My Nana's Famous Green Beans image

My Nana's Famous Green Beans! One of the most requested recipes from my family - year-round! Made with just a handful of ingredients, this easy green bean recipe make a delicious addition to any meal!

6 slices of bacon
2 pounds of rinsed and trimmed fresh green beans
1/2 cup diced yellow onion
1 1/2 cups chicken broth or water
salt and pepper to taste (I usually don't add salt because the bacon is plenty salty)

Steps:

  • Cut the bacon into small pieces and cook over medium heat in a heavy 3 qt saucepan until the bacon is fully rendered.
  • DO NOT remove any of the bacon grease - it's what makes these green beans so amazing!
  • Add the onions and saute with bacon until transparent.
  • Add green beans and pepper and stir making sure the bacon drippings are getting mixed in well.
  • Add chicken broth and reduce heat to low.
  • Cover and continue cooking the green beans for 30 minutes up to two hours, stirring occasionally. Make sure there is liquid in the bottom of your pot so that the beans don't get scorched.
  • Check for seasoning levels and add salt and pepper if necessary.
  • Enjoy!

1 bone-in shank ham
2 1/2 cups all-purpose flour
1 teaspoon salt
5 eggs
2 ounces ham base
Two 15-ounce cans green beans
1 quart cubed russet potatoes
One 12-ounce can evaporated milk
1 cup sour cream
3 tablespoons heavy cream
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon garlic powder, or to taste

Steps:

  • For the ham starter: Trim meat off the bone. Place meat and bone in a pressure cooker and cover with water. Pressure cook for 45 minutes. Release pressure, then clean and chop meat and strain broth. This can be divided into 4 portions of starter. Freeze 3 of the portions for future use and set the remaining portion aside.
  • For the glace: Put flour and salt in food processor. While it's running, stream in the eggs. Mix thoroughly. Put bench flour on a table, then dump dough out and knead to combine. Let rest 20 minutes. Flour table again and roll to about 1/4-inch thick, then cut into small squares with a pizza cutter. Make sure there's enough flour so the dumplings don't stick together. Rough them up in your hands to make them rustic looking. Put into a dry strainer and shake off excess flour.
  • For the soup: Combine the reserved ham starter, ham base, green beans and their juice and potatoes in a pot. Add water to fill about three-quarters of the way. Bring it all to a boil. Add the glace directly to the pot and cook until they float.
  • Combine the evaporated milk, sour cream and heavy cream in a separate bowl. Add some hot broth and whisk until completely smooth. Add the tempered cream mixture to the soup. Add salt, pepper and garlic powder to taste. Let simmer together for 45 minutes.

1 pound green beans, trimmed
Kosher salt and freshly ground black pepper
1/4 cup hazelnut oil
1/4 cup white wine vinegar
1 teaspoon honey
1 cup chopped and toasted hazelnuts
Lemon zest, for garnish

Steps:

  • Fill a bowl with ice water. Cook the green beans in salted boiling water until tender but still bright green, about 5 minutes, then drain and chill in the ice water to stop the cooking. Remove from the ice water and pat dry.
  • In a large bowl, whisk together the hazelnut oil, vinegar and honey, and season to taste with salt and pepper. Add the green beans to the bowl with the dressing and toss to coat, adding more salt and pepper if needed. Transfer to a serving bowl or platter and top with the toasted nuts and lemon zest.

2 cups chicken broth, seasoned with garlic (I use Swanson's)
4 pieces bacon
2 tablespoons bacon grease
1 teaspoon crushed red pepper flakes
1 tablespoon salt
water, to cover green beans

Steps:

  • Using a large pan, put all the ingredients in the pan.
  • Bring to a boil.
  • Cook for approximately two and a half hours.
  • If needed add more water.
  • Make sure the beans are really tender before serving.

1 Tbsp butter
1 Tbsp flour
½ tsp salt
½ tsp sugar
pinch pepper to taste
½ small onion finely diced
¼ cup milk
½ cup sour cream
2 cans (~16 oz ea) green beans
1½ cups shredded Swiss cheese
½ cup corn flake crumbs mixed with 2 Tbsp melted butter

Steps:

  • In a medium skillet over medium-high heat melt butter and saute onion until translucent. Blend in flour, salt, sugar and pepper. Cook until bubbly and beginning to brown (about 2 minutes). Blend in milk. Remove from heat and stir in sour cream, then beans. Fold in cheese. Transfer to an oven-safe 1½ qt buttered casserole. Top with corn flakes. Bake in a 400°F oven for 20 minutes.

8 ounces bacon
1 pound ground beef
½ cup chopped onion
2 (12 ounce) cans pinto beans, drained and rinsed
2 (15.5 ounce) cans canned butter beans, drained and rinsed
2 (15 ounce) cans canned baked beans with pork
1 cup barbeque sauce
1 cup ketchup
1 cup brown sugar, packed

Steps:

  • Place the bacon in a large, deep skillet and cook over medium-high heat until evenly brown. Drain on paper towels, crumble, and set aside. Drain bacon fat from the skillet.
  • Using the same skillet, cook the ground beef and onion over medium heat, stirring until the meat is no longer pink, 5 to 7 minutes. Drain.
  • Transfer the ground beef to a slow cooker. Add the pinto beans, butter beans, baked beans with pork, barbeque sauce, ketchup, and brown sugar to the ground beef mixture; stir to blend well. Cover and cook for 4 hours on High. Top each serving with crumbled bacon.

1 clove garlic, minced

Steps:

  • Cook green beans until al dente, about 8 - 10 mins. Drain and keep warm. Melt butter and saute onion, garlic, and celery for 5 min. Add parsley, rosemary, basil, and salt. Cover and simmer 10 mins. Toss with green beans and serve immediately.
