BLT TACOS

Without the bread muffling the crunch of bacon and crisp lettuce, BLT tacos are a lot more texturally exciting than the usual sandwich. Here, hot sauce-spiked mayonnaise adds spice; avocado adds creaminess; and chopping the tomatoes into a salsa with jalapeño, lime juice and cilantro makes everything juicy and bright. You can serve these for brunch, lunch or a light, fast dinner.

Number Of Ingredients 11

1 pound thick-cut bacon
1 pint cherry tomatoes, quartered (mixed colors are pretty here)
1 small jalapeño, seeded or not, finely chopped
2 tablespoons cilantro, chopped
1 1/2 teaspoons fresh lime juice, plus more to taste
Kosher salt, to taste
1/2 cup mayonnaise
1 1/2 teaspoons Cholula or other hot sauce, or to taste, plus more for serving
8 (6-inch) corn or flour tortillas
Romaine lettuce leaves, torn into bite-size pieces
1 avocado, sliced (optional)

Steps:

  • Heat oven to 400 degrees. Lay bacon in an even layer on a rimmed baking sheet, and bake until browned and crisp, 15 to 20 minutes. Transfer to a paper towel-lined plate and let cool.
  • While bacon is cooking, toss together tomatoes, jalapeño, cilantro, lime juice and a large pinch of salt in a medium bowl. Taste and add more lime juice and salt, if needed.
  • In a small bowl, whisk together mayonnaise and hot sauce.
  • Lay a clean kitchen towel in a medium bowl. Using the open flame from a stovetop gas burner (or in a skillet placed on an electric burner), warm and lightly char tortillas, 30 seconds to 1 minute per side. Transfer warmed tortillas to a towel-lined bowl, and cover with towel to keep warm while you finish remaining tortillas.
  • Serve, letting people make their own tacos by layering bacon, salsa, lettuce, spicy mayonnaise and avocado, if using, on tortillas. Top with more hot sauce, if desired.

This recipe uses rotisserie chicken to create an easy and delicious bacon lettuce wrap including avocado.

2 slices bacon
⅓ cup shredded rotisserie chicken
coarse salt and ground black pepper to taste
1 avocado
1 tablespoon lemon juice
1 clove garlic, minced
1 tomato, chopped
1 onion, chopped
2 lettuce leaves, or as needed

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels, reserving grease in skillet.
  • Add chicken to skillet and stir to coat with bacon drippings. Season with salt and pepper.
  • Mash avocado in a bowl and season with lemon juice, garlic, salt, and pepper. Add tomato and onion to taste.
  • Divide cooked bacon, chicken, and avocado spread between lettuce leaves and wrap up.

I love wraps, but am allergic to mayonnaise, so I designed this wrap to be glued together with melted cheese instead.

1 pound thick sliced bacon, cut into 1 inch pieces
4 (12 inch) flour tortillas
1 cup shredded Cheddar cheese
½ head iceberg lettuce, shredded
1 tomato, diced

Steps:

  • Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, and set aside.
  • Place 1 tortilla on a microwave-safe plate. Sprinkle tortilla with 1/4 cup cheese. Cook in microwave 1 to 2 minutes, or until cheese is melted. Immediately top with 1/4 of the bacon, lettuce, and tomato. Fold sides of tortilla over, then roll up. Repeat with remaining ingredients. Cut each wrap in half before serving.

8 flour tortillas (8 inches), room temperature
4 cups chopped lettuce
2 cups chopped tomatoes (3 small tomatoes)
2 cups shredded cheddar cheese
1/2 cup ranch salad dressing

Steps:

  • Place 2 bacon strips across the center of each tortilla. Top with lettuce, tomatoes and cheese; drizzle with salad dressing. Fold 1 side of the tortilla over filling and roll up.

  • In a mixing bowl combine some mayonnaise with salsa and spread on toast. Build up a layer of bacon, arugula, cheddar and top with avocado and cilantro.

The idea for this salsa comes from the TV show :Diners,Dives and Drive-ins". They were making a burger with sliced tomato,some chopped bacon and then some caramelized onion over the burger and then melted cheese. This is my recipe for BACON SALSA and my photo. This is a great dip with tortilla chips, or over nachos, baked potato, BBQ chicken, steak, brushed on grilled sweet corn, mixed in muffin batter, on your tacos,over enchiladas,etc- you get where I'm going-so go for it!Your going to love it!

