Easy Bacon Cheeseburger Meatloaf image

Enjoy the ultimate summer sandwich all year 'round with a flavor-packed meatloaf with a molten cheesy center. This is the mother of all comfort food.

1 1/2 lb ground beef
1 1/2 teaspoons salt
1 1/2 teaspoons pepper
3 tablespoons Worcestershire sauce
3/4 cup ketchup
1/2 cup diced pickles
1 cup Progresso™ plain bread crumbs
2 eggs
1/2 lb sliced bacon
2 cups shredded sharp Cheddar cheese (8 oz)

Steps:

  • Heat oven to 350°F. Spray 9x5-inch loaf pan with cooking spray.
  • In large bowl, add 1 1/2 lb ground beef, 1 1/2 teaspoons salt, 1 1/2 teaspoons pepper, 2 tablespoons Worcestershire sauce, 1/4 cup ketchup, 1/2 cup diced pickles, 1 cup Progresso™ plain bread crumbs, and 2 eggs; use your hands to mix ingredients together. Set aside.
  • Place bacon slices across loaf pan side by side. Place half of the meatloaf mixture in bottom of loaf pan; sprinkle with 2 cups shredded sharp Cheddar cheese (8 oz); and finally, place the rest of the meatloaf mixture on top.
  • Fold hanging pieces of bacon over top. Bake about 1 hour or until meat thermometer inserted in center of loaf reads 160°F). Mix 1/2 cup ketchup and 1 tablespoon Worcestershire sauce; pour on top of meatloaf while still hot. Cool several minutes before serving.

10 slices bacon
⅓ cup ketchup
2 tablespoons prepared yellow mustard
1 pound ground beef chuck
1 (8 ounce) package shredded Cheddar cheese
2 eggs, beaten
¼ cup dry bread crumbs
¼ cup mayonnaise
1 tablespoon Worcestershire sauce
¼ teaspoon salt
¼ teaspoon ground black pepper
1 (3 ounce) can French-fried onions

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels. When cool, crumble into a large bowl.
  • Mix ketchup and mustard in a bowl.
  • Thoroughly combine 1/4 the ketchup mixture, ground chuck, Cheddar cheese, eggs, bread crumbs, mayonnaise, Worcestershire sauce, salt, and black pepper with crumbled bacon in bowl; pat the mixture into a 5x9-inch loaf pan. Spread remaining ketchup mixture evenly over top of meatloaf.
  • Bake in the preheated oven until the meatloaf is no longer pink inside, about 45 minutes. Spread French-fried onions over the top of the loaf and return to oven until onions are browned and an instant-read meat thermometer inserted into the center of the loaf reads at least 160 degrees F (70 degrees C), 10 to 15 more minutes.

This meatloaf has all the great flavor of a bacon cheeseburger! Top slices of meatloaf with ketchup, mustard and relish to get a true burger flavor.

3 slices bread, torn into small pieces
1/2 cup milk
1 1/2 lb lean (at least 80%) ground beef
8 slices bacon, crisply cooked and crumbled
1 cup finely shredded sharp Cheddar cheese (4 oz)
1/4 cup dill pickle relish
1/2 cup finely chopped onion
1 clove garlic, finely chopped
1 egg, slightly beaten
1/3 cup ketchup
1 tablespoon packed brown sugar

Steps:

  • Heat oven to 350°F. Line 9x5-inch loaf pan with foil; spray foil with cooking spray.
  • In large bowl, mix bread and milk. Let stand 5 minutes to absorb milk. Add beef, all but 2 tablespoons of the bacon, the shredded cheese, relish, onion, garlic and egg. Mix until well combined. Shape mixture into 8x4-inch loaf. Place in pan.
  • In small bowl, stir together Topping ingredients. Spread on top and sides of loaf. Top with reserved 2 tablespoons crumbled bacon.
  • Bake uncovered 1 hour to 1 hour 15 minutes or until meat thermometer inserted in center of loaf reads 160°F. Cool 10 minutes.
  • Cut meatloaf into slices to serve. Top with desired burger toppings, such as pickle relish, ketchup and mustard.

I love meatloaf, but not as much as I love meatloaf sandwiches. In fact, I'll make a meatloaf just for the leftovers. I'll fry the cold slice in a buttered pan until hot and crusty, and enjoy it on toast with ketchup. This recipe is basically that, plus bacon, in burger form.

