels sprout. Repeat in this way until all of the skewers are assembled. Brush the skewers lightly with bourbon glaze.
- Place the skewers on the prepared grill pan and grill, brushing them with glaze with every turn, until the bacon is beginning to crisp and the Brussels sprouts are starting to char, 1 to 2 minutes per side. Remove to a serving platter and serve warm, drizzled with any remaining glaze.

GLAZED BACON
Betty Groff, the home cook turned proprietor of Groff's Farm Restaurant, once said that there were only two authentic American cuisines: Pennsylvania Dutch and Creole. Her brown-sugar-glazed bacon represents the former, and she occasionally served it as an hors d'oeuvre at her restaurant, which she started in her family's 1756 Pennsylvania Dutch farmhouse in Mount Joy in the late 1950s. The restaurant became a place of pilgrimage for food lovers, among them Craig Claiborne, who wrote an article about it in The New York Times in 1965. This recipe, which Ms. Groff said "will amaze every guest," serves six, but she noted that you can easily scale it up to serve 30, or possibly more.

- Heat oven to 350 degrees. Line a baking pan with foil; it should be large enough to hold the bacon in a single layer. Place bacon in pan and bake until lightly browned and crisp, 15 to 20 minutes. While bacon cooks, mix remaining ingredients together.

- Mix brown sugar and cinnamon together in a small bowl.
- Lay strips of bacon flat and rub with half the sugar mixture.
- Turn strips over and repeat with the remaining sugar mixture.
- Wrap each piece of bacon tightly around a skewer.
- Transfer to the broiler pan (do not use a cookie sheet, it will not work).
- Bake until crisp and a lovely brown, about 20-25 minutes. No oven temp was given in the book but I'd say @350 until golden.
- Transfer bacon to a wire rack.
- These can be served warm or at room temperature. Arrange in a napkin-lined basket for a nice presentation.
