Bacon Cheddar Ranch Chicken Salad image

Bacon Cheddar Ranch Chicken Salad is fantastically rich and creamy with lots of crispy pieces of bacon, Ranch dressing, and shredded cheddar cheese. Perfect for using up leftover chicken.

3 cups cooked and chopped chicken
1/3 cup mayonnaise
1/2 cup Ranch dressing (I use Hidden Valley)
1/4 teaspoon black pepper
2 green onions (sliced)
1/2 cup shredded cheddar cheese
5 bacon slices cooked and crumbled

Steps:

  • Place chicken in a large bowl.
  • Add mayonnaise, Ranch dressing and pepper. Stir to mix well.
  • Add green onions, cheddar cheese, and bacon and gently stir in. Serve immediately or refrigerate for a few hours to let the flavors meld.

Chicken salad is a favorite low carb lunch in our house, because it's so simple to make ahead and then grab when you're hungry. We mixed in cheddar, bacon, and green onions and then combined it with a simple ranch dressing.

3 cups cooked chicken, chopped or shredded
5 slices bacon, cooked and crumbled
3/4 cup shredded cheddar
2 green onions, sliced
2/3 cup ranch dressing
2 tablespoons mayonnaise
1 teaspoon garlic powder
1 teaspoon onion powder

Steps:

  • Add the chicken, bacon, green onions, and cheddar to a large mixing bowl.
  • Add the ranch, mayonnaise, garlic powder, and onion powder to a small bowl and stir well to combine.
  • Pour the ranch mixture over the chicken and stir well to combine.
  • Cover and refrigerate for 2 hours to allow the flavors to meld together.
  • Serve cold in a lettuce wrap or on our keto hamburger buns.

4 bacon strips, chopped
4 boneless skinless chicken breast halves (6 ounces each)
1/4 teaspoon salt
1/4 teaspoon pepper
2/3 cup barbecue sauce, divided
1/2 cup shredded cheddar cheese
Thinly sliced green onions

Steps:

  • Preheat oven to 350°. In a cast-iron or other ovenproof skillet, cook bacon over medium heat until crisp, stirring occasionally. Using a slotted spoon, remove bacon to paper towels; reserve drippings., Sprinkle chicken with salt and pepper. In same pan, brown chicken in drippings over medium heat, 3-4 minutes per side. Brush with 1/3 cup barbecue sauce. Transfer to oven; bake 8 minutes., Spoon remaining sauce over chicken; sprinkle with cheese and bacon. Bake until cheese is melted and a thermometer reads 165°, 4-6 minutes. Sprinkle with green onions.

An original recipe creation. I have always loved chicken salads,so I added a little twist.

Number Of Ingredients 8

1 chicken breast
1 clove garlic
To taste salt and pepper
1/2 cup mayonnaise
2 slices bacon
1/3 cup shredded cheese
1/2 teaspo onion powder
To taste rotisserie seasoning

Steps:

  • 1. Fill pot with water to cover chicken breast. Chop garlic clove and add to the pot with chicken add salt and pepper. Cook until tender.
  • 2. Remove and shred with fork and knife,then cool in freezer for 10 minutes while you cook the bacon.
  • 3. Remove chicken from freezer( or fridge) add mayo,shredded cheese,onion powder,rotisserie seasoning. Mix well. Take cooked bacon and crumble then mix in. Chill and serve with crackers,rolls,or on a sandwich. Tip for alternative version omit rotisserie seasoning and add 1/2 packet if ranch seasoning for a Bacon Cheddar Ranch Chicken Salad.
