5 ounces applewood-smoked bacon (about 6 slices)
12 cups torn romaine lettuce (from 1 large head; about 13 ounces)
8 ounces cherry tomatoes, grape tomatoes, and/or pear tomatoes, halved
1 garlic clove, pressed
3 tablespoons mayonnaise
1 1/2 tablespoons white-wine vinegar

Steps:

  • Cook bacon in large skillet over medium heat until crisp; transfer to paper towels. Crumble bacon coarsely. Pour off all but 1 tablespoon drippings from skillet; reserve skillet.
  • Place lettuce and tomatoes in large serving bowl. Heat bacon drippings in skillet over medium heat. Add garlic, then mayonnaise and vinegar; whisk until blended, 30 to 40 seconds. Season dressing to taste with salt and pepper. Pour over lettuce and tomatoes and toss to coat. Sprinkle bacon over. Serve immediately.

4 vine-ripened tomatoes, seeded and chopped fine (about 2 cups)
6 slices bacon, cooked until crisp and crumbled
1/4 cup finely chopped sweet onion, or to taste

2 teaspoons balsamic vinegar, or to taste
24 outer Bibb lettuce leaves (about 4 heads), washed and patted dry about 1/4 cup finely shredded fresh basil leaves plus basil sprigs for garnish

1 (16 ounce) bottle vinaigrette (Olive Oil Vinaigrette)
1/3 cup lime juice
8 ounces mozzarella cheese, cut into 1/4-inch-thick slices
1 (16 ounce) French bread or 1 (16 ounce) Italian bread, unsliced
1 large head bibb lettuce
6 plum tomatoes, cut into 1/4-inch-thick slices
12 slices bacon, cut into thirds and cooked (thick)

Steps:

  • Stir together vinaigrette and lime juice. Place cheese slices in a 13- x 9-inch baking dish; drizzle with 1 cup vinaigrette mixture, and set remaining vinaigrette mixture aside. Let cheese stand 20 minutes.
  • Slice top one-fourth off bread loaf. Scoop out bread, leaving a 1-inch-thick shell. (Reserve top and center for other uses.) Place shell on a baking sheet, and brush inside evenly with 1/2 cup vinaigrette mixture.
  • Bake at 400° for 12 to 15 minutes or until golden; cool. Line bread bowl with lettuce. Fill with tomato and cheese; top with bacon. Serve with remaining vinaigrette mixture.

¾ cup mayonnaise
¼ cup milk
1 teaspoon garlic powder
⅛ teaspoon ground black pepper

1 head romaine lettuce - rinsed, dried and shredded

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat, turning frequently, until evenly browned. Drain, crumble and set aside.

Steps:

Steps:

1/4 cup finely chopped fresh basil

1 lb romaine lettuce, rinsed,dried,and torn into bite-size pieces

Steps:

  • Cook bacon until it is crisp by your favorite method.
  • Crumble, and set it aside, reserving 2 tablespoons of the drippings in a small bowl.
  • Whisk together the reserved bacon drippings, mayonnaise, vinegar and basil and let dressing sit, covered, at room temperature while you finish making the salad.
  • In a large skillet over medium heat, toss the bread pieces with the salt and pepper.
  • Drizzle with the oil, and cook, stirring constantly, until the croutons are crisp and golden brown.

24 strips (cut 1/4 inch thick) bacon, (1 pound)
2 1/2 bunches lettuce, such as romaine, Bibb, or green oakleaf
1 cup Avocado Dressing for BLT Salad
2 pounds tomatoes, preferably red and yellow
1 pint cherry tomatoes
Salt and freshly ground black pepper

Steps:

  • Heat oven to 350 degrees. Arrange bacon strips on a wire rack set over a baking pan. Place pan in oven until bacon is golden brown and crisp, about 40 minutes. Remove from oven, being careful of the bacon fat that has collected under the rack, and set aside.
  • Arrange lettuce in the bottom of a salad bowl; drizzle with half the avocado dressing. Cut tomatoes into 1/4-inch-thick slices; cut cherry tomatoes, depending on size, in half. Arrange tomato slices over lettuce; scatter cherry tomatoes over tomato slices.
  • Arrange whole bacon strips over tomatoes. Drizzle with remaining avocado dressing, season with salt and pepper to taste, and serve immediately.

1 zucchini, about 1 pound
1 or 2 red, ripe tomatoes, about 3/4 pound
6 ounces mozzarella cheese
Salt to taste if desired
Freshly ground pepper to taste
2 tablespoons red-wine vinegar
3 tablespoons olive oil
Fresh basil sprigs or leaves for garnish

Steps:

  • Trim off ends of zucchini. Cut it on bias into 12 slices of about the same size.
  • Bring enough water to boil to cover zucchini slices when added. Add slices and cook 1 1/2 minutes; do not overcook. Drain.
  • Cut away and discard core of tomato. Cut tomato into 1/4-inch slices.
  • Cut mozzarella into 12 slices.
  • Arrange zucchini, tomato and mozzarella slices, slightly overlapping, in a circle on a serving dish. Sprinkle with salt and pepper.
  • Combine vinegar and oil in a bowl and stir. Sprinkle the sauce evenly over the salad. Garnish with basil sprigs or leaves and serve.
