8 cups vegetable stock
1 garlic clove, minced
1 teaspoon salt, divided
1 large egg
1/2 cup dry bread crumbs
1/4 cup 2% milk
2 tablespoons ketchup
2 teaspoons Worcestershire sauce
1 teaspoon onion powder
1/2 teaspoon pepper
1 pound lean ground beef (90% lean)
4 medium carrots, chopped
1 cup uncooked orzo pasta
1 package (6 ounces) fresh baby spinach

Steps:

  • In a 6-qt. stockpot, bring stock, garlic and 3/4 teaspoon salt to a boil. Meanwhile, in a large bowl, mix egg, bread crumbs, milk, ketchup, Worcestershire sauce, onion powder, pepper and remaining salt. Add beef; mix lightly but thoroughly. Shape into 1-in. balls., Add carrots, pasta and meatballs to boiling stock. Reduce heat; simmer, uncovered, 10-12 minutes or until meatballs are cooked through and pasta is tender, stirring occasionally. Stir in spinach until wilted. Freeze option: Freeze cooled soup in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little water if necessary.

The savory Italian soup relies on items most cooks have in the kitchen, including pasta, prepared spaghetti sauce, canned and frozen vegetables and frozen meatballs. The chunky mixture only needs to simmer for minutes before it can be ladled into bowls.

1 cup uncooked spiral or shell pasta
1 package (12 ounces) frozen fully cooked Italian meatballs, thawed
2 cans (14-1/2 ounces each) chicken broth
1 can (28 ounces) diced tomatoes, undrained
1-1/2 cups frozen sliced carrots, thawed
1 can (16 ounces) kidney beans, rinsed and drained
1 jar (14 ounces) meatless spaghetti sauce
1 jar (4-1/2 ounces) sliced mushrooms, drained
1 cup frozen peas

Steps:

  • Cook pasta according to package directions. Meanwhile, combine the remaining ingredients in a soup kettle or Dutch oven. Bring to a boil; cover and simmer for 5 minutes. Drain pasta. Add to soup; heat through.

Number Of Ingredients 13

3/4 pound lean ground beef
1 1/3 cups grated Parmesan cheese, divided
1/2 cup fresh breadcrumbs made from crustless French bread
1 large egg
2 garlic cloves, minced
1/2 teaspoon salt
1/2 teaspoon ground black pepper
7 1/2 cups low-salt chicken broth, divided
2 tablespoons olive oil
2 large celery stalks with tops, chopped
1 medium onion, chopped
1/2 cup farfallini or orzo
1 small head of escarole, coarsely torn

Steps:

  • Blend beef, 1/3 cup cheese, breadcrumbs, egg, garlic, salt, and pepper in medium bowl. Using moistened hands, shape meat mixture into 3/4-inch meatballs. Heat 1 1/2 cups broth and oil in large pot over medium-high heat. Add meatballs and simmer until firm enough to hold shape, about 5 minutes. Using slotted spoon, transfer meatballs to bowl. Boil broth until reduced to glaze, about 6 minutes. Add celery and onion to pot. Stir until vegetables are soft, about 5 minutes. Add remaining 6 cups broth, pasta, and meatballs with any juices. Reduce heat. Simmer until pasta is tender, about 10 minutes. Add escarole and simmer until wilted, about 5 minutes. Season with salt and pepper. Ladle soup into bowls. Serve with remaining 1 cup cheese.

AUNT FANNIE'S DINNER SOUP



Aunt Fannie's Dinner Soup image

This is such a Midwestern dish. It reminds me of cold nights and blustery weather and a good bowl of soup to stick to the ribs. My mother has made this forever and it's like a cross between a shepherd's pie, and a fagoli style soup with a little down home twist that has a little "Kitchen Sink" inspiration. No, I didn't have an Aunt Fannie, it's just what we've always called it. Because it's a Midwest dish, it's definitely a taste as you go and jazz up the flavor to your own palate.

1/3 cup pasta, uncooked
1 lb ground beef
1/3 onion, any size, chopped
3/4 teaspoon garlic powder
salt and pepper
0.75 (8 ounce) can tomato sauce
2/3 cup canned stewed tomatoes
0.667 (15 ounce) canned whole kernel corn
1 tablespoon Worcestershire sauce
1/3 green bell pepper, chopped
cheese

Steps:

  • Bring a large pot of lightly salted water boil.
  • Add pasta and cook 8 - 10 minute until al-dente.
  • In a large skillet over medium heat, saute ground beef 5 minutes. Add the onion and peppers and saute a further 5 minutes.
  • Add garlic and cook 1 minute. Season to taste.
  • Add tomato sauce, corn and pasta. Stir well 5 - 7 minutes. Serve.

2 slices hearty white bread, torn into large pieces
1/2 cup milk
1/2 cup grated Parmesan Cheese
4 garlic cloves, minced
2 tsp. minced fresh thyme
1 large egg, lightly beaten
3/4 tsp. salt
1/2 tsp. pepper
1 pound 90 percent lean ground beef
SOUP
8 ounces dry elbow macaroni (2 cups)
Salt
2 tbsp. olive oil
1 onion, minced
2 tbsp. tomato paste
4 garlic cloves, minced
1 tsp. minced fresh thyme
2 (28-oz.) cans whole tomatoes
4 cups low-sodium chicken broth
Pepper
1/4 cup grated Parmesan cheese
1/4 cup chopped fresh basil

Steps:

  • 1. FOR THE MEATBALLS: Mash the bread and milk together in a large bowl. Stir in the cheese,garlic, thyme,egg, salt, and pepper. Add the meat and mix with your hands until well combined. With wet hands, form the mixture into 1-inch meatballs. 2. FOR THE SOUP: Meanwhile, bring 4 quarts water to a boil in a Dutch oven. Add the macaroni and 1 tbsp. salt and cook, stirring often, until al dente. Drain the macaroni and rinse under cold water, and set aside. Wipe the pot dry with paper towels. 3. Heat the oil in the pot over medium heat until shimmering. Add the onion and cook, stirring occasionally, until softened, 5-7 minutes. Stir in the tomato paste, garlic, and thyme and cook until fragrant, about 30 seconds. Stir in the tomatoes and broth and, using a potato masher, mash the tomatoes until broken into bite-sized pieces. Add the meatballs to the soup (do not stir), bring to a simmer, and cook until the meatballs are tender, 10-15 minutes. 4. Stir the pasta into soup and season with salt and pepper. Sprinkle with cheese and basil before serving.