1 large egg, beaten
1 tablespoon ketchup
2 teaspoons Worcestershire sauce
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon brown sugar
½ teaspoon onion powder
¼ teaspoon garlic powder
pinch dried thyme
cayenne pepper to taste
¼ cup plain bread crumbs
⅔ cup chopped cooked bacon
1 pound ground chuck beef (85% lean)

Steps:

  • Whisk egg, ketchup, Worcestershire sauce, salt, brown sugar, onion powder, garlic powder, thyme, and cayenne pepper together in a bowl. Add breadcrumbs and chopped cooked bacon. Crumble in the ground beef. Mix with your fingers until bacon and breadcrumbs are distributed evenly.
  • Form mixture into 4 burgers with your wet hands. Cover with plastic wrap and refrigerate until chilled thoroughly, about 3 hours.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Place burgers on the grate and cook, turing occasionally, until firm and cooked to your desired doneness. An instant-read thermometer inserted into the center should read between 145 and 150 degrees F (63 degrees C). Let burgers rest for a few minutes before serving.

I had to come up with a way to spice up meatloaf when my parents were coming over for supper. Dad can't do onions or garlic, so they were out. I needed a flavour booster and came up with these gems. I made a meatloaf, then had a lot of meat left, and made meatballs with the rest. Measurements are approximate, as I didn't measure as I went.

1 1/2-2 lbs ground beef
1 lb mushroom, finely chopped
4 slices bacon, finely chopped
dried parsley, 1 palmful
1 teaspoon salt
2 teaspoons pepper
2 tablespoons Worcestershire sauce
1 1/2-3 cups breadcrumbs (depending on how you like your meatloaf or meatballs)
1/2 cup oatmeal, finely pulsed in the food processor

Steps:

  • Chop mushrooms and bacon (I used the food processor), add to ground beef.
  • Add the rest of the ingredients and mix until blended.
  • Form into a meatloaf or meatballs.
  • For meatloaf, bake at 350 for an hour or so, or until cooked.
  • For meatballs, cook in a frying pan or in the oven.
  • Can be frozen.

2 slices bacon, chopped
1/2 cup Progresso™ plain panko crispy bread crumbs
1/2 cup finely chopped onion
1/4 cup milk
1 egg, slightly beaten
1 tablespoon honey
1 tablespoon Montreal steak grill seasoning
1 teaspoon salt
24 (1/2-inch) cubes sharp Cheddar cheese (3 oz)
1 bottle (18 oz) barbecue sauce
24 dill pickle slices

Steps:

  • Spray 3 1/2- or 4-quart slow cooker with cooking spray.
  • In large bowl, mix beef, bacon, bread crumbs, onion, milk, egg, honey, grill seasoning and salt. Shape into about 24 (1 1/2-inch) meatballs; tuck one piece of cheese in center of each meatball, and seal completely. Add meatballs to slow cooker. Add barbeque sauce, and gently turn to coat.
  • Cover; cook on Low heat setting 3 to 4 hours or until meatballs are thoroughly cooked (165°F); stir. Thread pickle slices on cocktail picks, and serve with meatballs.

3 eggs
½ cup grated Parmesan cheese
¼ cup chopped fresh parsley
½ cup dry bread crumbs
1 tablespoon minced garlic
1 tablespoon onion powder
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon dried oregano
1 teaspoon dried basil
1 pound sliced bacon, cut in half crosswise

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a rimmed baking sheet with parchment paper.
  • Mix ground beef, eggs, Parmesan cheese, parsley, bread crumbs, garlic, onion powder, salt, black pepper, oregano, and basil in a large bowl until thoroughly combined. Form meat mix into 2-inch meatballs.
  • Wrap half a bacon slice around a meatball; turn the meatball around 45 degrees and wrap a second half-slice of bacon around the meatball so the meat is enclosed by bacon. Repeat, forming 12 meatballs and wrapping each one in 2 half-slices of bacon. Place wrapped meatballs onto the prepared baking sheet with seam sides down.
  • Bake in the preheated oven until meatballs are no longer pink inside and bacon is crisp, about 45 minutes. An instant-read meat thermometer inserted into the center of a meatball should read at least 160 degrees F (70 degrees C). Pour off excess grease.
