AUNT TC'S LEMON-LIME SODA CAKE

- For the cake: Preheat the oven to 325 degrees F. Generously grease and flour a fluted 10- to 12-cup Bundt pan.
- Beat the granulated sugar and butter together in a bowl with an electric mixer until creamy and smooth, about 2 minutes. Add the eggs one at a time, mixing well after each addition. Stir in the flour 1 cup at a time, blending well after each addition, until the batter is smooth; stir in the lemon extract. Mix the lemon-lime soda into the batter and pour into the prepared pan. Bake until a toothpick inserted in the center of the cake comes out clean, about 1 hour 15 minutes.
- For the glaze: Beat the confectioners' sugar, milk, lemon-lime soda and extracts together in a bowl with an electric mixer on medium speed until the glaze is smooth.
- Pierce holes in the cake with a skewer. Pour 1/4 cup glaze over the cake. Flip the cake onto a serving plate to remove from the pan, then pour the remaining glaze on top. The cake can be served immediately, but tastes even better the longer it sits.
AUNT BO'S COMFORT SAUCE
Aunt Bo is the sauce maven in our family! Every time someone's gonna make a special cake or bring some homemade ice cream at a family potluck, Aunt Bo's right there with a big bottle of her special sauce. I don't know why she calls this one comfort sauce but she insisted I do too if I was gonna post it on the internets!

- In a small saucepan, combine the vodka, sugar, strawberries, and vanilla bean in a small sauce pan over medium heat. Please note: If you are using vanilla extract instead of a vanilla bean, then reserve this ingredient until the end.
- Bring to a boil.
- Reduce heat to low and simmer, stirring occasionally. The strawberries will begin to break down. If you are using the vanilla extract, you would add it about now, right before the syrup begins to thicken.
- When it becomes a thick syrup, remove from heat and allow to cool before serving. It can be served warm, but I don't recommend serving it straight from the stove unless it's over ice cream.
- Optional: Aunt Bo always uses fresh strawberries but you could get away with using frozen strawberries or any other berry you enjoy, fresh or frozen. I have done this with frozen mixed berries, blackberries, and cherries with equally delicious results.

AUNT ANGIE'S LASAGNA RECIPE
Steps:
- For the Meatball Mix: Preheat oven to 375 degrees F.
- In a mixing bowl, combine all ingredients. Roll meatballs into desired size and bake in preheated oven for about 15 minutes or until golden brown. For the lasagna, instead of rolling into desired size, spread mix out evenly on a sheet pan and bake. Break up the meat for lasagna.
- For the Meat Sauce: In a stock pot (or large cooking vessel) brown the ground beef. Add the celery/carrot/onion mix and cook for about 2 minutes. Add the tomatoes and the seasonings. Let simmer for 2 hours.
- For Aunt Angie's Lasagna: Using a 1/2 hotel pan or medium to large baking dish, coat the bottom with a thin layer of meat sauce. Lay out 4 pieces of lasagna so they go up the side of the pan with an additional 3 to 4 inches hanging over the edge. Do the same in the other direction of the pan using pieces of pasta. Add another layer of meat sauce, followed by 1/2 of the meatball mix. Then top the meat with 1 pound of the ricotta cheese, 1 pound of mozzarella, and 1/4 cup of Romano. Add a layer of pasta and repeat to have 2 layers. Fold over the remaining pasta to cover the top. Top with meat sauce and place in preheated oven and bake until proper serving temperature is reached or top is golden brown.

- Saute bacon until crisp. add onions, cook until onions are transparent.
- add all other ingredients, except Southern Comfort.
- Cook 20 minutes and remove from heat, THEN Add Southern Comfort.
- use on whatever your are grilling, refreidgerate unsed portions.

This is my Aunt Ro's recipe for baked beans. It's closer to chili than baked beans, and it's great for a potluck or BBQ.

Steps:
- Place the bacon in a large, deep skillet and cook over medium-high heat until evenly brown. Drain on paper towels, crumble, and set aside. Drain bacon fat from the skillet.
- Using the same skillet, cook the ground beef and onion over medium heat, stirring until the meat is no longer pink, 5 to 7 minutes. Drain.
- Transfer the ground beef to a slow cooker. Add the pinto beans, butter beans, baked beans with pork, barbeque sauce, ketchup, and brown sugar to the ground beef mixture; stir to blend well. Cover and cook for 4 hours on High. Top each serving with crumbled bacon.
