Chiliquiles a la Mexicana de Salsa Moras image

1/2 cup cooking oil
2 corn tortillas (cut into 1-inch squares)
1 teaspoon chopped fresh jalapeno peppers
1 tablespoons chopped fresh tomato
1 tablespoons chopped onion
2 eggs
1/8 cup Cheddar cheese or Monterey Jack cheese
2 teaspoons chopped cilantro (optional)
Salt, to taste
Serving suggestions: beans a la charra and fried potatoes

Steps:

  • Put 1/2 cup of oil into a skillet and fry tortillas until they are very crispy, set aside. Drain some of the oil and add the peppers, tomato and onions and saute for 10 seconds. To this mixture add 2 eggs and scramble together, sprinkle Cheddar cheese on top and cover to melt. Garnish with cilantro, salt to taste. This dish can be complimented with beans a la charra and fried potatoes. Can be served for breakfast or brunch.

1/4 cup granulated sugar
1/2 cup kosher salt
Wedges of grapefruit
1 cup freshly squeezed pink grapefruit juice
1 cup white tequila, preferably Dosamigos
1/4 cup freshly squeezed lime juice
1 tablespoon sugar syrup

Steps:

  • Combine 1/4 cup sugar and 1/2 cup salt on a small plate. Run a wedge of grapefruit around the rim of 4 glasses to moisten the rims. Lightly dip the rims in the sugar mixture and set aside to dry.
  • Combine the grapefruit juice, tequila, lime juice, sugar syrup, and a pinch of salt together in a pitcher. Fill a cocktail shaker 1/2 full with ice and pour in the drink mixture. Shake the cocktail shaker for 30 seconds to chill and dilute the drink. Pour into the 4 prepared glasses, add a few ice cubes, and a wedge of grapefruit and serve ice cold.
  • To make sugar syrup, combine 1 cup sugar and 1 cup water in a small saucepan and bring to a boil over medium heat. Cook until the mixture is clear. Cool and refrigerate indefinitely.

Make these salmon-colored eggs for an impromptu late-night supper or brunch. They are simply scrambled eggs to which you have added a small amount of tomato sauce. The sauce adds a dimension of flavor and a velvety texture.

8 large or extra-large eggs
Salt and freshly ground pepper
1/4 cup Fresh Tomato Sauce
1 tablespoon extra virgin olive oil
1 tablespoon slivered fresh basil or chopped chives

Steps:

  • Beat the eggs in a bowl. Add the salt, pepper, and fresh tomato sauce and whisk together.
  • Heat a heavy saucepan or nonstick skillet over low heat and add the olive oil. When it is hot (but not too hot - this is gentle cooking), add the egg mixture, scraping in every last bit with a rubber spatula. Cook slowly over low heat, stirring gently and scraping the eggs from the bottom of the pan with a heatproof rubber spatula or a wooden spoon, until the eggs are just set. Stir in the basil or chives. Serve hot, with toast.

  • Heat the pan over medium heat. When the pan is warmed, fry the bacon. When the bacon slices look crispy, transfer them onto a plate/bowl with a slotted spoon and set aside.
  • Drain the bacon grease from the pan (can be saved in a jar for future use), leaving approximately 2 tablespoons in the pan.