1 tablespoon(s) of olive oil, just swirl some around in the skillet
1 pound(s) extra thick bacon, fry crisp and set aside to cool, then pulse to size you like
14 1/2 ounce(s) can petite cut tomatoes,(or diced rol-tel tomatoes)
1 small sweet onion, pulsed till size you like
2 teaspoon(s) minced garlic
1/2 - red bell pepper,pulsed to size you like
1/2 - green bell pepper,pulsed to size you like
1/2 cup(s) whole kernel corn,frozen
1/4 cup(s) red wine vinegar
3 tablespoon(s) brown sugar, firmly packed
1/4 cup(s) orange marmalade
1 - grind of fresh black pepper, or a few hot pepper flakes

Steps:

  • In a large cast iron skillet, heat oil over medium high heat. Add the bacon, and reduce the heat to medium and cook for about 8 minutes,until it is a light brown.Turn heat down to medium low.Cool bacon crisp then place in blender and pulse to size you like. Then pulse the bell peppers and the onion. Add the bacon and onions and peppers in the skillet.
  • To the bacon ,onion mixture add the garlic. Stir and fry until onion and peppers begin to wilt; stir in corn, marmalade and brown sugar. Stir until sugar and marmalade melts and add the wine vinegar. Simmer over low heat until salsa is thickened.When mixture is thickened to your liking; stir in tomatoes juice and all and black pepper to taste.
  • Note: I have made this using 1 cup of real bacon bits and not pulsing. This works very nice-you can add as much bacon bits as you like- and also add some chipolte puree or hot pepper flakes if desired.

You can smell the bacon from the outside the house. Fall is approaching and the wind has picked up a little bit, and a nice breeze is blowing from the south, which in turn transfers the aroma of fresh bacon right out the window and into your nose. Dennis was wondering what was going on, after all, it was the middle of a fall afternoon. The door creaks open, Dennis slips off his boots, hangs up his hat on the pegged hanger, and rushes into the kitchen. I turned around to greet him with a smile, and laughing at his questioning look, I tilt my head and say, "It's bacon Dennis!" "I know, I know...." tests Dennis with a small voice. Dennis loves bacon. He will eat a couple of pieces a day, that would be, if I let him. I decided I would at least bring some healthfulness to him, and something tasty at the same time. One piece of bacon, wrapped in a tortilla, (or pita for that matter) with an abundance of lettuce, tomato, and special spritely green onion with a spot of cheese dotted on the top would be the answer to his dream.

1 medium tomatoes, sliced
1 green onion, sliced
1 tablespoon monterey jack cheese (or any your prefer) or 1 tablespoon brie cheese (or any your prefer)
1 teaspoon sour cream (mayonnaise could be subed as well.)
nice crispy lettuce (2 leaves)
1 dash salt
1 dash pepper
avocado, sliced (optional)
1 dash Tabasco sauce (optional)

Steps:

  • Cook bacon your preferred method. Could be in microwave, iron skillet, or baked.
  • Warm tortilla's or pita in microwave for 10 seconds, or in oven wrapped in foil for 10 minutes at 350degrees.
  • As tortilla's (or pitas) are warmed, spread sour cream, or mayonnaise thinly on inner part.
  • Add cheese lightly.
  • Add lettuce, tomato, bacon (blotted from excess grease), green onion, and avocado (if using) nicely and roll carefully.
  • Add salt and pepper, and devour at one end.
  • Make sure your shoes are off, and you have a candle lit. It makes this extra special.
  • Try it and see.

2 tomatoes, diced
1/4 cup onion, finely chopped
1/4 cup fresh cilantro, finely chopped

1/8 teaspoon salt
8 slices bacon (regular or turkey)
1/4 cup mayonnaise
4 large tortillas (we used jalapeno-cheddar)
8 -12 romaine lettuce leaves

Steps:

  • Combine first 6 ingredients to make fresh salsa,.
  • Fry bacon until just done, drain well on paper towels, cut into large pieces.
  • To assemble sandwiches:.
  • Spread Mayo on tortillas & top with lettuce leaves.
  • Place 2 slices bacon on each tortilla & top with a large spoonful or 2 of salsa.
  • Roll tortillas up to enclose filling & cut each wrap in half with a diagonal cut.
